BEEF A LA "MANLY MAN"

Number Of Ingredients 10

1 (8 to 10-ounce) beef tenderloin (also called filet mignon)
1 tablespoon olive oil, plus 2 tablespoons
Salt and freshly ground black pepper
1 tablespoon butter
1 small leek, halved, cleaned and sliced thinly
1 pint cream
1 clove garlic, plus 2 cloves garlic, minced
2 ounces blue cheese, crumbled
1 pound spinach, cleaned
Beer battered onion rings, recipe follows

Steps:

  • Heat the grill. Heat the oven to 450 degrees F.
  • Season the filet with 1 tablespoon olive oil, salt, and pepper and set aside. In a medium saute pan, heat the butter on medium high and add the leeks. Sweat the leeks allowing no color, just cook until clear. Add the cream, 1 clove of the garlic and the blue cheese and turn heat to low and simmer for about 20 to 25 minutes, or until the cream has thickened. Add salt and pepper, to taste, and set aside.
  • Place the filet on the hot grill and mark on the both sides. Place the steak in the oven to finish cooking to desired temperature. Medium rare is about 12 to 15 minutes. Pull from the oven and let rest for 10 minutes before cutting. In a large saute pan, heat 2 tablespoons of olive oil on high heat and add 2 cloves of minced garlic, and cook quickly until golden brown. Add in the spinach and turn heat to medium. Begin turning the spinach until wilted completely. Season with salt and pepper.
  • To plate, use a warm plate and place the spinach first. Slice the filet in 1/2, width-wise. Place the bottom half on the spinach and pour 2 tablespoons of the leek mixture on the filet and place the second part of the filet on top. Spoon 3 to 4 tablespoons of the leeks on top of the filet. Place 3 to 5 onion rings on top of the filet and serve hot.
  • Beer Battered Onion Rings:
  • 1 bag batter mix
  • 1 dark ale beer
  • 1 large red onion, sliced in 1 inch rings
  • Heat a fryer or a deep pot halfway filled with oil to 375 degrees F.
  • In a bowl, mix the batter and beer and whisk until thick. Coat the onion rings and drop into the hot fryer. Fry until golden brown and place on a paper towel to absorb the excess grease. Salt while hot.

2 pounds filet or sirloin of beef
2 tablespoons oil
1 bunch spring (green) onions, chopped
2 cloves garlic, chopped
Piece of ginger root the size of your thumb, chopped
1 tablespoon soy sauce
1 bunch fresh coriander (cilantro), chopped
2 fresh chilies, chopped
1 piece lemon grass, roughly chopped
2 tins coconut milk
Juice of 1 lime

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat a heavy frying pan and sear your piece of meat on all sides, remove. Heat the oil in the same pan and saute the spring onions, garlic and ginger until softened. Add the soy sauce, half of the coriander, and the chilies.
  • Place the seared meat in a roasting tin. Pour over the fried vegetable mixture. Add the lemongrass and pour the coconut milk and lime juice over the meat. Roast for 40 minutes.
  • Place beef on a serving dish. Strain the sauce, add the rest of the chopped coriander and pour over the meat. Serve immediately.

2 French bread, baguettes (about 2 1/2 inches in diameter)
1 lb ground chuck
1/4 cup soy sauce
2 teaspoons firmly packed dark brown sugar
5 -6 scallions, white and light green parts only

Steps:

  • Preheat the oven to 450 degrees and set a rack on the middle level.
  • Slice off and discard the heels of the baguettes and cut them into 36 slices about 1/2 inch thick. Lay the slices side by side on a baking sheet, or two if necessary.
  • Mix together the meat, soy sauce, brown sugar and scallions in a large bowl with your hands. Knead thoroughly until you have a fine paste. Make 36 small meatballs about the size of a walnut. Put one in the middle of each bread slice, pressing down slightly.
  • Bake for 7-9 minutes until the meatballs and bread have become one.

  • In medium skillet, heat oil and butter over medium heat. Add onion; cook 15 to 18 minutes, stirring occasionally, until tender. Stir in broth and beef; cook 4 minutes. Remove from heat.
  • Spread 1/2 of mayonnaise mixture over cut sides of french bread. Using slotted spoon, remove beef and onion from broth mixture, reserving broth mixture. Top loaf with beef and onion; top with gorgonzola or provolone cheese.
  • Set oven to Broil. Broil with tops 6 inches from heat 2 to 3 minutes or until bread is lightly toasted. Watch closely! Cut each sandwich into 4-6 pieces. If desired, serve broth with sandwiches for dipping.
