1/4 cup finely chopped onion
1/4 cup snipped fresh parsley or 1/2 teaspoon dried dill
2 cloves garlic, minced
1/4 teaspoon salt
1 pound 90% lean ground beef
1/3 cup Yoplait® plain fat-free yogurt
1 tablespoon stone-ground mustard or Dijon-style mustard
1 tablespoon snipped fresh dill or 1 teaspoon dried dill
1 teaspoon balsamic vinegar
1/4 cup chopped seeded cucumber
Cucumber slices, tomato slices, red onion slices, and/or fresh spinach leaves (optional)

Steps:

  • Preheat broiler. In a large bowl, combine the chopped onion, the parsley, garlic, and salt. Add beef; mix well. Shape into four 3/4-inch-thick patties.
  • Place patties on the unheated rack of a broiler pan. Broil 3 to 4 inches from heat for 12 to 14 minutes or until done (160°F),* turning once halfway through broiling.
  • (To grill, place burgers on the rack of a charcoal grill directly over medium coals. Grill, uncovered, for 14 to 18 minutes or until done [160°F],* turning once halfway through grilling. For a gas grill, preheat grill. Reduce heat to medium. Place burgers on grill rack over heat. Cover and grill as above.)
  • Meanwhile, for sauce: In a small bowl, combine yogurt, mustard, dill, and balsamic vinegar. Stir in chopped cucumber. Spoon sauce over burgers. If desired, serve with cucumber slices, tomato slices, red onion slices, and/or spinach leaves.
  • *Note: The internal color of a burger is not a reliable doneness indicator. A beef patty cooked to 160°F is safe, regardless of color. To measure the doneness of a patty, insert an instant-read thermometer through the side of the patty to a depth of 2 to 3 inches.

1 egg
1 small onion, chopped
½ cup dill pickle juice
¾ teaspoon salt
¼ teaspoon ground black pepper
1 slice bread, torn into small pieces
1 pound lean ground beef
¼ cup chopped dill pickles
¼ cup ketchup
2 tablespoons water
1 tablespoon brown sugar
½ teaspoon Worcestershire sauce

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 8x8 inch baking dish.
  • Beat the egg in a mixing bowl. Whisk in the onion, pickle juice, salt, and pepper. Stir in the bread until soggy, then mix in the ground beef until evenly combined. Form into a loaf and place into the prepared pan. Stir together the chopped pickles, ketchup, water, sugar, and Worcestershire sauce; pour over the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 prebaked 12-inch pizza crust
1/2 cup ketchup
1/4 cup prepared mustard
1-1/2 cups shredded cheddar cheese
2 cups shredded lettuce
1/2 cup chopped dill pickle
1/4 cup chopped onion
1/2 cup mayonnaise
2 to 3 tablespoons dill pickle juice

Steps:

  • Preheat oven to 425°. In a large skillet, cook and crumble beef over medium heat until no longer pink, 3-4 minutes; drain., Meanwhile, place crust on an ungreased baking sheet or pizza pan. Mix ketchup and mustard; spread over crust. Add ground beef; bake 5 minutes. 2 teaspoons vegetable oil plus additional vegetable oil for deep frying
1/2 cup flour
1/2 teaspoon baking powder
1/4 teaspoon garlic powder
1 large egg, beaten
10 to 12 Vlasic® Ovals Hamburger Dill Chips
6 oz. ground beef patty or veggie patty
1 hamburger bun
1 slice American cheese
1 to 2 leaves of green leaf lettuce
1 slice tomato
1 tablespoon ranch dressing

Steps:

  • 1. Heat 2 inches of vegetable oil in a deep, heavy pan until oil reaches a temperature of 350 degrees F.
  • 2. Combine flour, baking powder and garlic powder in a shallow bowl. Beat egg in separate bowl.
  • 3. When oil comes up to temperature, dip Vlasic® Ovals Hamburger Dill Chips in egg and then in flour mixture and add to oil. Cook until golden brown, flipping over while cooking, about 2 minutes.
  • 4. Set aside on a paper towel to drain.
  • 5. Heat 2 teaspoons vegetable oil into a separate cast iron or fry pan and heat until oil shimmers. Add burger to pan.
  • 6. While burger is cooking, add bun, cut side down, to fry pan. Heat until grilled, 2 to 3 minutes, then remove.
  • 7. Cook burger to desired doneness and turn off heat. Lay American cheese on burger and cover pan until melted.
  • 8. On bottom of bun, layer lettuce, tomato and burger. Top with ranch dressing, fried pickles and top of bun.
  • 9. Serve additional fried pickles on the side.

1 3/4 lbs beef top round steak, sliced into 8 thin slices & prepared for cooking
3 tablespoons spicy brown mustard
salt & pepper
4 large dill pickles, halved lengthwise or 8 medium dill pickles
2 tablespoons vegetable oil
2 onions, thinly sliced
1 cup dark beer or 1 cup beef stock
1 bay leaf

Steps:

  • Preheat oven to 350°F Keep flameproof casserole dish WITH LID ready.
  • Lay slices of beef (pounded to thickness of 1/4 inch) flat on work surface. Spread each slice with mustard, almost to edges. Season with salt & pepper.
  • Place a pickle spear along one end of each slice & roll up neatly. Tie rolls with string or secure with toothpicks.
  • Heat oil in casserole; add beef rolls & fry over med-high heat until browned on all sides. Remove from pan & set aside.
  • Add onions to pan and fry until soft & beginning to brown, stirring frequently.
  • Return beef rolls to pan and add beer and bay leaf. Bring to boil over high heat.
  • Cover pan tightly & transfer to the oven. Cook until beef rolls are very tender (about 1 hour). Turn them over halfway through cooking to ensure even cooking.
  • Remove string/toothpicks and discard bay leaf prior to serving.
  • Serve with rice or potatoes.

  • Boil the sliced beef about 2 hours, or until tender.

1 1/2 pounds ground round steak
2 teaspoons plus 1 tablespoon corn, peanut or vegetable oil
1/2 cup finely chopped onions
4 tablespoons fine fresh bread crumbs
1/2 cup finely chopped dill pickles
1/2 teaspoon finely minced garlic
Salt to taste if desired
Freshly ground pepper to taste
2 tablespoons butter
1 tablespoon red-wine vinegar
1/3 cup sour cream
2 tablespoons finely chopped parsley

Steps:

  • Put the meat in a mixing bowl.
  • Heat 2 teaspoons of the oil in a small saucepan or skillet and add half the onions. Cook, stirring, until wilted. Cool briefly.
  • Add the cooked onions to the meat. Add the bread crumbs, pickles, garlic, salt and pepper and blend thoroughly with the hands.
  • Divide the mixture into four equal portions and shape each into a patty about 1 inch thick.
  • Heat the remaining 1 tablespoon oil in a skillet and when it is very hot add the patties. Cook over moderate heat about 5 minutes or until nicely browned on one side. Turn the patties and cook 2 minutes or to the desired degree of doneness on the other side. Transfer the patties to a warm platter.
  • Pour off the fat from the skillet and add the butter. When it is hot and melted add the remaining onions. Cook, stirring, until wilted and add the vinegar, stirring. Cook about 45 seconds and stir in the sour cream. Stir and heat without bringing to the boil. Pour the sauce over the patties. Sprinkle with parsley and serve.
