BEEF STEW WITH HERB DUMPLINGS

Steps:
- In a resealable plastic bag, combine four, salt and pepper. Add beef, a few pieces at a time, and shake to coat. In a Dutch oven, brown meat in oil. Add water; bring to a boil. Reduce heat; cover and simmer 1-1/2 hours. , Add the vegetables, parsley, thyme and bay leaf. Cover and simmer until meat and vegetables are tender, about 30 minutes. Discard bay leaf. Add browning sauce if desired. , For dumplings, combine the flour, baking powder, salt, thyme and sage. Cut in shortening until the mixture resembles coarse crumbs. Stir in milk until moistened. , Drop by heaping tablespoonfuls onto simmering stew. Cover and simmer 15-20 minutes or until a toothpick inserted in a dumpling comes out clean (do not lift cover while simmering). Serve immediately.

SEASONED GROUND BEEF AND DUMPLINGS WITH VEGGIES
Before going into a description of this recipe, I want to thank Chef #192264 for inspiring me with her Recipe #163278 recipe. If it wasn't for her, I would never be able to make dumplings.Now to go on with my description for this recipe.Sometimes you just want some other type of meat besides chicken with dumplings, so I came up with this. You could make the dumplings the drop type,but I suggest rolling the dough out. It makes for a more evenly cooked finished dumpling. Steps:
- Mix together flour,salt and shortening in a large bowl until small crumbs are formed.
- Add milk until well blended.
- Roll out dough on a floured cutting board or floured counter until about 1/8 inch thick.
- Let "dry" for about 30 minutes.
- While the dumpling dough is "drying", take a large pot and add remaining ingredients except for the beef broth and veggies.
- Cut dough into even sized squares.
- Cook ground beef until browned and onions are tender, drain if needed.
- Return beef to pan and add beef broth and veggies.
- Bring broth to a boil, and add dumplings a few at a time so the broth can continue to boil.
- Simmer for 30 minutes.
- Then eat and enjoy :).

BEEF DUMPLINGS WITH AN APRICOT SURPRISE
Beef with dried fruit is one of my favorite flavor combinations. This is a good recipe for Passover, but is perfect all year round.

Steps:
- Mix the ground beef with the pepper, salt, garlic, coriander and onion.
- Add the egg and mix well until a smooth"dough" is formed.
- Wet your hands with some water or oil.
- Form small balls with the meat.
- Insert one small apricot into each ball and make sure the meat envelopes the apricot entirely, so it is hidden in the center.
- Toss the balls into the boiling broth and cook for 15 minutes.
- Serve in your favorite soup or in a stew.
