With just one pound of ground beef and 20 minutes of prep time, you can have a pleases-all-customers dinner for five on the table in less than an hour with this easy enchilada recipe. Transform five simple ingredients into this cheesy, hearty meal, with a little help from Betty.

1 lb lean (at least 80%) ground beef
2 cans (10 oz each) Old El Paso™ red enchilada sauce
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 package (8.2 oz) Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch)
1 1/2 cups shredded Cheddar cheese (6 oz)

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish or pan with cooking spray.
  • In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in 1/2 cup of the enchilada sauce and the chiles.
  • Spread 1/2 cup of the enchilada sauce evenly in baking dish. Spread 1/4 cup beef mixture down center of each tortilla; sprinkle with 1 tablespoon cheese. Wrap tortillas tightly around filling, placing seam side down in baking dish. Top with remaining enchilada sauce. Sprinkle with remaining cheese.
  • Bake 20 to 25 minutes or until hot and bubbly. Let stand 5 minutes before serving.

2 (8 ounce) packages low fat cream cheese
1 (1 ounce) packet Old El Paso™ Taco Seasoning mix
1 (15 ounce) can corn, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can diced tomatoes, drained
1 (4.5 ounce) can Old El Paso™ chopped green chiles
3 tablespoons Old El Paso™ red enchilada sauce
1/4 cup fresh cilantro, chopped
4 cups cooked white rice
2 green peppers, chopped into large pieces, seeds removed
2 red peppers, chopped into large pieces, seeds removed
1 cup shredded mozzarella cheese, divided
1 cup shredded mild cheddar cheese, divided
diced tomatoes and cilantro for garnish

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, heat the cream cheese in the microwave for 30-40 seconds or until softened. Mix in the taco seasoning, corn, beans, tomatoes, chiles, enchilada sauce, and cilantro. Stir to combine. Stir in the rice and 1/2 cup of each of the cheeses until fully combined. Set aside.
  • Spray a large baking dish with nonstick spray. I used a 10" round dish, but you can also use a 9 x 13.
  • Start by making a layer of the green peppers along the bottom of the dish. Top with half of the rice mixture, and use a spoon to smooth out as much as possible.
  • Layer in the red peppers and top with last half of the rice mixture. Top with the remaining 1/2 cup of each of the cheeses and sprinkle with more cilantro.
  • Bake for 30 minutes or until the cheese is bubbly and melted and the casserole is fully heated through.
  • Remove from the oven and top with more cilantro and diced tomatoes. Serve immediately.
  • Enjoy!

My brother gave this recipe to me and we love it. If you are on a low-carb diet, this is awesome. Serve with refried beans and Mexican rice for a delicious meal. This is also great with chicken and green enchilada sauce mixed with sour cream.

4 medium fresh poblano peppers
1 tablespoon olive oil
1 medium onion, diced
1 clove garlic, minced
1 pound lean ground beef
1 tablespoon chili powder
1 teaspoon ground cumin
salt and ground black pepper to taste
4 thin slices shredded Cheddar cheese
slice shredded Monterey Jack cheese
1 (15 ounce) can enchilada sauce (such as Hatch®)
aluminum foil
¼ cup grated Cheddar cheese

Steps:

  • Turn a gas stove burner to high. Hold poblano peppers directly on the flame with a pair of tongs and turn until skins are charred. Let peppers cool. Leaving peppers as close to whole as possible, remove skins, seeds, membranes, and stems.
  • Heat olive oil in a large skillet over medium heat; stir in onion and garlic. Cook and stir until onion is soft and translucent, about 5 minutes. Add ground beef; cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Mix in chili pepper, cumin, salt, and pepper.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place peppers in a nonstick casserole dish. Insert a slice of Cheddar cheese and a slice of Monterey Jack cheese into each pepper. Spoon some ground beef mixture into each pepper. Place the remaining beef on top of the peppers, and cover with enchilada sauce. Cover with aluminum foil.
  • Bake in the preheated oven for 15 minutes. Remove the foil and sprinkle grated Cheddar cheese on top of the peppers. Bake until peppers are bubbly and fragrant, another 45 minutes.

2 tablespoon olive oil
1 pound ground beef (lean)
1 medium white onion (diced)
2 cups enchilada sauce
2 cups cheddar cheese (shredded)
5 green bell peppers

Steps:

  • Heat the olive oil in a skillet over medium-high heat. Add the ground beef to the skillet and brown until almost cooked through. Add the onion and continue to cook, stirring occasionally, until the beef is fully cooked and the onion has softened. Stir in the enchilada sauce and cook for another 30 seconds, or until the mixture begins to bubble. Set the mixture aside.
  • Preheat your oven to 400 F degrees.
  • Slice the tops of the bell peppers about 1/2 and inch down, or enough to keep the tops fully intact. Set the tops aside. Use your hands to remove the seeds from each pepper.
  • Fill each pepper about 1/3 of the way with the meat mixture, a healthy layer of cheese, another layer of meat mixture to the top of the pepper, then a final layer of cheese. Place the tops back on each pepper.
  • Place the peppers in a casserole dish and bake for about 45 minutes to 1 hour, or until the peppers begin to blister and darken.
