FLANK STEAK WITH TARRAGON BUTTER
Marge Perry, a regular contributor to Food, gets the credit for this recipe I got in the newspaper. This is prepared in a skillet and there is no marinating. Very quick and easy.

Steps:
- Combine butter, 1/4 teaspoons salt, tarragon, and lemon rind in a bowl.
- Stir vigourously with a fork.
- Coat a cast iron skillet with cooking spray and heat over medium-high heat.
- Sprinkle steak with remaining salt and pepper and cook for 5-7 minutes per side, depending on thickness and desired degree of doneness.
- Let steak rest 3-5 minutes on a carving board then cut across on the diagonal, into thin strips.
- Drizzle meat with the butter and serve.

Steps:
- 1. Sprinkle steaks evenly with garlic pepper. Cover an set aside. 2. Heat grill to high direct heat. Meanwhile, blend softened butter, tarragon, and worcestershire sauce in small bowl. Cover and set aside in cool place. 3. Combine onion and garlic on one end of 12x6-inch peice of heavy-duty aluminum foil. Drizzle with olive oil. Fold foil over to enclose onion mixture, forming 6-inch square package; crimp to seal loosely. 4. Place steaks and foil packet on grill. Grill steak, covered, for 4 to 6 minutes per side or to desired doneness. Remove onion packet after 5 minutes. Open packet and cool slightly. 5. Remove steaks from grill. Stir onion mixture into butter mixture. Serve steaks topped with butter.
