Beef Mince and Macaroni with a Yoghurt-Garlic-Sauce image

This is adapted from a Gulf News cookery book that is the most used book in my collection due to the simplicity and flavour of the recipes it contains.

500 g elbow macaroni
4 onions, finely chopped
70 g butter
1/2 teaspoon garam masala powder
1/2 teaspoon cumin powder
1 green chili, chopped
1 tablespoon coriander leaves, chopped (cilantro)
500 g beef mince
salt and pepper
500 g yoghurt
8 cloves garlic, crushed

Steps:

  • Make the macaroni as per the package instructions.
  • Fry the onions in the butter till they are golden brown.
  • Add the green chillies and saute.
  • Add the spice powders.
  • Add the minced beef and fry till brown and cooked.
  • Add the coriander leaves and mix well.
  • Add the macaroni to this and stir till heated through.
  • Mix the yoghurt and garlic together.
  • Serve the macaroni in a platter.
  • Pour the yoghurt and garlic sauce over it and serve.

This is a Middle Eastern adaptation using any pasta--fusilli, elbow macaroni, penne, shells, etc. It is just as tasty eaten cold or warm, and is a quick fix for a hurry up meal. Sahtain!--to your health!

1 (16 ounce) package pasta
1 tablespoon butter
2 cups plain yogurt
4 cloves garlic, minced
1 teaspoon salt
2 tablespoons chopped fresh parsley
3 tablespoons pine nuts
2 tablespoons butter

Steps:

  • Cook the pasta in a large pot of boiling salted water until al dente.
  • Using a mortar and pestle, mash the salt and garlic cloves together into a paste. Warm the yogurt slightly in a sauce pan. Remove a small amount of warmed yogurt from the pan, and stir together with the garlic paste. Stir this mixture into the remaining yogurt
  • Drain the pasta, and rinse in cold water. Place in a casserole or deep serving dish, toss with 1 tablespoon butter or margarine. Toss with half of the garlic-yogurt sauce. Spread the remaining sauce over the pasta. Garnish with the parsley.
  • For a very special dish, brown the pine nuts in 2 tablespoons butter or margarine. Pour over the parsley. Serve immediately.

  • Mix together the yogurt, crushed garlic and salt until well combined. Taste for seasoning, add more salt or garlic if desired. Place it in the fridge to chill until meat and pasta are ready.
  • Heat the oil in a skillet over medium heat until hot. Add the diced onion and saute for a few minutes or until beginning to soften. Add the garlic, and continue to cook until onions are translucent.
  • Cook and drain pasta according to package instructions. Immediately before eating, toss pasta with yogurt sauce until well coated, then top with the spiced meat mixture, toasted pine nuts and parsley.*
