1 teaspoon rosemary
1 teaspoon onion salt
1/2 teaspoon paprika
1/2 teaspoon ground pepper
1/2 teaspoon sage
2 lbs. beef short rib
1 6oz can tomato paste
1 and 1/2 cups water or broth
1/4 cup balsamic vinegar
6 cloves garlic
2 tablespoons Dijon mustard
1 tablespoon unsweetened cocoa
2 tablespoons high temperature oil (I used coconut oil)

Steps:

  • Mix the first five ingredients (the spices) and rub on the outside of the beef short rib; set aside.
  • Place the tomato paste, water, balsamic, garlic cloves, Dijon mustard, and cocoa into a slow cooker and mix with a spoon until combined.
  • Turn the slow cooked on low.
  • In a medium sized skillet, heat the oil until melted and it coats the pan.
  • Sear beef short ribs on all sides until brown. About one minute per side.
  • Add the seared beef short ribs to the slow cooker and cover.
  • Cook on low for 4-6 hours or until they are tender and fall off the bone.
  • Spoon sauce over each piece of beef short rib before serving.

4 plate short ribs, bone in (4 ribs)
8 ounces Brown Sugar Rub, recipe follows
BBQ sauce, for serving
4 ounces brown sugar
4 ounces superfine sugar
1 ounce kosher salt
1 ounce black pepper, butcher grind
1/2 ounce cayenne pepper

Steps:

  • Coat the short ribs liberally with the Brown Sugar Rub on both sides. It is not necessary to rub the spices into the meat, rather sprinkle an even layer over the top. Refrigerate overnight.
  • Preheat your smoker to 225 degrees F. Add a log of hickory.
  • Place the meat in the smoker and maintain temperature at or around 225 degrees F for 12 to 14 hours, or until done. Replace the hickory logs as they expire.
  • Test the meat by twisting one of the exposed bones. If the bone moves easily the meat is done. Allow the meat to rest for 30 minutes. Cut each plate into 4 portions. Serve with BBQ sauce.
  • Combine the sugars, salt, black pepper and cayenne, and mix thoroughly.

3 to 4 pounds beef short ribs
1 medium onion, sliced
1 medium carrot, peeled and chopped
2 celery stalks, chopped
2 cloves garlic, roughly chopped
1 (15-ounce) can tomato paste
1 bay leaf
1/2 teaspoon dried thyme
1 tablespoon oil
Salt and black pepper
Beef broth, enough to cover the ribs

Steps:

  • In a large Dutch oven heat the oil and brown the ribs on all sides. Add the carrots, celery, onion, and garlic. Continue to cook for about 2 to 3 minutes. Add the tomato paste and cook stirring slowly for 3 more minutes. Optional: you can dust the short ribs at this time with flour to help thicken the sauce. Add the rest of the ingredients and cover. Cook for about 2 hours on low heat (simmer) or until the meat begins to pull from the bone. When done remove from the pan and strain the liquid. You can now thicken the sauce or leave as is and season with salt and pepper. Serve with truffle mashed potatoes and haricots verts.
  • Truffle mashed potatoes are standard mashed potatoes with chopped black truffles and a little truffle oil added to them.

1 pound beef short ribs
1 teaspoon salt
½ teaspoon ground black pepper
2 tablespoons all-purpose flour
1 tablespoon olive oil
1 tablespoon butter
1 onion, sliced
1 clove garlic
1 (12 fluid ounce) can or bottle stout beer
1 cup beef stock

Steps:

  • Season the short ribs with salt and pepper, then dredge in flour until coated. Shake off the excess flour.
  • Heat the olive oil and butter in a large skillet or Dutch oven over medium-high heat. Cook the ribs until browned on each side, about 5 minutes per side. Remove from the skillet and set aside. Add the onion and garlic to the skillet; cook and stir until onion is tender, about 5 minutes. Return the ribs to the skillet and pour in the beer. Stir, scraping the bottom of the pan, until all of the browned bits have mixed in with the liquid. Pour in the beef stock, cover and simmer over low heat until very tender, about 2 hours.

I get recipes on the Chitterling website, and they are usually family recipes that other members send in. Of course it isn't a gluten-free site, but for desserts I just change the recipes. 3 lbs beef short ribs
2 teaspoons salt
1/2 cup chopped onion
1/2 cup water
1 garlic clove, minced (I like garlic and used more)
1 (6 ounce) can tomato paste
1 cup catsup
3/4 cup packed brown sugar
1/2 cup cider vinegar
2 tablespoons prepared mustard

Steps:

  • Brown ribs in a large skillet.
  • Cover and cook over low heat for one hour.
  • Drain off pan drippings.
  • Combine remaining ingredients, and pour over ribs.
  • Cover tightly and cook over low heat 1-1/2 hours or until tender.
  • At least using your own ingredients, you don't have to wonder about gluten!
