FILET OF BEEF WITH MUSTARD MAYO HORSERADISH SAUCE

- Preheat the oven to 275 degrees F. Line a sheet pan with aluminum foil.
- Pat the entire tenderloin dry with paper towels and brush it all over (top and bottom) with the butter. Sprinkle the tenderloin all over with 4 teaspoons salt and 2 teaspoons pepper. It will seem like a lot but trust me, it's important.
- Place the tenderloin on the prepared sheet pan and roast it for 1 to 1 1/4 hours, until an instant-read thermometer inserted into the end of the filet registers 130 degrees F for medium rare. Remove from the oven, cover tightly with aluminum foil, and allow to rest at room temperature for 15 minutes. Discard the foil and allow to sit at room temperature.
- Meanwhile, for the sauce, whisk together the mayonnaise, sour cream, mustards, horseradish, and 1/4 teaspoon salt in a small bowl. Refrigerate until ready to serve.
- Remove the strings and slice the filet between 1/4 and 1/2 inch thick, sprinkle with salt, and place on a platter with a garnish of parsley. Serve warm, at room temperature, or cold with the sauce on the side.

- Combine sour cream, mayonnaise, 3 T. horseradish, 2 T. mustard and 1 T. parsley; refrigerate.
- Preheat oven to 425 degrees. Combine remaining 2 T. horseradish and 2 T. mustard with Worcestershire, rosemary, salt and peppercorns. Spread mixture over all sides of beef.
- Place beef in roasting pan. Roast until meat thermometer inserted into center of beef registers 145 degrees, 50-60 minutes. Let stand 10 minutes before slicing.
- Remove string from meat and slice. Sprinkle with remaining 1 T. parsley. Serve with horseradish sauce.

- In a large pot, place roast with the salt and water.
- Let stand for 20 minutes.
- Then bring slowly to a boil, skimming frequently.
- Add onion, carrot, turnip, celery, leek, and spices-- cover lower heat and simmer 2 1/2 hours or until meat is very tender, when pierced with a fork.
- Drain the beef, and place on a serving platter, covering to keep warm.
- Strain the stock pressing all the vegetables to extract all the juices.
- Taste stock for seasoning, and remove one cup of stock to make the sauce.
- Serve the rest of the stock as a soup, before eating the beef.
- For the sauce-- Melt the butter, saute the onion over med.
- heat until soft.
- Stir in the flour, and cook until lightly browned.
- Add the one cup of stock, horseradish and lemon juice along with salt, pepper, and sugar, to taste.
- Bring sauce to a boil, stirring, simmer 3 minutes.
- Remove from heat and add the cream.
- Serve the beef with boiled potatoes, and the sauce seperately--.
ROAST BEEF WITH HORSERADISH SAUCE
Fiery horseradish sauce is a classic companion to roast beef. After the beef finishes cooking, let it stand at room temperature for at least ten minutes before carving. Keep in mind it will continue to cook after it has been removed from the oven.

FILET OF BEEF WITH MUSTARD HORSERADISH SAUCE

- Preheat the oven to 500 degrees F.
- Place the beef on a baking sheet and pat the outside dry with a paper towel. Spread the butter on with your hands. Sprinkle evenly with the salt and pepper. Roast in the oven for exactly 22 minutes for rare and 25 minutes for medium rare.
- Remove the beef from the oven, cover it tightly with aluminum foil, and allow it to rest at room temperature for 20 minutes. Remove the strings and slice the filet thick, 1/2-inch thick per slice. Transfer to a serving platter. Garnish with parsley. Serve warm, at room temperature, or cold with Mustard Horseradish Sauce on the side.

- Season the tenderloin all over with the salt, pepper, rosemary and garlic. Cover the meat and refrigerate for at least two hours and preferably overnight. Let it come to room temperature for 1 hour before roasting.
- Heat oven to 450 degrees. Wipe off as much garlic as possible. (It tends to burn.)
- In a large, ovenproof skillet over high heat, heat the oil. Add the meat and thoroughly brown all over, 4 to 5 minutes per side. (If your skillet isn't large enough, cut the meat in half.)
- Place the skillet on the oven's middle rack and roast until an instant-read thermometer shows 120 degrees (for rare), 10 to 20 minutes. Let the meat rest for 10 minutes before carving.

- Place the meat in a roasting pan, and coat it with the crushed peppercorns. Press the peppercorns to make them adhere. Drizzle the vegetable oil over the steak on both sides. Set aside.
- Put the horseradish, the vinegar and the cream in a saucepan over medium-high heat. Bring to a boil. Remove from heat. Add salt and pepper to taste, cover and set aside.
- Transfer the steak to a pan, preferably cast iron, that has been heated over medium-high heat. Sear for two minutes and flip. Season with salt to taste. Sear for two more minutes and reduce heat to medium. Continue cooking, flipping occasionally, for 15 to 20 minutes depending on degree of doneness desired. When done, transfer the meat to a warm dish, and place two tablespoons of butter over it. Let the meat rest for five minutes.
- Slice the beef crosswise on a wide bias. Serve on warm plates moistened with the pan juices, along with the horeseradish sauce.

- Preheat oven to 400 degrees. In a small bowl, stir together 3 tablespoons oil, rosemary, garlic, and lemon zest; season with salt and pepper. - 1. Set a rack over a baking sheet. Rub 1/2 cup of the salt all over the roast and let stand for 10 minutes.
- 2. Repeat with another 1/2 cup of the salt.
- 3. Transfer the roast to the rack and refrigerate uncovered for 2 days. Bring to room temperature 3 hours before roasting.
- 4. Preheat the oven to 450 degrees F. Season the meat with pepper and roast for 20 minutes.
- 5. Reduce the oven temperature to 225 degrees F and roast for about 1 hour and 30 minutes longer, until an instant-read thermometer inserted in the center of the roast registers 120 degrees F. Let the meat rest for 30 minutes. *I use an in oven internal thermometer for perfect temp.
- 6. In a bowl, mix the sour cream with the horseradish and the remaining 1 tablespoon of salt and pepper.
- 7. Slice the roast and serve with the horseradish cream.
