1 medium onion, chopped
4 garlic cloves, minced
2 cups salsa
1 can (16 ounces) refried beans
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) enchilada sauce
1 can (4 ounces) chopped green chilies
1 envelope taco seasoning
1/4 teaspoon pepper
6 flour tortillas (10 inches)
3 cups shredded Mexican cheese blend, divided
2 cups crushed tortilla chips
Sliced ripe olives, guacamole, chopped tomatoes and sour cream, optional

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the salsa, beans, enchilada sauce, chilies, taco seasoning and pepper; heat through. , Spread 1 cup meat mixture in a greased 13x9-in. baking dish. Layer with two tortillas, a third of the remaining meat mixture and 1 cup cheese. Repeat layers. Top with remaining tortillas and meat mixture., Cover and bake at 375° for 30 minutes. Uncover; sprinkle with remaining cheese and top with tortilla chips. , Bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before serving. Garnish with olives, guacamole, tomatoes and sour cream if desired.

1 (8-oz.) container southwest-flavor sour cream dip
8 (6-inch) corn tortillas, halved
8 oz. (2 cups) shredded colby-Monterey Jack cheese blend
1 tablespoon chopped fresh cilantro

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. In medium bowl, combine tomatoes, zucchini, onions and beans; mix well. Reserve 1/3 cup enchilada sauce; set aside. In another medium bowl, combine remaining enchilada sauce and sour cream dip; blend well.
  • Spoon 2 tablespoons enchilada sauce mixture in bottom of sprayed baking dish. Arrange 8 tortilla pieces over sauce, overlapping as necessary. Spoon half of vegetable-bean mixture over tortillas; sprinkle with 2/3 cup of the cheese. Spoon half of remaining sauce mixture over cheese. Repeat layers, reserving 2/3 cup cheese for top. Top with reserved 1/3 cup enchilada sauce. Cover with foil.
  • Bake at 375°F. for 30 to 35 minutes or until thoroughly heated. Uncover; sprinkle with reserved 2/3 cup cheese. Bake, uncovered, an additional 5 minutes or until cheese is melted. Let stand 10 minutes before serving. Sprinkle with cilantro.

1 pound extra-lean ground beef
1 small onion, finely diced
1 (28 ounce) jar pasta sauce
1 tablespoon garlic powder
½ teaspoon dried basil
½ teaspoon dried parsley
½ teaspoon dried chives
⅛ teaspoon dried oregano
1 pinch ground nutmeg
2 cups shredded yellow and white marbled Cheddar cheese, divided
1 (8 ounce) package light cream cheese, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in the boiling water, stirring occasionally until cooked through, about 8 minutes. Drain and pat noodles dry with paper towels.
  • Brown ground beef and onion in a large skillet over medium heat, breaking the meat into crumbles as it cooks, about 10 minutes. Pour pasta sauce into beef mixture and stir garlic powder, basil, parsley, chives, oregano, and nutmeg into beef and sauce.
  • Spread half of the beef sauce into a 2-quart casserole dish and sprinkle with 1 cup Cheddar cheese.
  • Lay a lasagna noodle out onto a lightly floured work surface and spread with 2 tablespoons cream cheese. Spread 2 tablespoons ground beef sauce onto noodle; roll noodle and place with seam side down atop cheese in casserole dish. Repeat with remaining noodles. Sprinkle remaining beef sauce and 1 cup Cheddar cheese over noodle rolls.

1 1/2 lbs ground beef
9 corn tortillas
2 (10 ounce) cans mild enchilada sauce
1 (15 ounce) can black beans, rinsed
1 1/2 cups frozen corn
1 teaspoon ground cumin
1 1/2 cups shredded Mexican blend cheese
1/2 chopped tomato
2 tablespoons chopped fresh cilantro
crunchy corn tortilla strips (optional)

Steps:

  • Heat oven to 350 degrees. Heat large nonstick skillet over medium heat until hot. Add ground beef, cook 8-10 minutes; breaking into crumbles and stirring occasionally. Remove from skillet with slotted spoon; pour off drippings. Return beef to skillet; stir in 1 can enchilada sauce, black beans, corn and cumin; bring to boil. Reduce heat; simmer 5 minutes, stirring occasionally.
  • Spray 11 3/4 x 7 1/2 inch baking dish with nonstick cooking spray. Arrange 3 tortillas in a dish, cutting 1 as needed to cover bottom. Spread 1/4 cup remaining enchilada sauce over tortillas; cover with 1/3 beef mixture, then 1/3 cheese. Repeat layers twice, omitting final cheese layer. Pour remaining enchilada sauce over top.

1 ½ pounds ground beef
1 cup water
2 tablespoons 1-1 oz pkg taco seasoning
1-15 ounce can black beans (drained)
1-15 ounce can corn (drained)
1-16 ounce jar salsa (divided)
3 cups shredded cheddar cheese
18-6 inch corn tortillas
Fresh jalapeno for garnish (optional)

Steps:

  • Preheat the oven to 375 degrees. Spray a 9x13 baking dish with nonstick cooking spray.
  • Brown the ground beef in a skillet over medium heat, breaking it up into crumbles.
  • Once the beef is browned, drain the fat. Add 1 cup of water and taco seasoning. Stir well and cook over medium low heat until the liquid has cooked away (about 10 minutes).
  • Remove cooked seasoned beef from heat. Add the drained beans and corn and 1 cup of the salsa to the beef. Stir to mix.
  • Spread ½ of the remaining salsa (about ½ cup) in the bottom of your baking dish.
  • Top with 6 tortillas, it's okay if they overlap a bit.
  • Then layer with half of the beef mixture, followed by 1 cup of shredded cheese. Repeat with another layer of tortillas, beef and cheese. For the final layer, add the remaining tortillas, then the remaining salsa and cheese.
  • Cover the baking dish with aluminum foil and bake in a preheated oven for 30 minutes. Then remove the foil and bake for an additional 15 minutes.
  • Remove from the oven and let rest for 5-10 minutes before serving.
  • Top with sour cream, fresh jalapeno slices or your other favorite taco toppings. Serve with Mexican rice or side salad.

  • In a large skillet-brown meat& drain.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and pat dry with paper towels. Cut each noodle into assorted desired shapes.
