Beer Battered Fried Alaskan Salmon Sticks image

Number Of Ingredients 15

4 cups Canola Oil, for frying
1 (1 1/2 pound) skin-on side of Alaskan Sockeye Salmon, pinbones removed and belly fat trimmed, cut into 1/2 inch strips
1 cup All Purpose Flour
1/4 cup Cornstarch
1/2 teaspoon Baking Powder
1 teaspoon Kosher Salt
1 cup Pilsner Beer
For the Lemon Aioli Dipping Sauce
1/2 cup Mayonnaise
2 teaspoons Dill Relish
1/2 teaspoon Dijon Mustard
1 tablespoon Fresh Lemon Juice
1 teaspoon Chives, chopped, plus more for garnish
Pinch of Kosher Salt
Extra Lemon Wedges, for serving

Steps:

  • Step 1 In a large cast iron skillet or heavy bottomed pan for frying, heat oil to 350 degrees F, use a candy/frying thermometer to monitor the oil temperature.
  • Step 2 While oil is heating, in a large mixing bowl whisk together flour, cornstarch, baking powder, and kosher salt. While whisking begin pouring in the beer, mix well until batter is smooth and thick.
  • Step 3 Pat salmon dry with a paper towel, season with kosher salt and ground black pepper. Work in batches to dredge salmon strips in batter, carefully slide coated salmon into hot oil to fry. Fry fish turning frequently until golden brown and crispy, about 4-5 minutes. Remove fried salmon to a paper towel lined sheet pan. Season immediately with kosher salt. Repeat until all remaining salmon strips are fried.
  • Step 4 For the Lemon Aioli Dipping Sauce
  • Step 5 Mix together mayonnaise, relish, dijon mustard, lemon juice, chives, and season with kosher salt.
  • Step 6 Serve aioli alongside fried salmon. Garnish with chopped chives and serve with lemon wedges to squeeze over top of salmon. Enjoy immediately!

I love this recipe, it is absolutely delici-oso! These breaded pan-fried salmon fillets are best served with steamed rice and spring mix salad, or broccoli florets and mashed potatoes, or on a toasted roll for a sandwich.

⅓ cup vegetable oil for frying
1 ½ cups cornmeal
½ cup all-purpose flour
1 tablespoon seasoned salt
½ tablespoon lemon pepper
1 tablespoon kosher salt
½ teaspoon ground white pepper
3 eggs
6 salmon fillets, or to taste

Steps:

  • Heat oil to 350 degrees F (175 degrees C) in a cast iron skillet over medium heat.
  • Whisk cornmeal, flour, seasoned salt, lemon pepper, kosher salt, and white pepper together in a medium bowl.
  • Crack eggs into a separate bowl; beat about 10 seconds. Dip salmon fillet into the eggs and coat completely. Dredge salmon in the cornmeal mixture to cover completely. Shake off excess.
  • Lower salmon carefully into the hot oil in batches of 2 or 3. Fry, flipping halfway, until a golden brown crust forms, 8 to 10 minutes. Transfer to a plate lined with 3 to 4 sheets of paper towels to drain. Repeat with remaining salmon.

3 cups pale ale
4 cups water
2 lbs flour
6 ounces flour
2 tablespoons baking soda
1 tablespoon salt
2 tablespoons paprika
4 ounces granulated sugar, by weight
2 thick salmon steaks
cooking oil (can use canola, or other)

Steps:

  • Preheat oil to 350 degrees.
  • Combine beer and water in mixing bowl.
  • Slowly incorporate other ingredients until smooth. Be sure to keep the batter as cool as possible.
  • When ready, cut salmon into individual thumb-sized pieces.
  • Coat fish pieces entirely in batter and let some excess drain.
  • Immerse in preheated 350 degree F oil until golden brown. Serve with caution, very hot!
