BBQ Beer Can Chicken image

I tried several beer can chicken recipes and changed the ingredients up until I found one the whole family loves!!

2 cups cherry wood chips
2 (12 fluid ounce) cans beer, half full
½ cup dark brown sugar
½ cup kosher salt
½ cup paprika
¼ cup ground black pepper
1 teaspoon cayenne pepper
¼ cup vegetable oil
2 (3 pound) whole chickens

Steps:

  • Soak wood chips in water for at least 1 hour.
  • Preheat an outdoor grill for indirect medium heat, about 350 degrees F (175 degrees C).
  • Mix together dark brown sugar, kosher salt, paprika, ground black pepper, and cayenne pepper in a small bowl. Place two half full cans of beer on a baking sheet. Spoon 1 teaspoon seasoning mix into each can. Be careful, this will make the beer foam up and out of the can.
  • Rinse chicken under cold running water. Discard giblets and neck from chicken; drain and pat dry. Rub each chicken with 2 tablespoons vegetable oil. Rub the remaining seasoning mix over the entire chicken, inside and out. Fit each chicken over a can of beer with the legs on the bottom; keep upright.
  • Drain the wood chips and place them with the coals or in an aluminum pan on or under the grill grate as directed by the grill's manual. Place the two chickens, standing on their cans directly on the grill. Close the lid and barbeque the chicken until no longer pink at the bone and the juices run clear, about 1 hour 30 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chickens from the grill and discard the beer cans. Cover the chicken with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

⅓ cup brown sugar
2 tablespoons chili powder
2 tablespoons paprika
2 teaspoons dry mustard
½ teaspoon salt
¼ teaspoon ground black pepper
½ (12 fluid ounce) can beer
1 (3 pound) whole chicken

Steps:

  • Preheat an outdoor grill for medium-high heat, about 375 degrees F (190 degrees C). Mix the brown sugar, chili powder, paprika, dry mustard, salt, and ground black pepper in a small bowl. Place the half-full can of beer in the center of a plate.
  • Rinse chicken under cold running water. Discard giblets and neck from chicken; drain and pat dry. Fit whole chicken over the can of beer with the legs on the bottom; keep upright. Sprinkle 1 teaspoon of the seasoning mix into the top cavity of the chicken. The beer may foam up when the seasonings fall inside the can. Rub the remaining seasoning mix over the entire surface of the chicken.
  • Place the chicken, standing on the can, directly on the preheated grill. Close the lid and barbeque the chicken until no longer pink at the bone and the juices run clear, about 1 hour 15 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken from the grill and discard the beer can. 3 green Thai chile peppers
3 cloves garlic, peeled
3 tablespoons brown sugar
2 teaspoons dry mustard
1 teaspoon garam masala
1 teaspoon kosher salt

½ teaspoon cayenne pepper
½ teaspoon ground cumin
½ teaspoon ground cinnamon
½ teaspoon onion powder

1 (5 pound) whole chicken

Steps:

  • Preheat grill for medium heat. If using charcoal, push coals to the side of the grilling area for indirect heat.
  • Pour stout beer into an empty 12-ounce soda can and drop Thai chilies and garlic cloves into the can. Mix brown sugar, dry mustard, garam masala, kosher salt, black pepper, cayenne pepper, cumin, cinnamon, onion powder, garlic powder, and nutmeg in a bowl.
  • Rinse the chicken and coat the skin with the entire batch of spice rub. Place soda can containing beer mixture onto the prepared grill and sit the chicken upright onto the can.
  • Grill chicken over indirect heat until juices run clear and an instant-read meat thermometer inserted into the thickest part of the breast, not touching bone, reads at least 165 degrees F (75 degrees C), about 45 minutes. Let chicken rest 10 minutes before serving.

2 tablespoons garlic powder
½ (12 fluid ounce) can or bottle beer
1 (4 pound) whole chicken, giblets discarded, or more to taste
½ cup butter
2 cloves garlic, smashed
3 tablespoons brown sugar

1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spoon garlic powder into beer in the can. Prop the chicken, butt-side down, onto the beer can so the can goes into the cavity. Place the chicken, with the can as a stand, into a large oven-proof skillet.
  • Melt butter in a small saucepan over medium-high heat; add garlic and cook until butter starts bubbling, about 2 minutes. Remove garlic and discard.

1 broiler-fryer chicken
16 ounces apple juice
1 teaspoon orange zest
1 teaspoon poultry seasoning
1 bay leaf
1 teaspoon thyme leaves
1 teaspoon rosemary
1 orange
extra virgin olive oil

Steps:

  • Take a beer or soft drink can and drink it. Wash and fill with 8 ounces of the applejuice.
  • Combine all the spices except the bay leaf and put half of the spices in the can, plus the bay leaf. Save the rest of the spices for basting.
  • Take a large pan 9X13 is fine, and pour 1 cup of applejuice in pan. Slice up an orange and put in pan also.
  • Place chicken on can, then in the pan and put on the grill. If using a gas grill, heat the grill to 350 and then turn the middle burner off, so the chicken will not burn.
  • Baste the chicken every half hour with extra virgen olive oil and the rest of the spice mix.
  • Chicken will be done in 2 hours or until tempreture reaches 165 degrees.

Steps:

  • Combine beer and italian dressing.
  • Place chicken in a one gallon a ziplok bag.
  • Pour marinade over and refrigerate 3-24 hours.
  • Drink 1 can of beer and fill 3/4 full with apple juice.
  • Generously coat chicken inside and out with house seasoning and paprika.
  • Put can up chickens butt.
  • Place on grill, with a drip pan underneath.
  • Grill at 325 to 350 until juices run clear.
  • Time does not include marinating.

1 (12-ounce) bottle light bodied beer
1/2 cup brown sugar, packed
3 tablespoons coarse sea salt
3 tablespoons fresh lemon juice
1 (2 1/2-gallon) plastic re-sealable bag
2 whole chickens
2 (12-ounce) cans favorite beer
2 tablespoons lemon pepper

Steps:

  • For the brine: Combine water, beer, brown sugar, salt, and lemon juice in large mixing bowl. Stir until salt and sugar dissolve. Pour mixture into plastic bag. Add chicken and seal bag, remove as much air as possible. Refrigerate overnight, turning occasionally.
  • For the beer: Pour out 1/4 of beer. Add 1 tablespoon of lemon pepper to each beer.
  • For the chicken: Preheat barbecue grill to 375 degrees F.
  • Remove chickens from refrigerator and from brine and pat dry with a paper towel. Place beer cans on a sheet pan. Take 1 chicken, neck end up, and place the chicken onto the top of the beer can. Repeat with other chicken. Take the sheet pan with chickens and place it on the grill. Cover and grill for 1 hour. Remove from grill, cool for 15 minutes, carve, and serve.

1 (16 ounce) can beer (tall boy)
2 tablespoons salt
1 teaspoon black pepper
3 tablespoons dry rub seasonings (your favorite)
2 tablespoons vegetable oil

Steps:

  • Set up your grill for indirect cooking.
  • On a charcoal grill, this means spreading the coals around the outer edges, but not directly below the food.
  • On a gas grill the outer burners are lit, but not the middle one.
  • Once the grill is covered (which it should always be for indirect grilling) the circulating heat works like a convection oven, so there is no need to turn the food.
  • Remove neck and giblets.
  • Discard.
  • Rinse chicken inside and out; pat dry with paper towels.
  • Rub chicken lightly with oil, then rub inside and out with salt, pepper and dry rub.
  • Set aside.
  • Open beer can and take several gulps (make them big gulps so that the can is half full).
  • Place beer can on a solid surface.
  • Grabbing a chicken leg in each hand, plunk the bird cavity over the beer can.
  • Transfer the bird-on-a-can to your grill and place in the center of the grate, balancing the bird on its two legs and the can like a tripod.
  • Cook chicken over high indirect heat, with the grill cover on for approximately 1 1/4 hours or until the internal temperature registers 165°F in the breast area and 180°F in the thigh, or until the thigh juice runs clear when stabbed with a sharp knife.
  • Remove from grill and let rest for 10 minutes before carving.
