BRIE IN PUFF PASTRY WITH CRANBERRY SAUCE



Brie in Puff Pastry with Cranberry Sauce image

Crimson cranberries provide a little tartness to mellow Brie cheese encased in flaky puff pastry.

1 cup fresh cranberries
6 tablespoons packed brown sugar
1 tablespoon orange juice
1/2 teaspoon grated orange peel
1 tablespoon butter or margarine
1/3 cup sliced almonds
1 sheet frozen puff pastry (from 17.3-oz package), thawed
1 round (14 to 15 oz) Brie cheese
1 egg, beaten
Assorted crackers or sliced fresh fruit

Steps:

  • In 1-quart saucepan, mix cranberries, brown sugar and orange juice. Heat to boiling, stirring frequently; reduce heat. Simmer uncovered 15 to 20 minutes, stirring frequently, until mixture thickens and cranberries are tender. Stir in orange peel; remove from heat.
  • In 8-inch skillet, melt butter over medium heat. Cook almonds in butter, stirring frequently, until golden brown; remove from heat.
  • Heat oven to 400°F. Spray cookie sheet with cooking spray. On lightly floured surface, roll pastry into 16x9-inch rectangle. Cut out one 8 1/2-inch circle and one 7-inch circle from pastry.
  • Place cheese round on center of large circle. Spoon cranberry sauce and almonds over cheese. Bring pastry up and press around side of cheese. Brush top edge of pastry with egg. Place 7-inch circle on top, pressing around edge to seal. Brush top and side of pastry with egg. Cut decorations from remaining pastry and arrange on top; brush with egg. Place on cookie sheet.
  • Bake 20 to 25 minutes or until golden brown. Cool on cookie sheet on wire rack 1 hour before serving. Serve with crackers.

4 1/2 cups fresh cranberries
1 1/2 cups sugar
1 cup walnuts, toasted and chopped
1 cup orange marmalade
2 tablespoons lemon juice

Steps:

  • Preheat oven to 350 degrees F.
  • In a lightly greased 2 qt baking dish, mix cranberries and sugar.
  • Cover dish and bake for 1 hour.
  • Stir in lemon juice, marmalade, and walnuts.
  • Chill until serving time.

1 (12- ounce) bag cranberries, fresh or frozen
1 1/4 cups sugar
1/4 teaspoon ground cinnamon
Pinch nutmeg
1/4 cup bourbon, or more

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the cranberries, sugar, cinnamon, and nutmeg in a small baking dish and cover. Bake for about 55 minutes. Remove the cover and stir to melt any un-dissolved sugar. Return the dish to the oven and bake for about 5 to 10 more minutes, or until the cranberries are soft and surrounded by a syrupy sauce. Remove the dish from the oven and immediately stir in the bourbon, to taste. Let the dish cool to room temperature, then chill for at least hour before serving. The sauce will keep for several weeks in the refrigerator.

2 cups apple cider
3 cups sweetened dried cranberries
1 tablespoon fresh lemon juice
1 teaspoon grated orange peel
1 large navel orange, peeled, chopped (3/4 cup)

Steps:

  • In food processor, place grapes. Cover; process, with on-and-off pulses, until grapes are coarsely chopped, scraping bowl occasionally.
  • In 3-quart saucepan, heat apple cider to boiling over medium-high heat. Boil about 12 minutes or until reduced to 1 cup. Add cranberries and half of the grapes. Cook over medium-high heat 8 minutes. Remove from heat; place cranberry mixture in medium bowl. Stir in lemon juice, orange peel, chopped orange and remaining grapes. Cover and refrigerate at least 1 hour or until well chilled. Serve with a slotted spoon, if desired.

  • In food processor bowl with metal blade, place orange pieces. Cover; process, using quick on-and-off motions, about 15 seconds or until finely chopped. Add cranberries; process until finely chopped.
