MATTHEW'S MALIBU OYSTERS

Steps:
- Preheat a grill to high. Preheat the oven to 500 degrees F.
- Shuck the oysters and set aside in the refrigerator or on ice, keeping them in the shell.
- In a small bowl, combine the mayonnaise, white vinegar, Parmesan, salt and freshly ground black pepper, to taste, cayenne, and white pepper. Stir to combine, and then stir in the fried potato sticks.
- In a small saute pan, add the olive oil and heat over medium-high heat. Add the bell peppers and red onions and saute for 3 minutes, and then add the spinach and allow to wilt. Adjust seasoning, to taste.
- Top each oyster with the spinach mixture, dividing evenly, and then do the same with the mayo mixture. Top with the havarti and place on a baking sheet lined with a layer of rock salt. Roast in the oven until cheese is bubbly and oysters are just warmed through, 5 to 6 minutes.
- Let cool enough to handle, and then serve right away.

- Preheat oven to 350°. Sauté mushrooms in 2 tablespoons butter; set aside. Melt remaining butter. Stir in flour; cook slightly. Add remaining ingredients except bread crumbs. Place in buttered 1 1/2-quart casserole. Top with crumbs. Bake at 350° for 15 minutes. Ladle into individual shells for serving, and add optional toppings, if desired.

Steps:
- Shuck oysters carefully and save the shell.
- Arrange oysters in a half shell on a heat-resistant plate ready for steaming.
- Heat a small frying pan over medium heat.
- Add olive oil, garlic and grated ginger and cook until pale golden, about 1 minute, stirring constantly.
- Add brandy and ignite, shaking pan to mix; cook until alcohol is burned off, about 10 seconds.
- Spoon lemon juice equally on each oyster that are arranged in the half shell.
- Spoon chili sauce equally on each oyster.
- Top each oyster with the chopped green onions.
- Place plate of oysters in a steamer.
- Cover and let steam for 6 to 8 minutes or until oysters are done to your likeness.
- Serve immediately.
- If you buy oysters already shucked, then place them in egg cups that are used for poaching eggs, also use the pan that comes with the egg cup.
- Firstly, spray each egg cup with olive oil or a good cooking oil.
- Place one oyster in each cup.
- Proceed to prepare oysters as noted above.
- Add about 3 cups of water to the steaming pan and bring to boil.
- Place the cups into poaching tray and then into the steamer.
- Cover and let steam for about 8 minutes or until oysters are done to your likeness.

sometimes called "Naked" Rockefeller because of the missing shell, but that is all that is missing because the abundance of Oyster and flavor will have the table singing your PRAISE!!!!!

- The Prep: Prepare your spinach (package instructions) drain well separate and set aside. Place your bacon on a baking pan in a single layer cook 10-12 minutes at 350* remove from oven and place on paper towels to drain then chop in small pieces. Grate your asiago and mozzarella cheese and place in separate bowls. Last but not least place your oysters in a bowl and gently pick through for shell particles.
- in a large skillet add your spinach to 2tbs of melted butter and gently saute 2-3 minutes over med heat, add your chopped bacon & garlic powder and saute another 2 minutes, finally add your grated asiago cheese over top of your spinach mixture sprinkle with salt and pepper and remove from heat.
- Here is the best part. Take a muffin pan and place two of your prepared oysters in each cup, place your spinach mixture over the top, sprinkle lightly with bread crumbs, then add your grated mozzarella over the top of your spinach and sprinkle with remaining bacon pieces. Place in your 400* degree oven for 4-5 minutes (or until cheese on top becomes melty) switch oven to broil and cook until the tops become a golden brown. remove from oven and carefully spoon mixture onto your plate of choice. If you really want to be fancy place over the top of a toasted french bread point.
