MOMMA'S DEEP-DISH MAC 'N' CHEESE RECIPE BY TASTY
My momma makes the best (and easiest!) deep-dish macaroni and cheese. It's like a baked mac 'n' cheese pie with a combination of smoked Gouda, pepper Jack, mozzarella, cottage cheese, and more. It's one of our family's favorite dishes and a holiday must-have.

Steps:
- Preheat the oven to 325°F (160°C). Grease a 7 x 11-inch (17 x 27 cm) baking dish with butter.
- Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until al dente, then drain and return to the warm pot.
- Add butter to the macaroni and stir until melted and the noodles are well coated.
- In a large bowl, stir together the sour cream, cottage cheese, 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, ½ cup mozzarella, the cheese sauce, evaporated milk, salt, black pepper, garlic powder, onion powder, and cayenne until well combined.
- Add the sauce to the pot with noodles and mix until fully coated. Season with more salt and black pepper to taste. Stir the eggs until well incorporated.
- Pour the macaroni into the prepared baking dish and smooth in an even layer.
- In a medium bowl, toss together the remaining 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, and ½ cup mozzarella cheese. Sprinkle the cheese mixture evenly over the noodles.
- Cover the baking dish with foil. Bake for 30 minutes.
- Increase the oven temperature to 425°F (220°C). Remove the foil and bake for another 10 minutes, until the cheese is golden brown. Let cool slightly before serving.

MOMMA'S CREAMY BAKED MACARONI AND CHEESE
Steps:
- Heat oven to 375 degrees F. 1. Cook macaroni in a large pot of salted boiling water until tender but not mushy, about 8-10 minutes. Drain well and pour into a large mixing bowl. 2. Melt on low the Velveeta Cheese and ? cup milk until melted (stir often) 3. Pour Melted Cheese Sauce over Pasta and Stir. Add in butter, ? cups milk, eggs, 1 cup shredded cheeses, salt and pepper. Mix well and transfer to a 2 quart baking dish. Pour the remaining cheese on top. Bake until top crust is golden brown and casserole is bubbling, about 25 minutes. Serve hot .

MAMMA'S MAC AND CHEESE

- Cook the macaroni in boiling water for about 10 minutes until tender but still firm. Drain well and set aside.
- In a deep skillet, melt the butter over medium heat. Add the flour to make a roux and cook, stirring, to remove any lumps. Pour in the milk and cook until the mixture is thick and smooth. Season with salt and pepper. Stir in 2 cups Cheddar and continue to cook until melted. Add the cooked macaroni and stir. Transfer the mixture to a 2-quart casserole dish. Bake in a preheated 350-degree F oven for 20 minutes. Remove the casserole from oven, top with remaining 1/2-cup cheese. Bake for an additional 5 minutes until hot and bubbly.
BIG MAMA'S MAC AND CHEESE

- Mix all the dry ingredienets in medium sized bowl(except bread crumbs!!!) and set aside. In a 4 qt, pot- boil 2 quarts of water. When water comes to a boil, ad 1-tsp of salt and add the dry elbow macaroni. Stir and boil for 8 minutes. Then drain- FULLY. (preheat pot) *under medium heat* In the same pot add the milk, half stick of butter and the dry ingredients. Stir until mixture is well blended. Add half of the grated cheese, mix until you have a sauce, then add in the drained elbow macaroni. Let simmer for 10 minutes. Take off heat, let stand for 30 minutes. (preheat)In a large baking dish, the remainding butter. Let butter melt down, and coat the baking dish. Add the Mac/cheese mixture(at this time fold in the remaining cheddar cheese). Then sprinkle thinly the bread crumbs. AT the corners of the baking dish, take the excess butter with a spoon, and drizzle over the bread crumbs.Spinkle with paprika. Bake in 400 degree oven for 45 minutes Let stand for 30 minutes and serve.
MARK'S MOM'S MACARONI AND CHEESE

- Preheat oven to 400 degrees F.
- In a small saucepan over medium heat, melt butter and then stir in flour; cook for 1 minute or until lightly golden. Slowly add the milk to the flour mixture, stirring until thickened, and then stir in the 3 cheeses until fully melted. Season with salt and pepper, to taste. Add cooked macaroni and stir to coat evenly. Transfer to a shallow baking dish. Bake for about 45 minutes, until brown and crisp on top.
- Remove from oven and preheat the broiler. Sprinkle Parmesan and bread crumbs over top. Return to the oven and broil until cheese is bubbly.

This is a macaroni and cheese I first made 3 years ago when I was in California. When I got back to Texas I made it for my mom. This is now her favorite baked macaroni and cheese. She begs me to make it when I come to visit.

- Preheat oven to 350 degrees F (175 degrees C).

- Cook macaroni in boiling salted water until tender; drain.
- Mix cooked macaroni with butter, stirring well.
- While macaroni is cooking, cook ground beef, garlic and onion in a large skillet until beef is browned and cooked through.
- Drain any accumulated fat.
- Add chili powder, salt, pepper, tomato sauce, diced tomatoes (with their juice), mixing well.
- Bring meat mixture to a boil, then reduce heat, cover and simmer for 10-15 minutes or until macaroni is done.
- Mix meat mixture with cooked buttered macaroni (do NOT add any additional milk as package suggests).
- Sprinkle contents of cheese packets into pasta and stir until blended.

- Make a roux by melting butter in pan and adding flour. Stir constantly and cook until it is the color of caramel candy. It burns easily so stir stir stir!
