GARLIC CHICKEN PASTA - VOILA COPYCAT RECIPE!

A simple pasta dish packed with broccoli, carrots, sweet corn, and a delectable garlic sauce.

Yield 6-8 serving

Number Of Ingredients 13

1 lb of chicken, diced
1/2 box of fusilli pasta
1 1/2 C chicken broth
2 shallots, minced (~2 tbsp)
3 cloves of garlic, minced
2 tbsp olive oil
1 tsp garlic powder
1 C carrot slices (frozen worked fine)
2 C broccoli, frozen or fresh
3/4 C corn (frozen or fresh)
1/2 C parmesan cheese
salt + pepper
2 tbsp cream cheese (optional)

Steps:

  • Prepare the fusilli according to the package instructions.
  • Season the chicken with salt and pepper. Brown the diced chicken in 2 tbsp of olive oil.
  • Turn the heat to medium low and add the garlic and shallots. Stir constantly for 2 minutes.
  • Add the carrot slices and broccoli. Pour in the 1 1/2 C of chicken broth.
  • Season with garlic powder and salt + pepper to taste.
  • Let simmer for 5 minutes or till broccoli reaches desired doneness.
  • Serve with a generous helping of grated parmesan cheese!

Boneless, skinless chicken breasts are browned in butter and simmered in a broth-wine sauce with mushrooms, onions, and garlic in this quick and easy variation of a classic recipe.

2 tablespoons butter or margarine, divided
1 pound boneless, skinless chicken breasts, pounded thin
1 (12 ounce) bag Birds Eye® Recipe Ready Marsala Blend
2 tablespoons all-purpose flour
1 cup Marsala wine
¼ cup beef broth
½ teaspoon dried thyme

Steps:

  • Melt 2 tablespoons butter over medium-high heat and cook chicken, turning once, 6 minutes or until golden brown. Remove chicken; set aside.
  • In same skillet add Recipe Ready Marsala Blend, and cook over medium-high heat, stirring occasionally, 6 minutes or until liquid is almost absorbed. Sprinkle with flour and cook, stirring constantly, 1 minute. Stir in wine and broth; bring to a boil.
  • Reduce heat to low and add back chicken. Simmer 4 minutes or until sauce is thickened and chicken is thoroughly cooked.* Season, with salt and black pepper.

I put this together in 20 minutes and it tasted just like the store bought version. I'm sure it had less the calories but the flavor was the same (or better)! This is quick and tasty! I used penne pasta but any swirls or shells would work just as well.

Number Of Ingredients 10

8 ounces chicken breasts
1 tablespoon garlic powder
1 teaspoon paprika
1/2 cup water
1 cup broccoli
2 -3 carrots
1/2 cup sweet corn
1 cup pasta
2 tablespoons romano cheese
salt and pepper

Steps:

  • Cook chicken breast (uncut) on skillet with enough water to keep it moist through the cooking time. Add garlic, paprika and a pinch of salt to the top. (I like mine with extra seasonings so add to taste.).
  • Cover and let simmer about 5 minutes then repeat on other side.
  • While the chicken is cooking, place pasta to cook and steam broccoli and carrots in the microwave for about 5 minutes.
  • When the water steams away, add corn to the pan at low heat. You may dice the chicken at this step so it won't lose it's moisture.
  • Add veggies and pasta to chicken and corn. Stir and add pepper to taste.
  • Serve with a sprinkle of romano or parmesan cheese. (I used shredded italian blend from the store.).

8 ounces wide egg noodles, cooked according to package directions
¼ cup grated Parmesan cheese

Steps:

  • Melt 2 Tbsp. butter in 12-inch nonstick skillet and cook chicken, turning once, 8 minutes or until golden brown.*
  • Add Recipe Ready Cuts Sliced Carrots and chicken broth. Bring to a boil over high heat. Reduce heat to low and simmer covered 5 minutes.
  • Toss hot cooked noodles in serving bowl with remaining butter and parmesan cheese. Top with chicken and carrots and sprinkle, if desired, with parsley.
