BEST PORK CHOP MARINADE
This is the best pork chop marinade I've ever tasted. I starting throwing things together in a bowl and I'm so glad I wrote it down...try this! Flavor is best when pork is grilled.

- Cut each pork chop from one side through the middle horizontally to within 1/2 inch of the other side. Open the two sides and spread them out like an open book.
- Whisk olive oil, brown sugar, lemon juice, mustard, garlic, thyme, onion powder, Worcestershire sauce, vinegar, mesquite seasoning, parsley, salt, and pepper together in a bowl and pour into a large resealable plastic bag. Add pork chops, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 6 to 8 hours.

TANGY BEEF OR PORK MARINADE
I created this recipe by fooling around with some ingredients. The result is a wonderful tangy marinade with a bit of a kick that I use on steaks, pork chops, roast pork and even deer meat. This is especially good for a tough cut of meat. I frequently use this for london broil and marinate overnight. If I use for a pork roast, I add more maple syrup to make it sweeter and then baste the pork roast with it when it is cooking in the oven. ETA: You can also use Agave nectar in place of honey or maple syrup as a low glycemic option.

Steps:
- Mix red wine vinegar, soy sauce, maple syrup, ginger, mustard.
- Stir well.
- Taste for your own taste preferences.
- It should have a sweet tangy taste.
- Add garlic, sesame oil and optional red pepper flakes.
- Mix well.
- Pour into ziploc bag, add meat and press out all air.
- Marinate in fridge for several hours shaking the contents often as the oil will separate.
- I usually marinate overnight, but a couple hours is fine too.
- Marinating overnight makes the meat extremely tender and flavorful.
- The soy sauce measurement is low for our taste preference as we don't like it's salty taste.
- You can adjust however you wish to your liking.
- I don't measure any of the ingredients and I add alot of ginger and red pepper flakes because we like the additional kick.

- DIJON, ACV & AROMATICSWhisk all the ingredients together adding the thinly sliced shallot and thyme in the end. CUBAN MOJOWhisk all the ingredients together. SOUVLAKI GREEK MARINADECombine the grated onion, minced garlic, olive oil, oregano and lemon juice, add the salt and pepper and mix together (expect a thick-ish consistency). APPLE CIDER & SAGEWhisk all the ingredients and add the sage at the end. CURRY GINGERUse a zester to grate the ginger root. Vigorously whisk together all the ingredients adding the optional kaffir lime leaves at the end. Taste and adjust ingredients to taste. VIETNAMESEIf using dried lemon grass soak in water for 2 hours before making the marinade. Mix all the ingredients together. CHAR SIUStir together all the ingredients. Set aside 3 tbsp to use as a glaze and marinate in the remaining quantity. AL PASTORIn a blender combine the diced onion, pineapple chunks, garlic, chili and achiote, oregano, salt, orange juice and pineapple juice. Pulse until blended. GARLIC, CUMIN & FRESH HERBSWhisk all the ingredients together adding the fresh herbs last. PILSNER & PAPRIKAWhisk all the ingredients together adding the fresh oregano last. PEACHYWhisk the grated peach with the honey and lemon juice first. Add the olive oil, salt and pepper, whisk again and add the thyme. If using bourbon whisk it in last.
TANGY MARINATED PORK CHOPS
This pork chop recipe came with a wok my mom bought in the 80s. The smell of the marinade is enough to make your mouth water.

Steps:
- Mix marinade ingredients in shallow dish.
- Add chops and turn to coat well.
- Cover, set aside for 30 minutes, basting occasionally.
- Place chops on broiling pan, spoon marinade over top.
- Broil chops for 2 minutes.
- Reduce heat to moderate and continue cooking 8 minutes on each side, basting occasionally with marinade.
