Easy Cake Mix Cookies are a fun way to mix and match cake flavors to add-ins! My kids LOVE to make these!

1 (18.25 - ounce) box cake mix
2 eggs
1/2 cup vegetable oil
1 cup add-ins like chocolate chips or M&M's (if adding in sprinkles use 1/2 cup)

Steps:

Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a large bowl mix together cake mix, eggs, and oil until smooth. Alternately you can do this step in the bowl of your stand mixer with the paddle attachment, mixing ingredients on low until combined.
Mix in desired add-ins until evenly incorporated.
Using a medium (2- tablespoon) cookie scoop portion the dough onto the prepared cookie sheet 2- inches apart. Bake for 9-10 minutes, or until lightly golden at the edges.
Allow the cookies to cool on the baking sheet for 3-4 minutes before transferring to a wire rack.

1 package (8 oz) cream cheese, softened
1/2 cup butter, softened
1 cup Betty Crocker™ Rich & Creamy vanilla frosting (from 16-oz container)
1 egg
1 teaspoon vanilla
1 box Betty Crocker™ Super Moist™ yellow cake mix
1 container (1.75 oz) Betty Crocker™ rainbow mix sprinkles (about 1/3 cup)

Steps:

Heat oven to 350°F.
In large bowl, beat cream cheese, softened butter and 1/2 cup of the frosting with electric mixer on medium speed about 1 minute or until well blended; scrape side of bowl. Beat in egg and vanilla until smooth. On low speed, beat in cake mix until blended. Stir in 1/4 cup of the sprinkles. Drop dough by rounded tablespoonfuls 2 inches apart on ungreased cookie sheets.
Bake 11 to 14 minutes or until edges are light golden brown. Cool on cookie sheet 2 minutes; remove to cooling rack. Cool completely, about 20 minutes.
In small microwavable bowl, microwave remaining 1/2 cup frosting uncovered on High 5 to 10 seconds, stirring until melted and smooth. Drizzle with fork over tops of cookies. Add remaining sprinkles over tops. Let stand until frosting is set, about 1 1/2 hours. Store in airtight container at room temperature.

Steps:

1/4 cup Betty Crocker™ Decors rainbow mix candy sprinkles
1/2 cup butter, melted
1 tablespoon milk
1 egg
1 can Betty Crocker™ Rich & Creamy vanilla frosting
1/4 cup Betty Crocker™ Decorating Decors polka dot nonpareils

Steps:

Heat oven to 350°F. In large bowl, stir cake mix, rainbow candy sprinkles, butter, milk and egg until soft batter forms. Scoop 20 tablespoonfuls of batter onto ungreased large cookie sheet.
Bake 8 to 10 minutes or just until cookies are set. Remove from cookie sheet; cool completely.
Spread frosting on bottom of 1 cookie; top with second cookie, bottom side down.
Roll edges of frosting in confetti candy sprinkles. If desired, top each with a birthday candle.
