AUTHENTIC ITALIAN ANISE BISCOTTI



Authentic Italian Anise Biscotti image

I think it's time for another Italian biscotti recipe! This family recipe will provide you with a texture that is slightly spongy on the inside and crispy on the outside. It really doesn't get any easier than this Authentic Italian Anise Biscotti.

2 cups all purpose flour
2 teaspoons baking powder
pinch salt
4 eggs
3/4 cup granulated sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
1½ teaspoon anise extract (OR 2 teaspoons anise seed OR 2 teaspoons Anisette liqueur)

Steps:

  • Preheat oven to 350° F (180° C). Position rack in the center.
  • Grease and flour (or use non-stick spray) three 8.5 x 4.5 inch loaf pans.
  • In a medium bowl, sift together flour, baking powder and salt. Set aside.
  • In a large mixing bowl, or bowl of electric mixer fitted with whisk attachment beat the eggs on medium speed until light and frothy (about 2-3 minutes).
  • Add the sugar gradually and whisk for another minute or so.
  • Add the oil and extracts. Whisk for another minute.
  • Incorporate the flour mixture. Mix until combined.
  • Pour mixture in the 3 prepared loaf pans.
  • Bake for 20-25 minutes or until firm to the touch
  • Remove from loaf pans and let cool for a few minutes.
  • Transfer to cutting board.
  • Using a serrated knife, slice cookies about 1/4 inch thick (or thicker).
  • Place slices flat down on parchment lined baking sheets, and bake for about another 5-8 minutes or longer, depending on your personnel preference and your oven (the longer they stay in the oven, the crispier they get). Make sure to turn the slices over to ensure even toasting.
  • Can be stored at room temperature for a few weeks...if they last that long.

3 eggs
2 teaspoons anise extract
3/4 cup sugar
1 pinch salt
1 1/2 cups all-purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder

Steps:

  • PREHEAT OVEN TO 350 degrees F.
  • Combine the eggs, extract, sugar and salt in a mixingbowl or the bowl of an electric mixer and whip with a hand mixer set at high speed or in a heavy duty mixer fitted with the whip.
  • Continue whipping until the mixture is very light and increased in volume, 6-7 minutes.
  • While the egg mixture is whipping, combine the flour, cornstarch and baking powder and stir to mix.
  • Remove the whipped eggs from the mixer and sift over the flour mixture in three additions, folding it in after each addition with a rubber spatula.
  • The batter will lose most of its air and become rather stiff.
  • Pipe the batter, using a pastry bag with a 3/4-inch opening, but no tube, onto a jelly roll pan lined with parchment paper or buttered wax paper.
  • Pipe two logs about 1 1/2 inches wide and the length ofthe pan.
  • Bake the logs about 20 minutes, until they are well risen and golden.
  • Remove from oven and place logs on a cutting board to cool about 10 minutes.
  • Using a sharp, serrated knife, slice the logs diagonally at 1/2-inch intervals.
  • Place the biscotti cut side down on the pan and return them to the oven for about 10-15 minutes, until they color lightly on the cut surfaces.
  • Cool the biscotti on the pans and store them in a tin betweenlayers of wax paper.

2 1/2 cups all-purpose flour
1 1/4 cups granulated sugar
2 teaspoons baking powder
2 teaspoons anise seeds
1 teaspoon coarse salt
2 cups (11 ounces) almonds, toasted and coarsely chopped
3 large eggs, plus 1 more, beaten, for brushing
Fine sanding sugar, for sprinkling (optional)

Steps:

  • Preheat oven to 350 degrees. In the bowl of an electric mixer, whisk together flour, granulated sugar, baking powder, anise seeds, salt, and nuts. Transfer to mixer fitted with the paddle attachment. Add eggs; beat until a stiff dough comes together, about 3 minutes.
  • Divide dough in half. Form each half into a 12-inch log. (Dough may be sticky; dampen your hands for easier handling.) Transfer to a parchment-lined baking sheet and flatten so each log is 13 inches long, 2 1/4 inches wide, and 3/4 inch thick.
  • Brush logs with beaten egg and sprinkle with sanding sugar. Bake until firm and very pale golden, about 35 minutes. Let cool on pans on a wire rack, 40 minutes. Meanwhile, reduce oven temperature to 300 degrees.
  • Using a serrated knife with a sawing motion, cut logs into slices slightly thicker than 1/4 inch. Arrange, cut-side up, on parchment-lined baking sheets. Bake until dry to touch, about 30 minutes. Let cool completely on pans on racks, 30 minutes. Store in an airtight container up to 1 month.
