1 can flaky Grands biscuits, or any refrigerated biscuits
2 to 3 cups Cheddar cheese or Colby cheese, shredded
1 cup milk
Pre-cooked cubed ham, sliced ham, sausage patties or ground sausage
10 eggs
Salt and pepper, to taste
Cooking spray

Steps:

  • Brown the sausage, or cube ham ready for the casserole. Whisk together eggs, milk, salt and pepper. Stir in the cooked sausage or cubed ham if using along with the cheese. Spray a 9x13-inch baking dish. If using ham slices or sausage patties, lay them across the bottom of the prepared baking dish. Cut canned biscuits into quarters and fold into the egg mixture. Pour the egg mixture into the baking dish and bake at 350°F for 30-40 minutes or until the biscuits are nicely browned and the eggs set. Allow to cool a few minutes before cutting.

3/4 cup apple butter
2 cups shredded sharp cheddar cheese
1-1/2 cups cubed fully cooked ham
1/4 cup minced fresh parsley
6 large eggs
2-1/2 cups 2% milk
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground mustard

Steps:

  • Cut biscuits crosswise in half. Spread apple butter over cut sides of biscuits. Replace tops. Cut each biscuit into quarters; arrange in a single layer in a greased 13x9-in. baking dish. Top with cheese, ham and parsley., In a large bowl, whisk eggs, milk, salt, pepper and mustard. Pour over biscuits. Cover and refrigerate overnight., Preheat oven to 325°. Remove strata from refrigerator while oven heats. Bake, uncovered, until puffed and edges are golden brown, 50-60 minutes. Let stand 10 minutes before cutting.

If you are like me and love a hearty breakfast of fluffy buttermilk biscuits and a side of scrambled eggs all smothered with sausage gravy, then this recipe is for you. I was looking for a breakfast casserole recipe to make as a treat for the staff at work and was very lucky to find this one on Pinterest. It is from the Just A Pinch Recipes website and was added by Phyllis Lawson. Super easy to throw together and is the epitome of comfort food.

12 ounces of buttermilk biscuit dough
6 eggs
1 (2 3/4 ounce) package peppered gravy mix (makes 2 cups)
1 lb sausage, any flavor (I prefer sage or zesty Italian)
1 cup cheese, shredded (I like to use cheddar)
1/2 cup milk
salt and pepper

Steps:

  • Preheat oven to 350°F Take a 13 x 9 pan and spray with cooking spray (or smear with butter). Cut biscuit dough into 1" pieces and place evenly in the bottom of the pan.
  • Brown the sausage and drain. Scatter the browned sausage over the biscuit pieces, then top with shredded cheese.
  • Whisk the eggs and milk with a pinch of salt and pepper, then pour over the pan.
  • Make gravy according to instructions on package and pour over the pan. Bake for 30 - 45 minutes, depending on how hot your oven runs.
  • Cut and serve. It's delicious warm right out of the oven!

Steps:

  • Cut each biscuit into 8 pieces. Set aside.

1 (16 ounce) refrigerated breakfast biscuits 10 count (I used the Pillsbury flakey kind) ***DO NOT COOK FIRST***
4 scallions (green onions, spring onions, whatever you prefer to call them)
2 cups extra sharp cheddar cheese, shredded
If you're into the meats - cooked center cut bacon or cooked sausage
11 ×17 pan, sprayed with cooking spray (Note: I think a 9×13 works better, but it might need to bake a little longer)

Steps:

  • Mix your eggs and milk in a large bowl. Cut each biscuit (I'm all about scissors in the kitchen) into fours and add it to the bowl. I like to do this before I cook the bacon or cut up the scallions - give the biscuits some time to really soak in the eggs. Cut up your scallions, shred your cheese, cook and break up your bacon (or sausage). Add everything to the bowl. Mix it all up and pour into your pan. Bake at 350 for 25-30 minutes .. closer to 30 so it isn't runny *** BLC Hint/Tip *** - if you want to make this the night before leave it in the mixing bowl in the fridge covered with saran. In the morning, give it a good stir then pour into prepared baking dish and proceed to bake as directed!!!

1 cup grated Cheddar (120 grams)
2 tablespoons finely chopped chives
1 1/4 cups plus 2 tablespoons buttermilk (310 milliliters plus 30 milliliters)
7 to 9 breakfast sausage links, casings removed (about 200 grams)
Cooking spray
9 eggs
1/4 cup milk (60 milliliters)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup grated Cheddar (45 grams)
2 tablespoons finely chopped dill
1/2 cup halved cherry tomatoes (98 grams)

Steps:

  • For the biscuits: Preheat your oven to 425 degrees F (220 degrees C) and line a baking sheet with parchment paper.
  • Stir together the flour, baking powder, garlic powder and salt in a large bowl. Add the butter and snap and rub it in until the butter is pea sized. Stir in the Cheddar and chives, then make a well in the center and add in 1 1/4 cups of the buttermilk. Stir until just combined.
  • Using a large tablespoon or a 1/4 cup ice cream scoop, scoop 9 biscuits onto your prepared baking sheet. Place the biscuits in the fridge while you prepare the eggs.
  • For the eggs: Place a nonstick skillet over medium heat and add the sausage meat. Cook, breaking it apart with a wooden spoon, until golden brown and cooked through, 8 to 10 minutes. Remove the sausage from the pan and set aside.
  • Lightly grease a 9-inch square baking pan with cooking spray. Beat the eggs and milk together in a large bowl. Season with the salt and pepper. Add the Cheddar and dill and pour into the prepared pan. Scatter over the cooked sausage and tomatoes.
  • Retrieve the biscuits from the fridge and brush with the remaining 2 tablespoons of buttermilk. Bake the biscuits and the eggs for 15 minutes, then remove the eggs from the oven and set aside to cool slightly. Rotate the biscuits and continue baking until golden brown, 5 to 10 minutes.
  • Cut the eggs into 9 equal pieces. If serving right away, split the biscuits in half and sandwich in the eggs. If prepping ahead, transfer the eggs to a resealable container and place in the fridge. Cool the biscuits to room temperature and transfer to a resealable container or zip top bag and place in the fridge. Both can be stored for up to four days. To reheat, simply reheat in the microwave. Biscuits can also be split and lightly toasted in the toaster.

Add the 6 Tablespoons of cubed butter and cut into the dry ingredients with a pastry cutter or pulse several times in the processor. Cut/pulse until coarse crumbs form. Add the milk, then stir/pulse until the dough comes together. Dough will be very shaggy and a little wet. If it’s too dry, add another Tablespoon of milk. With floured hands, form the biscuit dough into about 20 1.5 Tablespoon size balls. They don’t have to be perfect or neat, see my photo above as an example. Arrange on top of the eggs.
  • Brush the biscuits with 2 Tablespoons of melted butter and top with a sprinkle of fresh ground pepper, extra parsley, and extra cheese, if desired.
