BISCUITS AND GRAVY CASSEROLE
I got this recipe at a church potluck. All the flavors blend really well. I've made it for breakfast, lunch, and dinner. So far every time I've served it, I haven't had any leftovers. Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Line the bottom of the prepared baking dish with biscuits.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Scatter sausage over biscuit layer and top with 1 cup Cheddar cheese.
- Whisk eggs, milk, salt, and pepper together in a bowl and pour over cheese layer.
- Mix water and gravy mix together in a saucepan; bring to a boil. Reduce heat and simmer until gravy is thickened, 1 to 2 minutes, adding more water for a thinner gravy. Pour gravy over egg layer. Sprinkle remaining 1/2 cup Cheddar cheese over casserole.
- Bake in the preheated oven until egg is fluffy and cheese is bubbling, about 30 minutes.

If you are like me and love a hearty breakfast of fluffy buttermilk biscuits and a side of scrambled eggs all smothered with sausage gravy, then this recipe is for you. I was looking for a breakfast casserole recipe to make as a treat for the staff at work and was very lucky to find this one on Pinterest. It is from the Just A Pinch Recipes website and was added by Phyllis Lawson. Super easy to throw together and is the epitome of comfort food.

Steps:
- Preheat oven to 350°F Take a 13 x 9 pan and spray with cooking spray (or smear with butter). Cut biscuit dough into 1" pieces and place evenly in the bottom of the pan.
- Brown the sausage and drain. Scatter the browned sausage over the biscuit pieces, then top with shredded cheese.
- Whisk the eggs and milk with a pinch of salt and pepper, then pour over the pan.
- Make gravy according to instructions on package and pour over the pan. Bake for 30 - 45 minutes, depending on how hot your oven runs.
- Cut and serve. It's delicious warm right out of the oven!

- Preheat the oven to 350 degrees F (175 degrees C).
- Place gravy mix in a medium saucepan; gradually whisk in water. Cook over medium heat, stirring frequently, until gravy comes to a boil. Reduce heat and simmer for 1 minute; gravy will thicken upon standing.
- At the same time, heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Place biscuits in the bottom of a 9x13-inch baking dish. Pour eggs over top, then layer with sausage. Pour gravy over sausage and top with shredded Cheddar cheese.
- Bake until eggs are set and cheese is melted, about 30 minutes.

MAKE-AHEAD BISCUITS & GRAVY BAKE

- In a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Remove with a slotted spoon; discard drippings, reserving 1/4 cup in pan. Stir in flour until blended; cook and stir until golden brown (do not burn), 1-2 minutes. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Stir in sausage, pepper, paprika and chili powder. Pour into a greased 13x9-in. baking dish. Cool completely., Meanwhile, in a large bowl, mix baking mix, sour cream and melted butter until moistened. - In a bowl, mix the eggs, milk, pepper, and salt. Set aside.
- For the gravy: melt the butter in a saucepan, over medium heat. Stir in flour, salt, and pepper, and slowly add the 2 cups of milk.
- Increase to medium-high, bring to a simmer, stirring until gravy is thickened.

- Preheat oven to 350°F. Place sausage and onion in a large skillet over medium, and cook, stirring often, until sausage crumbles and is no longer pink and onion is translucent, 6 to 8 minutes. Transfer mixture to a plate lined with paper towels to drain. Wipe skillet clean.
- Reduce heat to low, and add 1/4 cup of the butter to skillet; cook, whisking often, until melted. Whisk in flour until smooth. Cook, whisking constantly, 1 minute. Gradually whisk in milk; increase heat to medium, and cook, whisking constantly, until thickened and bubbly, 5 to 6 minutes. Whisk in shredded cheese, and cook, whisking often, until cheese is melted and mixture is smooth, 30 to 40 seconds. Stir in sausage mixture, salt, and pepper.
- Transfer mixture to a lightly greased (with cooking spray) 13- x 9-inch baking dish. Arrange biscuits on top of sausage mixture. Bake in preheated oven until biscuits are golden brown and gravy is bubbly, 30 to 35 minutes. Microwave remaining 1 tablespoon butter in a small microwavable bowl on HIGH until melted, about 20 seconds. Remove casserole from oven; brush biscuits with melted butter, and sprinkle with chives. Let stand 10 minutes before serving.

- Heat oven to 350°F. Grease 13x9-inch (3-quart) baking dish with shortening or cooking spray.
- In 10-inch skillet, cook sausage until browned. Transfer cooked sausage to plate lined with napkins. Drain all but 1 tablespoon of drippings from skillet.
- In same skillet, melt butter over medium heat. Stir in flour (mixture will be thick). Slowly add 2 cups milk to skillet, beating constantly with whisk. Once all of the milk has been incorporated, increase heat to medium-high. Cook about 5 minutes or until thickened, beating constantly with whisk. Stir in the cooked sausage, 1 teaspoon salt and 1/2 teaspoon pepper; remove from heat.
- In medium bowl, stir Bisquick mix and 1/2 cup milk. Drop dough by spoonfuls into baking dish. Sprinkle with half of the Cheddar cheese.
- In large bowl, mix eggs, 1/4 cup milk, 1 teaspoon salt and 1/4 teaspoon pepper. Pour over biscuits. Spoon the sausage gravy over the top, and cover with remaining cheese.
- Bake 40 to 45 minutes or until browned and bubbling. Garnish with fresh chives. Serve immediately.

- Grease a medium casserole dish (I used a 10-inch round casserole dish). Preheat oven to 400 degrees.
- Cut biscuits into quarters. Layer half of the biscuit quarters in the bottom of your greased casserole dish. Bake for 10 minutes.
- While biscuits are baking, prepare the sausage and gravy. In a large skillet brown the sausage over medium-high heat until fully cooked. Sprinkle with flour and stir for 3-5 minutes until sausage absorbs the flour. Add milk, salt and pepper, and stir until mixture comes to a boil. Taste, add salt or pepper as needed to taste. (Add a bit of milk to thin the gravy if it's too thick at this point - it should be runny and not too thick)
- Pour sausage gravy over baked biscuits. Top with remaining raw biscuit quarters and bake for 20-25 minutes longer until top layer of biscuits are golden and flaky. Serve immediately.
