I got this recipe at a church potluck. All the flavors blend really well. I've made it for breakfast, lunch, and dinner. So far every time I've served it, I haven't had any leftovers. Enjoy!

1 (10 ounce) can refrigerated biscuit dough (such as Pillsbury Grands!®)
1 (1 pound) bulk pork sausage
1 ½ cups shredded Cheddar cheese, divided
6 eggs
½ cup milk
salt and ground black pepper to taste
1 ½ cups cold water, or more as needed
1 (1.5 ounce) package pork gravy mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Line the bottom of the prepared baking dish with biscuits.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Scatter sausage over biscuit layer and top with 1 cup Cheddar cheese.
  • Whisk eggs, milk, salt, and pepper together in a bowl and pour over cheese layer.
  • Mix water and gravy mix together in a saucepan; bring to a boil. Reduce heat and simmer until gravy is thickened, 1 to 2 minutes, adding more water for a thinner gravy. Pour gravy over egg layer. Sprinkle remaining 1/2 cup Cheddar cheese over casserole.
  • Bake in the preheated oven until egg is fluffy and cheese is bubbling, about 30 minutes.

If you are like me and love a hearty breakfast of fluffy buttermilk biscuits and a side of scrambled eggs all smothered with sausage gravy, then this recipe is for you. I was looking for a breakfast casserole recipe to make as a treat for the staff at work and was very lucky to find this one on Pinterest. It is from the Just A Pinch Recipes website and was added by Phyllis Lawson. Super easy to throw together and is the epitome of comfort food.

12 ounces of buttermilk biscuit dough
6 eggs
1 (2 3/4 ounce) package peppered gravy mix (makes 2 cups)
1 lb sausage, any flavor (I prefer sage or zesty Italian)
1 cup cheese, shredded (I like to use cheddar)
1/2 cup milk
salt and pepper

Steps:

  • Preheat oven to 350°F Take a 13 x 9 pan and spray with cooking spray (or smear with butter). Cut biscuit dough into 1" pieces and place evenly in the bottom of the pan.
  • Brown the sausage and drain. Scatter the browned sausage over the biscuit pieces, then top with shredded cheese.
  • Whisk the eggs and milk with a pinch of salt and pepper, then pour over the pan.
  • Make gravy according to instructions on package and pour over the pan. Bake for 30 - 45 minutes, depending on how hot your oven runs.
  • Cut and serve. It's delicious warm right out of the oven!

2 cups cold water
1 pound sausage
6 large eggs, beaten
1 (16.3 ounce) can buttermilk biscuit dough, separated
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place gravy mix in a medium saucepan; gradually whisk in water. Cook over medium heat, stirring frequently, until gravy comes to a boil. Reduce heat and simmer for 1 minute; gravy will thicken upon standing.
  • At the same time, heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.

1 pound bulk pork sausage
1/4 cup all-purpose flour
3 cups 2% milk
1-1/2 teaspoons pepper
1 teaspoon paprika
1/4 teaspoon chili powder
2-1/4 cups biscuit/baking mix
1/2 cup sour cream
1/4 cup butter, melted

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Remove with a slotted spoon; discard drippings, reserving 1/4 cup in pan. Stir in flour until blended; cook and stir until golden brown (do not burn), 1-2 minutes. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Stir in sausage, pepper, paprika and chili powder. Pour into a greased 13x9-in. baking dish. Steps:

  • Cut each biscuit into 8 pieces. Set aside.

1 (1-lb.) pkg. ground pork sausage
1/2 cup chopped yellow onion (from 1 small onion)
1/4 cup plus 1 Tbsp. unsalted butter, divided
1/3 cup (about 1 1/2 oz.) all-purpose flour
3 cups whole milk
6 ounces pepper Jack cheese, shredded (about 1 1/2 cups)
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
Cooking spray
1 (25-oz.) pkg. frozen Southern-style biscuits (12 count) (such as Pillsbury Grands)
2 tablespoons minced fresh chives

Steps:

  • Preheat oven to 350°F. Place sausage and onion in a large skillet over medium, and cook, stirring often, until sausage crumbles and is no longer pink and onion is translucent, 6 to 8 minutes. Transfer mixture to a plate lined with paper towels to drain. Wipe skillet clean.
  • Reduce heat to low, and add 1/4 cup of the butter to skillet; cook, whisking often, until melted. Whisk in flour until smooth. Cook, whisking constantly, 1 minute. Gradually whisk in milk; increase heat to medium, and cook, whisking constantly, until thickened and bubbly, 5 to 6 minutes. Whisk in shredded cheese, and cook, whisking often, until cheese is melted and mixture is smooth, 30 to 40 seconds. Stir in sausage mixture, salt, and pepper.
  • Transfer mixture to a lightly greased (with cooking spray) 13- x 9-inch baking dish. Arrange biscuits on top of sausage mixture. Bake in preheated oven until biscuits are golden brown and gravy is bubbly, 30 to 35 minutes. Microwave remaining 1 tablespoon butter in a small microwavable bowl on HIGH until melted, about 20 seconds. Remove casserole from oven; brush biscuits with melted butter, and sprinkle with chives. 2 tablespoons butter
1/4 cup all-purpose flour
2 cups milk
1 teaspoon salt

2 1/4 cups Original Bisquick™ baking mix
1/2 cup milk
1 cup shredded sharp Cheddar cheese (4 oz)
6 eggs
1/4 cup milk
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chopped fresh chives, if desired

Steps:

  • Heat oven to 350°F. Grease 13x9-inch (3-quart) baking dish with shortening or cooking spray.
  • In 10-inch skillet, cook sausage until browned. Transfer cooked sausage to plate lined with napkins. Drain all but 1 tablespoon of drippings from skillet.
  • In same skillet, melt butter over medium heat. Stir in flour (mixture will be thick). Slowly add 2 cups milk to skillet, beating constantly with whisk. Once all of the milk has been incorporated, increase heat to medium-high. Cook about 5 minutes or until thickened, beating constantly with whisk. Stir in the cooked sausage, 1 teaspoon salt and 1/2 teaspoon pepper; remove from heat.
  • In medium bowl, stir Bisquick mix and 1/2 cup milk. Drop dough by spoonfuls into baking dish. Sprinkle with half of the Cheddar cheese.
  • In large bowl, mix eggs, 1/4 cup milk, 1 teaspoon salt and 1/4 teaspoon pepper. Pour over biscuits. Spoon the sausage gravy over the top, and cover with remaining cheese.
  • Bake 40 to 45 minutes or until browned and bubbling. Garnish with fresh chives. Serve immediately.
