BECKY'S HEALTHIER HAM AND CHEESE QUICHE
I have been on a permanent quest to find the perfect quiche recipe. As a self-professed breakfast food, cheese, and egg lover, quiche represents to me all that is right and good in a culinary concoction. Traditionally quiche is not a healthy option, what with all the cream and cheese that typically goes into it. I have literally experimented with different versions of a healthier quiche for years, but a couple of weeks ago I stumbled upon the perfect mixture, and I am pleased to share it here with all of you.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Unroll pie crust and press into an 8-inch pie dish.
- Heat olive oil in a skillet over medium heat; cook and stir green onions until wilted and beginning to brown, 2 to 3 minutes. Remove from heat. Spread ham over prepared pie crust and top with green onions.
- Whisk egg substitute, evaporated milk, and mozzarella cheese in a bowl. Pour over ham mixture. Sprinkle with Parmesan cheese and garnish with chives.
- Bake in preheated oven for 20 minutes. Increase heat to 350 degrees F (175 degrees C) and continue baking until quiche is browned, 15 to 20 minutes. Remove from oven and allow quiche to rest until eggs are set, about 30 minutes more.

- In small bowl, mix flour, cornmeal and 1/8 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, tossing with fork until all flour is moistened and pastry cleans side of bowl.
- Gather pastry into a ball. Divide in half. Press firmly against bottom and side of two 10-ounce microwavable quiche dishes or custard cups. Prick bottoms and sides thoroughly with fork. Sprinkle cheese and onion in shells.
- Place dishes on upside-down microwavable saucers in microwave oven. Microwave uncovered on High 2 minutes; rotate dishes 1/2 turn. Prick any bubbles with fork. Microwave 1 minute 30 seconds to 3 minutes longer or until pastry appears dry and flaky.
- In 2-cup microwavable measuring cup, beat eggs, milk, 1/4 teaspoon salt and the pepper sauce with fork. Stir in ham. Microwave uncovered on Medium-High (70%) 3 to 4 minutes, stirring after 1 minute, until warm. Stir; pour into shells. Place filled shells on upside-down microwavable saucers in microwave oven.
- Microwave uncovered on Medium-High 4 to 5 minutes, rotating dishes 1/2 turn after 2 minutes, until center is almost set. Cover loosely and let stand on flat, heatproof surface 3 minutes.

- Spray large pie pan with Pam.
- Layer fried and crumbled bacon, spinach, red onion and cheeses. (You may also substitute with the Mexican blend of shredded cheese).
- If making ahead, cover and refrigerate.
- When ready to bake: prepare liquid mixture in a separate bowl by beating milk, eggs, Bisquick and pepper just until mixed well.
- Pour liquid mixture over layered ingredients.
- Bake at 400 degrees Fahrenheit, uncovered, for approx 45 to 60 minutes. If getting too brown, cover with foil until done.

- Preheat oven to 400°. Unroll pie crusts into two 9-in. pie plates; flute edges. Line unpricked pie crusts with a double thickness of heavy-duty foil. Fill with pie weights, dried beans or uncooked rice. Bake until light golden brown, 10-12 minutes. - Press pie pasty into the bottom of a 9-inch pie plate.

- Heat oven to 400°F
- Spray bottoms and sides of 12 regular-size muffin cups with cooking spray. (Spray will work better than greasing or using paper muffin liners.).
- Beat eggs slightly in medium bowl with fork.
- Stir in Bisquick mix, milk and oil just until moistened.
- Stir in 3/4 cup of the cheese and the ham.
- Divide batter evenly among muffin cups.
- Sprinkle remaining 1/4 cup cheese evenly over tops of muffins.
- Bake 18 to 20 minutes or until light golden brown.
