Luscious Lemon-Blueberry Coffee Cake image

All natural yogurt is the secret to moist and delicious homemade coffee cake loaded with fresh blueberries.

1 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup Yoplait® All Natural Fat Free plain yogurt (from 2-lb container)
3 tablespoons canola oil
2 teaspoons grated lemon peel
2 tablespoons lemon juice
1 egg
1 1/2 cups fresh or frozen (thawed and drained) blueberries
1/3 cup sliced almonds
1/2 cup powdered sugar
2 to 2 1/2 teaspoons milk
1/4 teaspoon vanilla

Steps:

  • Heat oven to 375°F. Spray or grease 9-inch springform pan or 9-inch square pan.
  • In medium bowl, stir together flour, sugar, baking powder, soda and salt. In large bowl, beat yogurt, oil, lemon peel, lemon juice and egg with whisk. Stir flour mixture into yogurt mixture just until blended. Fold in blueberries. Spread batter in pan. Sprinkle with almonds.
  • Bake 35 to 40 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes; remove side of springform pan.
  • In small bowl, mix glaze ingredients until smooth and thin enough to drizzle. Drizzle over warm cake.

1 large egg, room temperature, lightly beaten
1/3 cup sugar
1 teaspoon grated lemon zest
2/3 cup whole milk
2-1/4 cups biscuit/baking mix
1 cup fresh or frozen blueberries
3/4 cup confectioners' sugar
4 teaspoons lemon juice

Steps:

  • In a bowl, combine the egg, sugar, lemon zest and milk; mix well. Stir in the biscuit mix just until moistened. Fold in blueberries. Pour into a greased 9-in. round baking pan., Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. cool for 10 minutes before removing from pan to a wire rack. , Combine the confectioners' sugar and lemon juice until smooth; drizzle over warm cake. 1/4 cup Original Bisquick™ mix
2/3 cup powdered sugar
3 to 4 teaspoons lemon juice

Steps:

  • Heat oven to 400°F. Grease 9-inch round cake pan. In medium bowl, beat egg slightly. Stir in 2 cups Bisquick mix, the granulated sugar, milk and lemon peel until blended.
  • In small bowl, toss blueberries and 1/4 cup Bisquick mix. Gently stir into batter. Spread in pan.
  • Bake 20 to 25 minutes or until golden brown. Cool 10 minutes.
  • In small bowl, mix powdered sugar and lemon juice until smooth. Drizzle over coffee cake. Serve warm.

2 cups baking mix (such as Bisquick®)
⅔ cup milk
2 tablespoons white sugar
1 egg
¼ teaspoon ground cinnamon
⅔ cup baking mix (such as Bisquick®)
⅔ cup brown sugar
4 tablespoons butter
½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a deep 9-inch pie pan.
  • Combine baking mix, milk, sugar, egg, and cinnamon in bowl; mix well. Spread into the bottom of the prepared pan.
  • Mix baking mix, brown sugar, butter, and cinnamon together in a separate bowl using a fork or pastry blender until crumbly. Spread topping mix over cake batter; drag a butter knife across the top as if making a tic-tac-toe board several times.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes.

  • Sir in the biscuit mix just until moistened.
