I love cinnamon rolls, but working with yeast can be scary. These cookies give you the taste of a cinnamon roll in cookie form-no yeast required! They look like flattened cinnamon rolls and feel special enough to serve around the holidays. -Erin Raatjes, New Lenox, Illinois

Number Of Ingredients 21

1 cup unsalted butter, softened
3/4 cup confectioners' sugar
1/3 cup sugar
1-1/2 teaspoons grated orange zest
1/2 teaspoon salt
1 large egg, room temperature
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
FILLING:
5 tablespoons unsalted butter, softened
1/4 cup packed brown sugar
1-1/2 teaspoons light corn syrup
1/2 teaspoon vanilla extract
2 tablespoons all-purpose flour
1 tablespoon ground cinnamon
1/2 teaspoon salt
GLAZE:
1 cup confectioners' sugar
1/4 cup light corn syrup
2 teaspoons vanilla extract
1 to 2 teaspoons water

Steps:

  • Cream first 5 ingredients until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Gradually beat in flour. On a baking sheet, roll dough between 2 sheets of waxed paper into a 12-in. square. Refrigerate 30 minutes., For filling, beat butter, brown sugar, corn syrup and vanilla. Add flour, cinnamon and salt; mix well. Remove top sheet of waxed paper; spread filling over dough to within 1/4 in. of edges. Using waxed paper, roll up tightly jelly-roll style, removing paper as you roll. Cover and freeze until firm, about 30 minutes., Preheat oven to 375°. Uncover and cut dough crosswise into 1/4-in. slices. Place 2 in. apart on parchment-lined baking sheets. Bake until edges are lightly browned, 10-12 minutes. Cool on pans 5 minutes. Remove to wire racks to cool completely., For glaze, mix confectioners' sugar, corn syrup, vanilla and enough water to reach desired consistency. Spread or drizzle over cookies. Let stand at room temperature until set.

These cinnamon roll cookies are a new twist to the cinnamony snickerdoodle cookie.

2 ¾ cups all-purpose flour, plus more for rolling out dough
1 teaspoon baking soda
½ teaspoon fine salt
½ cup butter, softened
½ cup shortening
1 ½ cups white sugar
2 large eggs
2 tablespoons ground cinnamon, or as desired

Steps:

  • Sift together all-purpose flour, baking soda, and salt in a bowl.
  • Beat together butter and shortening using an electric mixer in another bowl until combined; add sugar and continue beating until light and fluffy, about 5 minutes. Pour in eggs, one at a time, beating well after each addition. Pour in flour mixture and blend until batter is smooth.
  • Dust a work surface with flour and roll out cookie dough with a floured rolling pin into a 1/4-inch thick rectangle. Sprinkle cinnamon generously over the dough. Roll up the dough gently into a log starting on one of the long sides. Wrap tightly in plastic wrap and refrigerate for 2 to 3 hours.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Unwrap the dough log and carefully slice into 1/4-inch pieces without smashing down the cookie. Place on an ungreased baking sheet.
  • Bake in the preheated oven until lightly golden around the edges, about 12 minutes.

Easy and Incredible Cinnamon Roll Bites image

We all know the best part of a cinnamon roll is the soft inside, and with these minis, every bite is the best! They're deliciously buttery and crisp on the edges. Better than monkey bread and even better than plain cinnamon rolls. Keep canned biscuits on hand so you can make these for an incredible treat on the weekend. Serve with a piping hot cup of coffee.

1 (16.3 ounce) package refrigerated sweet Hawaiian biscuit dough (such as Pillsbury Grands!®)
4 tablespoons unsalted butter, melted
⅓ cup white sugar
1 tablespoon ground cinnamon
1 cup powdered sugar
2 tablespoons milk
2 tablespoons unsalted butter, softened
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly coat an 8- or 9-inch square baking pan with cooking spray.
  • Cut each biscuit into quarters and place in a 1-gallon resealable bag. Add sugar and cinnamon and seal the bag. Shake the bag until biscuits are well coated, then empty the bag onto the prepared pan. Drizzle melted butter over top.
  • Bake in the preheated oven until golden brown, about 22 minutes.
  • While the cinnamon roll bites are baking, prepare frosting. Combine powdered sugar, milk, softened butter, and vanilla in a bowl and stir until smooth.
  • Remove cinnamon roll bites from the oven and spread frosting over top immediately.
  • Serve warm.

2 teaspoons grated orange peel
4-1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon active dry yeast
1/2 teaspoon salt
1 cup confectioners' sugar
2 tablespoons 2% milk
1 teaspoon vanilla extract

Steps:

  • In a small bowl, mix brown sugar and cinnamon until blended. In a large bowl, cream butter, cream cheese and sugar until light and fluffy. Beat in eggs, vanilla and orange peel. In another bowl, whisk flour, baking powder, yeast and salt; gradually beat into creamed mixture. 2. Divide dough into four portions. On a lightly floured surface, roll each into an 8x6-in. rectangle; sprinkle with about 2 tablespoons brown sugar mixture. Roll up tightly jelly-roll style, starting with a long side. Wrap in plastic wrap. Refrigerate 1 hour or until firm. 3. Preheat oven to 350°. Cut dough crosswise into 3/8-in. slices. Place 1 in. apart on greased baking sheets. Bake 8-10 minutes or until bottoms are light brown. Remove from pans to wire racks to cool completely. 4. In a small bowl, whisk glaze ingredients. Dip tops of cookies in glaze. Let stand until set.
