Black and White Marble Crumb Muffins combine chocolate and vanilla in a simple muffin. Great for breakfast or an afternoon snack!

1 & 3/4 (210g) cups all-purpose flour
3/4 (150g) cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (122g) plain or vanilla yogurt
1/4 cup (56g) unsalted butter, melted and slightly cooled
2 large eggs, lightly beaten
1/2 teaspoon vanilla (You can omit if using vanilla yogurt.)
2 tablespoons (10g) cocoa powder
1/3 cup (40g) all-purpose flour
1/4 (50g) cup packed light brown sugar
1 tablespoon (5g) unsweetened cocoa powder
1/8 teaspoon ground cinnamon
pinch of salt
2 tablespoons (28g) unsalted butter, cold and cut into small cubes

Steps:

  • Combine the flour, brown sugar, cocoa powder, cinnamon and salt.
  • Add the butter, and mix with a fork, a pastry blender, or your fingers until the mixture forms crumbs. Set aside. (Refrigerate if you have a warm kitchen.)
  • Preheat oven to 375°F. Grease or line a standard 12-cup muffin pan.
  • Combine the flour, sugar, baking powder, baking soda, and salt. Make a well in the center of the mixture.
  • In a separate bowl, combine the yogurt, butter, eggs, and vanilla (if using). Add to the well in the flour mixture, and mix just until combined.
  • Transfer half of the batter to a separate bowl. Add the cocoa powder to one half of the batter, and mix until combined.
  • Alternate dropping the two doughs by teaspoonfuls into the prepared muffin cups. (Each will be about 2/3 full when you're done.) Top with crumb topping.
  • Bake the muffins 18 to 20 minutes, or until a pick inserted into the center comes out clean. Cool in the pan 10 minutes before transferring the muffins to a wire rack to cool completely.

Chocolate and vanilla marble cupcakes with chocolate and vanilla swirl frosting on top! These cupcakes are perfect for when you can't decide between a chocolate or vanilla treat!

1 and 2/3 cups (209g) all-purpose flour (spoon & leveled)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (115g) unsalted butter, melted
1 cup (200g) granulated sugar
1 large egg, room temperature
1/4 cup (60g) yogurt*
3/4 cup + 1 Tablespoon (195ml) milk, divided*
2 teaspoons pure vanilla extract
2 Tablespoons (10g) unsweetened natural cocoa powder
1 and 3/4 cups (210g) confectioners' sugar
1/4 cup (21g) unsweetened natural cocoa powder
1/2 cup (115g) unsalted butter, softened to room temperature
2 Tablespoons (30ml) heavy cream or half-and-half*
1 teaspoon pure vanilla extract
salt, to taste
1/2 cup (115g) unsalted butter, softened to room temperature
1 and 3/4 cups (210g) confectioners' sugar
2 Tablespoons (30ml) heavy cream or half-and-half*
1 teaspoon pure vanilla extract
salt, to taste

Steps:

  • Preheat oven to 350°F (177°C). Line muffin pan with 12 cupcake liners and an additional pan with 2 liners. This recipe makes about 14 cupcakes. Set them aside.
  • in a medium bowl, mix together flour, baking powder, baking soda, and salt. Set aside. In a large microwave-safe bowl, melt butter in the microwave. Whisk in sugar - mixture will be gritty. Chill in the refrigerator for 1 minute. Stir in egg, yogurt, 3/4 cup milk, and vanilla extract until combined. Slowly mix in dry ingredients until no lumps remain. Batter will be thick. Transfer 3/4 cup of batter to another medium bowl. Mix in cocoa powder and 1 Tablespoon milk until combined. Chocolate batter will be thick.
  • Spoon 1 Tablespoon of vanilla batter into each cupcake liner. Top with a spoonful of chocolate batter, then more vanilla batter on top until all batters have been used up. At this point you may swirl the batters together very lightly using a toothpick or leave them as is, as I explained in the post. Bake the cupcakes for 20-24 minutes or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool completely before frosting.
  • sift together the confectioners' sugar and cocoa powder to assure there are no lumps. Set aside. With a handheld or stand mixer fitted with a paddle attachment, beat the butter on medium speed until creamy - about 2 minutes. Gradually add the sifted sugar/cocoa powder alternately with the heavy cream and vanilla. Beat on low speed after each addition. Once all added, beat on high speed until creamy and combined for at least 2 minutes. Add a pinch of salt if frosting is too sweet.
  • With a handheld or stand mixer fitted with a paddle attachment, beat the butter on medium speed until creamy - about 2 minutes. Add confectioners' sugar, cream, and vanilla extract with the mixer running on low. Increase to high speed and beat for 3 full minutes. Add more confectioners' sugar if frosting is too thin or more cream if frosting is too thick. Add a pinch of salt if frosting is too sweet.
  • Frost cooled cupcakes with a knife or with a piping bag/tip. If you'd like to just make 1 kind of frosting and not both, make sure you double the frosting recipe of your choice to make sure there is enough for all cupcakes. To swirl the two frostings like I did, here is how I made the swirl frosting. There may be leftover frosting depending how much you use on each cupcake.
  • Store cupcakes in an airtight container at room temperature for up to 2 days and in the refrigerator up to 5.

Steps:

  • In a medium bowl, combine oats, brown sugar, ginger, flour, and melted butter, and stir until thoroughly combined. Set aside.
  • Heat the oven to 350 degrees. Coat the muffin tins with cooking spray, and set aside. Combine flour, sugar, baking powder, baking soda, cinnamon, ground ginger, and salt in a large mixing bowl, and stir to combine. Place buttermilk, applesauce, and vegetable oil in a medium bowl, and whisk to combine. Stir into flour mixture until well combined. Fold in egg whites.
  • Place 2 heaping tablespoons batter in each muffin tin. Sprinkle with a generous tablespoon of reserved topping; press gently to adhere topping to cake. Bake until a cake tester comes out clean, about 25 minutes. Cool in pan for 15 minutes before serving.

Somewhere between muffins and mini-crumb cakes, these tender breakfast treats have a surprise layer of crunchy, cinnamon-scented crumbs hiding underneath. Browning the butter for the crumbs adds a rich, caramelized depth that rounds out the flavors of vanilla and lemon zest in the batter. These muffins keep well for several days stored airtight at room temperature, and freeze perfectly for up to two months.

1/2 cup/110 grams dark brown sugar, packed

1/4 teaspoon fine sea salt
3/4 cup/180 milliliters sour cream
2 large eggs
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon finely grated lemon zest
1 1/2 cups/190 grams all-purpose flour
2/3 cup/135 grams granulated sugar
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon fine sea salt
1/2 cup/115 grams unsalted butter (1 stick), cut into 1-inch slices and softened

Steps:

  • Heat oven to 375 degrees and line a 12-cup muffin tin with liners.
  • Make the topping: In a medium saucepan over medium-high heat, melt butter, then let it simmer until the foam on top falls to the bottom of the pot and turns brown, 4 to 6 minutes. It will smell nutty when it's ready. Immediately pour butter into a small bowl to keep it from getting any browner, and let cool for 5 minutes.
  • Whisk together flour, sugar, spices and salt in a medium bowl. Pour in the brown butter and stir, pinching the mixture together, until crumbs form. Set aside.
  • Make the batter: Whisk together sour cream, eggs, vanilla, almond extract and lemon zest in a mixing bowl.
  • In a large bowl, using a stand mixer fitted with the paddle attachment or a handheld electric mixer, mix together flour, sugar, baking soda, baking powder and salt until combined, about 10 seconds. Add softened butter and beat for 20 seconds to work it into the flour. Add egg mixture and continue beating until the batter is very smooth, about 1 minute.
  • Sprinkle a scant tablespoon of the topping crumbs into the bottom of each muffin liner. Spoon the batter on top of the crumbs, dividing it evenly.
  • Bake muffins for 5 minutes to firm up the tops so the crumbs don't sink into the batter. Remove muffin pan from the oven and lower heat to 350 degrees. Sprinkle the remaining crumbs on top of each muffin. Continue to bake until the muffins are springy to the touch and a toothpick inserted into the center comes out clean, 25 to 30 minutes longer. Cool on a rack for 15 minutes. Use an offset spatula or butter knife to lift the muffins out of the pan. Finish cooling muffins on a rack.
