I'm always looking for healthier ways to incorporate my chocolate addiction into every meal. I've made this with peanut butter chips with bananas, and white chocolate and mint chocolate chips with raspberries.-Rachel Strong, Moseley, Virginia

Number Of Ingredients 10

3-3/4 cups water, divided
1/4 teaspoon salt
2 cups old-fashioned oats
1/4 cup toasted wheat germ
1/2 cup baking cocoa
1/3 cup sugar
2 teaspoons vanilla extract
1 cup dried cherries plus additional cherries
Miniature semisweet chocolate chips, optional
Sweetened whipped cream, optional

Steps:

  • In a large saucepan, bring 3-1/4 cups water and 1/4 teaspoon salt to a boil. Stir in oats and wheat germ; reduce heat and simmer, uncovered, until water is absorbed, about 5 minutes., Meanwhile, combine cocoa, sugar, vanilla and remaining water; stir until smooth. Add chocolate mixture and cherries to oats; stir until well combined and heated through. Serve topped with additional cherries and, if desired, miniature chocolate chips and sweetened whipped cream.

1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 cup almond flour
1/2 teaspoon salt
2 sticks unsalted butter, at room temperature
2/3 cup sugar
1 cup cherry jam
3/4 cup dried cherries, chopped
2 tablespoons fresh lemon juice
1 1/2 teaspoons cornstarch
1/4 teaspoon pure almond extract
1 1/2 ounces white chocolate, chopped

Steps:

  • Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang on 2 sides; coat with cooking spray. Whisk the all-purpose flour, cocoa powder, almond flour and salt in a medium bowl. Beat the butter and sugar in a large bowl with a mixer on medium speed until creamy, 2 to 3 minutes. Reduce the mixer speed to medium low; beat in the flour mixture until combined.
  • Press the dough evenly into the prepared baking dish in a thin layer with damp hands. Refrigerate until firm, about 30 minutes.
  • Preheat the oven to 350 degrees F. Bake until the chocolate layer is set, 25 to 30 minutes; let cool completely in the pan.
  • Meanwhile, combine the jam, dried cherries, lemon juice, cornstarch, almond extract and 1/4 cup water in a small saucepan. Bring to a simmer and cook, stirring occasionally, until the dried cherries soften and the mixture thickens, about 10 minutes. Spread over the chocolate layer and let cool completely.
  • Lift the bars out of the pan using the foil. Put the white chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring, until smooth; drizzle on the bars. Let stand until the chocolate sets, then cut into squares.

1 cup Land O Lakes® Butter softened
3/4 cup sugar
1/2 cup firmly packed brown sugar
2 large Land O Lakes® Eggs
1 1/2 teaspoons vanilla
1 2/3 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 cups uncooked old-fashioned oats
1 1/2 cups semi-sweet chocolate chips
1 cup dried tart cherries, coarsely chopped
Drizzle
2 cups powdered sugar
1 to 2 teaspoons Kirsch or apple juice
2 to 3 tablespoons water

Steps:

  • Heat oven to 350°F.
  • Combine butter, sugar and brown sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla; continue beating until well mixed. Add flour, baking soda and salt; beat at low speed until well mixed. Stir in oats, chocolate chips and cherries.
  • Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake 10-12 minutes or until golden brown. Cool completely.
  • Stir together powdered sugar and Kirsch in bowl. Gradually stir in enough water for desired drizzling consistency. Drizzle over cooled cookies.

I wanted an on-the-go oatmeal bar without the artificial ingredients of commercial bars. This is the base for the bars, a recipe easily modified to suit your own tastes.

2 cups old-fashioned rolled oats
⅓ cup packed brown sugar
1 tablespoon white sugar
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
1 cup milk
2 eggs
2 tablespoons canola oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan.
  • Combine oats, brown sugar, white sugar, baking powder, salt, and cinnamon together in a bowl. Whisk milk, eggs, canola oil, and vanilla extract together in a separate bowl. Stir egg mixture into oats mixture until well combined; set aside until flavors blend, about 20 minutes. Spread oats mixture into prepared square pan.
  • Bake in the preheated oven until edges are golden brown, about 30 minutes.

5 ounces dried tart cherries, coarsely chopped
1 1/2 cups Splenda sugar substitute
1/4 cup cornstarch
5 -6 teaspoons water

Steps:

  • Preheat oven to 350 degrees F.
  • Combine butter, sugar and brown sugar in large mixer bowl.
  • Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes).
  • Add eggs and vanilla extract; continue beating until well mixed.
  • Reduce speed to low; add flour, baking soda and salt.
  • Beat until well mixed (1 to 2 minutes).
  • Stir in oats, chocolate chips and cherries by hand.
  • Spread dough evenly into ungreased 15 x 10-inch jellyroll pan.
  • Bake at 350 degrees F for 20 to 25 minutes or until golden brown.
  • Cool completely.
  • Drizzle: Stir together 1 1/2 cups splenda, 1/4 cups cornstarch together in small bowl.
  • Gradually stir in enough water for desired drizzling consistency.
  • Drizzle over bars.

1 (17.5 ounce) package double chocolate-chunk cookie mix
¼ cup vegetable oil
1 egg, at room temperature
1 (21 ounce) can cherry pie filling, divided
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly spray bottom and sides of a 9x13-inch baking pan with cooking spray.
  • Stir cookie mix, oil, and egg together in a large bowl until a soft dough forms. Drop 3 heaping tablespoons of dough on an ungreased baking sheet 2 inches apart to make 3 cookies.
  • Bake cookies in the preheated oven until set, 12 to 13 minutes. Cool on the baking sheet, 2 minutes. Transfer to a wire rack to cool completely, about 15 minutes.
  • Press remaining dough evenly into the bottom of the baking pan.
  • Measure 1 cup cherry pie filling into a small bowl and reserve for the topping; cover with plastic wrap and store in the refrigerator.
  • Beat cream cheese, remaining cherry pie filling, and white sugar together in a large bowl with an electric mixer on medium speed until well-blended, about 2 minutes. Spread cream cheese mixture over dough.
  • Bake in the preheated oven until set, 35 to 40 minutes. Let cool, about 30 minutes. Refrigerate until chilled, about 1 hour.
  • Spread whipped topping over cream cheese layer. Top with spoonfuls of the reserved pie filling. Crumble cookies into coarse crumbs and sprinkle on top. Chill until flavors blend, at least 1 hour. Cut into 20 bars.
