2 tablespoons extra virgin olive oil
1 pound very small new potatoes, rinsed and dried
Salt to taste
1/3 cup finely chopped onion
1 garlic clove, finely chopped
3 Serrano chilies, finely chopped, or more, to taste
1/2 cup loosely packed, roughly chopped cilantro
3 tablespoons fresh lime juice

Steps:

  • Heat oil in a heavy skillet with a cover. Add potatoes, sprinkle with salt and fry over medium-high heat, stirring from time to time, 6 to 8 minutes, until skins begin to wrinkle and brown. Add onion, garlic and chilies, reduce heat to medium-low and fry for 3 minutes longer. Add cilantro and lime juice, and fry for another minute.
  • Add 1 cup of water, cover pan and cook over very low heat until almost all the liquid has been absorbed and the potatoes are tender, another 20 minutes or so. Add additional water during cooking if it evaporates too quickly. The potatoes should be moist but not soupy. Season to taste with additional chilies and salt, if desired.

My favorite shepherd's pie recipe with a Latin flair; ground beef, creamy mashed potatoes, and mozzarella cheese make this incredible casserole.

2 ½ pounds Yukon Gold potatoes, peeled and quartered
1 ½ teaspoons salt, divided
¾ cup milk, or as needed
3 tablespoons butter
1 tablespoon Parmesan cheese
¼ teaspoon ground black pepper
¼ teaspoon ground nutmeg
1 tablespoon olive oil
1 onion, chopped
1 red bell pepper, chopped
1 ½ pounds ground beef
2 teaspoons smoked paprika
1 teaspoon salt
1 teaspoon garlic powder
½ teaspoon ground black pepper
2 hard-cooked eggs, chopped
½ cup chopped green olives
½ cup cubed mozzarella cheese
1 tablespoon grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Place potatoes in a large pot; cover with water and add 1 teaspoon salt. Bring to a boil, reduce to a simmer, and cook until tender, about 20 minutes. Drain and mash potatoes with a fork or potato masher. Mix in milk, butter, 1 tablespoon Parmesan cheese, 1/2 teaspoon salt, 1/4 teaspoon pepper, and nutmeg.
  • Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 4 minutes. Add bell pepper and cook until tender, about 3 minutes. Cook ground beef until browned, 10 to 15 minutes. Mix in smoked paprika, 1 teaspoon salt, garlic powder, and 1/2 teaspoon pepper. Simmer until fully cooked and juicy, about 20 minutes. Let it cool lightly, about 5 minutes. Stir in chopped hard-boiled eggs and olives.
  • Spread half of the mashed potatoes in the prepared baking dish. Layer beef and egg mixture on top, and cover with the remaining mashed potatoes. Insert mozzarella cubes into the mashed potatoes. Sprinkle with 1 tablespoon Parmesan cheese.
  • Bake in the preheated oven until golden and beef filling starts to bubble, about 45 minutes.

We like this stove-top potato recipe because it is quick,and delivers on flavor but won't overpower your main course meat dish. Easily paired with pork, lamb, poultry, or beef. Pimenton is the Spanish smoked paprika and can be substituted with Hungarian paprika.

750 g potatoes, peeled and in one inch dice
2 tablespoons extra virgin olive oil
3 tablespoons finely chopped garlic
1 large onion, finely chopped
3 tablespoons fresh rosemary, chopped or 1 tablespoon dried rosemary, crumbled
1 teaspoon pimenton smoked paprika, to taste
water, as needed

Steps:

  • Heat the oil in a non-stick frying pan large enough to hold the potatoes in one layer.
  • Fry the onion and garlic, along with the rosemary until the onion is golden (but do not burn the garlic).
  • Add the pimenton, mixing well.
  • Add the potatoes and mix, insuring that they become covered with the onion mixture.
  • Add just enough water to cover the potatoes.
  • Put a lid on the frying pan and simmer until the potatoes are cooked, about 15 minutes; you may need to take the lid off for the last five minutes or so (and stirring as needed to prevent sticking) in order to evaporate all the remaining liquid.

4 large potatoes, peeled and cubed
½ teaspoon salt
1 tablespoon vegetable oil
½ cup chopped onion
1 green bell pepper, chopped
3 cloves garlic, minced
1 pound ground beef
1 teaspoon salt
2 teaspoons ground cumin
1 teaspoon ground black pepper
4 teaspoons tomato paste
1 tablespoon distilled white vinegar
4 eggs
2 cups dry bread crumbs
1 cup all-purpose flour
1 quart vegetable oil for frying

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash in a bowl with 1/2 teaspoon salt until no lumps remain. Set aside to cool to room temperature.
  • Meanwhile, heat the vegetable oil in a large skillet over medium heat. Cook and stir the onion, green pepper, and garlic in the hot skillet until the onion has softened and turned translucent, about 10 minutes. Increase heat to medium-high, and stir in the ground beef. Cook and stir until the beef is crumbly and no longer pink. Stir in 1 teaspoon salt, cumin, pepper, tomato paste, and vinegar until the tomato paste has dissolved. Scrape into a mixing bowl, and allow to cool to room temperature.
  • Line a baking sheet with plastic wrap or waxed paper, and set aside. Beat the eggs in a mixing bowl, and set aside. Pour the bread crumbs and flour into separate, shallow dishes, and set aside.
  • Once the potatoes and beef have cooled, form the potato balls: grab a handful of mashed potatoes, and split into two equal portions. Form each piece into a small bowl shape, and fill with the ground beef mixture. Place the two halves together, seal the edges, and smooth to make a round ball. Gently roll the ball in the flour to coat and shake off the excess flour. Dip into the beaten egg, then gently roll in bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded potato balls onto the prepared baking sheet while breading the rest. Refrigerate 2 to 4 hours, or freeze for later use.
  • To cook, heat the oil for frying in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Cook the potato balls in the hot oil in batches, using tongs to roll the balls around as they cook to ensure even browning, until crispy and golden brown, about 3 minutes per batch. Drain on a paper towel-lined plate before serving.

A Tale of Two Cites: Medellín and Bogotá. Bogotá is cold, the people are very traditional, 10 million of them! Medellín; A party town, warm (a.k.a. The City of Eternal Spring), party population 3 million. Most of my family came out of Medellín and its surroundings. Both cities have completely different cuisines. A couple of my uncles moved to Bogotá (I guess they like cold weather), married and stayed. My uncle Tulio married Inés and had 10 children. "Inecita", as we called her, was a great cook and her signature recipe was "Papas Chorreadas" which she would always make for me when my parents and I rolled into town. Here is my favorite recipe from my sweet Aunt Inecita.

8 medium red potatoes
1 small white onion (chopped finely)
1 bunch green onion (chopped in 1/2 bits, reserve a tablespoon or so for garnish)
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon turmeric (or anato. The recipe calls for Saffron but that stuff is expensive! It's just for color.)
2 tablespoons butter
2 medium tomatoes (diced)
1/4 cup chopped fresh cilantro
3/4 cup heavy whipping cream
6 ounces mozzarella cheese

Steps:

  • 1. Scrub the potatoes and place in a large pot of boiling, salted water. Boil until tender when pierced with a fork. Drain potatoes and let cool slightly.
  • 2. Finely chop the shallots or onion. Chop the white part and a inch or two of the green part of the scallions into 1/2 inch lengths. Finely chop the rest of the green parts of the scallion and reserve for a garnish.
  • 3. Melt the butter in a large skillet. Saute the 1/2-inch pieces of scallion, the shallots, the cumin, and the chile powder in the butter until soft, about 5 minutes.
  • 4. Add the diced tomatoes and cilantro, and cook until the tomatoes are soft and fragrant. Add the tablespoon of flour and stir briefly.
  • 5. Stir in the cream, anato and cheese, and heat until sauce just comes to a boil and cheese is mostly melted. Remove from heat.
  • 6. Slice potatoes into halves or wedges, and arrange potatoes onto a platter. Pour sauce over potatoes. Garnish with chopped green onion.

A simple supper that's got all the elements of the ultimate comfort food. Easily scaled up if you've got more mouths to feed

2 tsp butter
½ onion , chopped
140g lean minced beef
250ml beef stock
1 tsp Worcestershire sauce
1 tbsp tomato purée
1 large jacket potato , baked
small handful grated cheddar

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Melt half the butter in a non-stick pan. Cook the onion for 3-4 mins, then increase the heat and add the mince. Fry for a further 3-4 mins until the beef has browned. Stir in the stock, Worcestershire sauce, tomato purée and some seasoning. Gently bubble for 15-20 mins until the mince is tender and the sauce has thickened.
  • To assemble, cut the jacket potato in half lengthways and scoop the flesh into a small bowl, leaving the skin intact. Mash the potato with the remaining butter and season well. Divide the mince between the potato skins, then cover with the mash. Transfer the potatoes to a baking dish, sprinkle with cheese, then bake for 15-20 mins until golden. Serve with your favourite veg.
