BLACKENED CHICKEN BREASTS
Fast, easy, and very good. Throw the potatoes in the oven, toss the salad. This also works very well on pork chops. Mix the spices early and have on hand. I do not know where I got this mix.

Steps:
- Mix the seven spices (will fill a 3-inch salt shaker). Save for future use.
- Sprinkle over chicken to cover both sides.
- Heat oil in cast iron skillet for 15 minutes. I do this on low heat and turn up last few minutes.
- Place chicken in hot pan and cook till dark in color, about 4 minutes per side, till juices are clear.

A different way to serve turkey. This is not a slow roasted bird! If you are grilliterate, this can be done using the indirect method with a little hickory or mesquite added to the charcoal.

- Brine the turkey overnight if you wish.
- Brush the butter or oil over the breast.
- Cover all sides with spice and sliced onion.
- Wrap in foil or plastic wrap and refrigerate 24 hours.
- Uncover, discard onions.
- Bake, uncovered at 350°F until internal temp reaches 160°F.

- Preheat the oven to 500 degrees. Place a 15 x 10 1/4-inch roasting rack in a heavy 16 x 13-inch roasting pan; alternatively, use two large disposable aluminum roasting pans set one inside the other for added strength.
- Stuff the turkey with the stuffing. Using a trussing needle and butcher's string, sew the sides of the body cavity together, stitching from side to side, to enclose the stuffing. To truss the turkey, tuck wings under body. Tuck neck flap under body to secure; then center a 3-foot length of butcher's string over the neck flap. Bring the ends of the string under wings, over drumsticks, wrap each end around a drumstick, pull drumsticks together, and then tie ends of the string into a bow. (The bow makes it easier to remove the trussing string after roasting.)
- Brush the turkey breast with melted butter. Place the turkey breast side down on the rack and brush with remaining melted butter. Place breast side down in the oven and roast until brown all over, about 30 minutes. Remove the turkey from the oven and reduce temperature to 325 degrees. While the oven cools, brush the hot turkey with the paste and allow it to set until dry, 5 to 7 minutes; turn it over on the rack and brush the breast side with paste. Place the coated turkey in the oven. Using a turkey baster, baste with basting liquid.
- Continue basting the turkey every 15 minutes with basting liquid throughout the roasting process, about 7 hours (allowing about 20 minutes per pound). Results yield a turkey with a dark, black coating over the skin that can be removed with tweezers before serving to reveal succulent, moist skin and meat.
BLACKENED TURKEY BREAST WITH JAMBALAYA STUFFING

- 1. Preheat the oven to 350°F. Lightly grease a 2-quart casserole dish and set aside. 2. Rinse and dry the turkey breast. Brush with just enough melted butter to cover, and sprinkle with the Cajun spice blend. 3. Preheat a large skillet over high heat. Add the turkey breast and cook for 5 minutes, or until the first side is browned, but not black. Turn the breast over and cook for an additional 5 minutes, or until browned. 4. Transfer the turkey to a roasting pan, and place in the preheated oven for about 1 hour, or until a thermometer inserted in the breast reads 170°F. 5. When the turkey is beginning to roast in the oven, preheat a large skillet over medium heat. Add the sausage and cook, stirring occasionally, for 3 to five minutes, or until lightly browned. Remove the sausage from the skillet and set aside. 6. Place the butter or margarine in the skillet, and melt over low-medium heat. Add the onion, bell pepper, green onions, garlic, and parsley, and sauté for 2 to 3 minutes, or until the vegetables are tender. 7. Add the stuffing mix, chili powder, pepper, thyme, cloves, and reserved sausage to the skillet, and stir to combine. Stir in just enough chicken broth to moisten. 8. Transfer the stuffing to the prepared dish, cover, and bake alongside the turkey during the last 40 minutes of roasting. Cook covered for the first 30 minutes. Then remove the cover and bake for 10 additional minutes, or until the top is crisp. 9. Place the turkey on a carving board, and allow to rest for 10 minutes. Then slice as desired. 10. To serve, arrange the stuffing on a platter, and arrange the turkey slices over the stuffing.
