Blackberry-Grape Sundaes image

Steps:

  • Cook 3/4 cup each blackberries and seedless red grapes, 1/3 cup sugar and 2 teaspoons water in a small saucepan over medium heat until juicy, about 10 minutes. Remove the fruit with a slotted spoon and continue simmering the liquid until syrupy, about 2 more minutes. Let cool slightly. Stir the fruit back into the syrup and spoon over vanilla ice cream.

Butter Nut Sundaes image

Number Of Ingredients 8

1 cup sweetened shredded coconut
1/4 teaspoon ground cloves, a couple of pinches
1/4 teaspoon ground allspice, a couple of pinches
1/2 teaspoon ground cinnamon, eyeball it
2 pints butter pecan ice cream
1 jar caramel sauce topping for sundaes, any brand
Whipped cream
1/2 cup honey roasted peanuts

Steps:

  • Preheat oven or toaster oven to 325 degrees F. Place the coconut on a small cookie sheet and spice it up with cloves, allspice and cinnamon. Toast coconut 10 to 12 minutes to deep golden. Cool.
  • Chop honey roasted peanuts by hand or in processor. Reserve.
  • Remove lid to caramel sauce topping and place in microwave. Microwave the sauce on high 45 seconds to warm it through.
  • Fill dessert bowls with butter pecan ice cream and top with caramel sauce, whipped cream, chopped nuts and spiced, toasted coconut.

2 cups butter, cubed
32 ounces semisweet chocolate, chopped
7 eggs
2 cups sugar
3 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1-1/2 teaspoons salt
3/4 pound chopped walnuts, optional
HOT FUDGE SAUCE:
1 cup heavy whipping cream
1 cup sugar
1/2 cup butter, cubed
1 cup baking cocoa
Vanilla ice cream
Whipped cream and maraschino cherries, optional

Steps:

  • In a large heavy saucepan, melt butter and chocolate over low heat; stir until smooth. Cool., In a large bowl, beat eggs and sugar on low speed until combined. Beat on medium-high until thickened and lemon-colored, about 12 minutes. Beat in vanilla and chocolate mixture. Fold in flour and salt just until blended (batter will be thick). Fold in walnuts if desired. , Transfer to two greased 13x9-in. baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on wire racks for 15 minutes. , In a large saucepan, combine the cream, sugar and butter. Cook and stir until sugar is dissolved. Bring to a boil, without stirring. Reduce heat; simmer, uncovered, for 3 minutes. Cool for 3 minutes. , Place cocoa in a heat-proof bowl. Carefully whisk hot liquid into cocoa until smooth (do not scrape pan). Cut brownies into squares; serve with ice cream and hot fudge sauce. Garnish with whipped cream and cherries if desired.

3 blood oranges
2/3 cup (packed) golden brown sugar
3 tablespoons unsalted butter, diced
1 quart vanilla ice cream
1/2 cup sliced almonds, toasted
Fleur de sel* (optional)

Steps:

  • Squeeze juice from 1 orange (about 1/4 cup) into small bowl. Cut ends off remaining 2 oranges to expose flesh. Cut oranges lengthwise into quarters; pull out and discard white center pith. Cut orange quarters crosswise into 1/8-inch-thick slices. Place orange slices along with any collected juices in another bowl.
  • Sprinkle sugar evenly over bottom of heavy 10-inch-diameter skillet; scatter butter pieces over and drizzle with 2 tablespoons orange juice. Stir over medium heat until mixture begins to melt and bubble, then swirl pan to blend. Cook until sugar mixture is dark amber, occasionally scraping down sides of skillet with heatproof spatula, about 6 minutes. Stir in 2 tablespoons orange juice and cook until smooth and thickened, about 2 minutes. Add orange slices with juices to skillet and stir until coated, about 1 minute. Cool. DO AHEAD: Caramelized orange sauce can be made up to 3 hours ahead. Let stand at room temperature.
  • Scoop ice cream into bowls and spoon caramelized orange sauce over. Top sundaes with toasted almonds and sprinkle with fleur de sel, if desired.
  • * A type of sea salt; available at some supermarkets and at specialty foods stores.

Royal blue food coloring
1 (1.5 quart) container vanilla ice cream
1 cup chopped strawberries

Steps:

  • Stir together marshmallow creme and 1 to 2 tablespoons hot water in a bowl until smooth. Add enough food coloring to reach desired color.
  • Transfer ice cream to a large bowl. Stir with a wooden spoon to soften. Stir in blue marshmallow mixture to create a swirl. Cover and freeze at least 8 hours.
  • Divide ice cream between 8 bowls or sundae glasses. Top with strawberries.

Blood Orange-Curd Sundaes with Olive Oil and Sea Salt Recipe image

Something magical happens when you spoon orange curd over vanilla ice cream. And by magical, we mean it tastes just like a Creamsicle.

Number Of Ingredients 9

3 large eggs, room temperature
1/2 cup sugar
1 teaspoon vanilla extract
1 tablespoon finely grated blood orange zest
1/2 cup fresh blood orange juice
1/2 cup fresh lemon juice
1/4 teaspoon kosher salt
1/2 cup (1 stick) chilled unsalted butter, cut into pieces
Vanilla ice cream, softly whipped cream, olive oil, and flaky sea salt (for serving)

Steps:

  • Whisk eggs, sugar, and vanilla in a medium bowl until pale and thick, about 4 minutes. Bring blood orange zest and juice, lemon juice, and salt to a simmer in a small saucepan over medium heat. Whisking constantly, gradually add half of juice mixture to egg mixture, then whisk egg mixture into remaining juice mixture in saucepan. Reduce heat to medium-low and cook, stirring with a wooden spoon, until bubbles subside and mixture is thick enough to coat spoon, about 3 minutes.
  • Off heat, whisk in butter a few pieces at a time, incorporating completely before adding more. Transfer curd to a medium bowl and press plastic wrap directly onto surface. Chill until cold, at least 3 hours.
  • To serve, spoon ice cream into bowls and top with curd and whipped cream. Drizzle with oil and sprinkle with salt.
  • Do ahead: Curd can be made 5 days ahead. Keep chilled.

12 walnuts, or to taste
4 scoops vanilla ice cream

Steps:

  • Heat caramel topping in a bowl in a microwave until warm, about 30 seconds. Mix super red gel food coloring into the caramel. Dunk walnuts into caramel to coat, 1 at a time, and let excess drip off. Put coated walnuts on top of each scoop of vanilla ice cream and drizzle with red caramel.
