Popovers image

There are three secrets to great popovers: Make sure the pan is hot before you pour in the batter, fill each section not more than half full and no peeking while they're in the oven!

1 1/2 tablespoons unsalted butter, melted, plus softened butter for greasing pans
1 1/2 cups flour
3/4 teaspoon kosher salt
3 extra-large eggs, at room temperature
1 1/2 cups milk, at room temperature

Steps:

  • Preheat the oven to 425 degrees F.
  • Generously grease aluminum popover pans or Pyrex custard cups with softened butter. You'll need enough pans to make 12 popovers. Place the pans in the oven for exactly 2 minutes to preheat. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek.

BLT with Spicy Pepper Cream Cheese image

3 pounds plum tomatoes, quartered
3 ounces (1/3 cup plus 1 tablespoon) olive oil
1 tablespoon plus 1 1/2 teaspoons sugar
1 tablespoon kosher salt
1/4 teaspoon ground black pepper
Leaves from 3 sprigs fresh thyme
12 to 16 slices (about 1 pound) thick-cut bacon
4 bagels
Spicy Pepper Cream Cheese, recipe follows
1 large head red or green leaf lettuce, leaves separated
8 ounces cream cheese
1 small roasted poblano or green chile, drained and chopped (see Cook's Note)
1/4 cup pickled jalapeno peppers, chopped
1/4 teaspoon kosher salt
1/8 teaspoon red pepper flakes, or more to taste

Steps:

  • Preheat oven to 200 degrees F. Line 2 half-sheet trays with parchment paper.
  • Toss tomatoes with olive oil, sugar, salt, pepper and thyme leaves in a large bowl. Spread on a lined half-sheet tray and slow-roast, stirring every hour, until little to no liquid remains and the tomatoes are shriveled and caramelized, about 3 hours 30 minutes. Set aside and raise oven temperature to 375 degrees F.
  • Arrange bacon slices side-by-side on a lined half-sheet tray and cook to desired doneness, 20 to 25 minutes for just under crispy. Carefully remove from oven (watch out for hot bacon fat!) and drain on paper towels.
  • Slice and toast bagels. Spread 2 tablespoons Spicy Pepper Cream Cheese on each bagel half. Arrange 6 to 8 pieces roasted tomatoes on the bottom halves. Top each with 3 leaves lettuce, torn to fit. Divide the bacon among the top halves, ripping the pieces in half to fit the tops. Close, slice and enjoy. (See Cook's Note.)
  • Whip cream cheese in a stand mixer or in a large bowl with a hand mixer until light, about 2 minutes. Add chopped peppers, salt and pepper flakes and mix on low to blend.

1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
10 to 12 paper lollipop sticks or craft sticks
5 to 6 grape tomatoes, cut in half
1/3 cup shredded mozzarella cheese
4 slices bacon, crisply cooked, crumbled (about 1/4 cup)
1/4 cup chopped fresh basil leaves or arugula
1 egg, slightly beaten
1 to 2 teaspoons salt

Steps:

  • Heat oven to 375°F. Line cookie sheet with cooking parchment paper or spray with cooking spray.
  • Remove pie crusts from pouches; unroll on lightly floured work surface. Using 2-inch T-shirt or jersey-shaped (or desired shape) cookie cutter, cut 10 to 12 shapes from each crust.
  • Place half of the cutouts on cookie sheet. Gently press lollipop sticks into dough, with top of stick almost to top of cutout. Top each with 2 tomato halves; sprinkle evenly with cheese, bacon and basil. Cover with remaining cutouts; press edges together with fork. Brush tops with egg; sprinkle with salt.
  • Bake 10 to 12 minutes or until edges begin to brown. Serve warm.

4 cups milk, warmed
8 eggs
4 cups flour
1 1/2 tablespoons salt
2 1/4 cups grated gruyere cheese

Steps:

  • Place the popover pan, or muffin tins, in the oven. Heat the oven and pan to 350º.
  • Gently warm the milk over low heat and set aside.
  • Whisk the eggs until frothy and slowly whisk in the milk (so as not to cook the eggs). Set the mixture aside.
  • Sift the flour with the salt. Slowly add this dry mixture to the egg mixture and gently combine until mostly smooth.
  • Remove the popover pan from the oven and spray with nonstick vegetable spray.
  • Fill each popover or muffin cup three-fourths full.
  • Top each popover with approximately 2 ½ tablespoons of the grated cheese.
  • Bake at 350º for 50 minutes, rotating pan half a turn after fifteen minutes, until the popovers are golden brown.
  • Take out of oven, remove from pan, and serve immediately.

  • Makes 12. Place the popover pan in the oven. Heat oven and pan to 350 deg. Gently warm the milk over low heat and set aside. Whisk the eggs until frothy and slowly whisk in the milk (so as not to cook the eggs). Set the mixture aside. Sift the flour with the salt. Slowly add the dry mixture to the eggs and combine until mostly smooth. Once combined remove the popover pan from the oven and spray with non stick vegetable spray. Fill each popover cup 3/4 full and top each with 2 1/2 cups of gruyere cheese. bake at 350 deg for 50 minutes, rotating pan half a turn after 15 minutes. Serve immediately.

I took my wife to BLT Steak in Las Vegas to celebrate her birthday recently, and they had the best bread we've ever had in our lives. I was amazed later in the meal when the server brought me the recipe. This recipe uses the same ingredients, proportions, and directions as the original, but is adapted for cupcake pans (the original was double the quantity, and used a special popover pan). The time for the smaller popovers is less than the 50 minutes for the original, larger popovers. For those who've never made popovers, there is no yeast or baking powder in the recipe: the bread rises entirely as a result of the steam created by evaporating milk.

1 cup gruyere, grated

Steps:

  • Place cupcake pans in the oven. Heat the oven and pans to 350°F
  • Heat the milk for 1 minute in the microwave or over low heat in a pan, then set aside. Whisk eggs until frothy and slowly whisk in milk (so as not to cook the eggs). Set the mixture aside.
  • Sift the flour with the salt. Slowly add this dry mixture and gently combine until mostly smooth. Once combined, remove the cupcake pans from the oven and spray with non-stick vegetable spray.
  • While the batter is still slightly warm or room temperature (definitely not cool), fill each cupcake cup 3/4 full. Top each cup with about 1 tablespoon of grated gruyere.
  • Bake at 350 degrees for 35 minutes, rotating pans 1/2 turn halfway through baking. Remove from oven, remove from pan, and serve immediately.
