BLT CHICKEN SALAD STUFFED AVOCADOS



BLT Chicken Salad Stuffed Avocados image

Lunchtime gold - these stuffed avocados are super easy to throw together, satisfying and pretty darn great for you too!

Number Of Ingredients 7

4 slices bacon
1½ cups shredded rotisserie chicken
1/2 cup sliced cherry tomatoes (quarter if very large)
1 cup finely chopped romaine lettuce
3/4 cup Silk Yogurt Alternative
2 medium to large ripe (but not over ripe) avocados
Salt & pepper to taste

Steps:

  • Cook bacon and then transfer to plates lined with paper towels to cool. Once cooled dice into small pieces.
  • Meanwhile, prepare and measure out the chicken, tomatoes, lettuce and Silk Yogurt Alternative.
  • In a large bowl, combine and mix together all ingredients except avocados.
  • Season to taste with salt and pepper
  • Half your avocados, remove the pits, and season lightly with salt and pepper.
  • To serve, scoop a couple of spoonfuls of chicken salad onto each avocado half. Don't worry about getting too much into the hole, most will sit on top of the avocado. Enjoy!

4 slices asiago bread (lightly toasted)
1 large tomato (sliced)
4 lettuce leaves
1/2 avocado (sliced)
2 tablespoon mayonnaise
6 slices bacon (cooked)

Steps:

  • Cook the bacon to your desired personal preference.
  • Lightly toast the bread.
  • Spread a tablespoon of mayonnaise on 2 slices of bread (a tbsp on each slice).
  • On top of each bread slice with mayonnaise, add 2 lettuce leaves, followed by slices of tomatoes, followed by 3 slices of bacon, then by avocado slices and another slice of bread.

12 slices of turkey bacon (3 reds)
1 1/2 cups shredded rotisserie chicken (2 reds)
2 roma tomatoes (1 green)
1 1/2 cups cottage cheese (or more depending on the consistency you prefer - 2 reds)
1 cup finely chopped romaine lettuce (1 green)
3 avocados

Steps:

  • Preheat your oven to 400 degrees
  • Lay 12 slices of turkey bacon out on a foil lined baking sheet
  • Bake for 10 minutes, flip, bake for another five minutes, and lay the bacon out over several sheets of paper towels to cool
  • Meanwhile, quarter your tomatoes, scoop out all the pulp and seeds with your fingers, and dice into small chunks
  • Chop the romaine into small pieces
  • In a large bowl, combine the chicken, cottage cheese, romaine, tomatoes, crumbled turkey bacon, and mix together
  • Season to taste with salt and pepper
  • Half your avocados, remove the pits, and season lightly with salt and pepper
  • To serve, scoop 1/6 (approximately) of the chicken salad into each avocado half. Not a huge amount will fit inside the hole made by the pit, so you will heap a decent amount on top of the avocado, too

2 large avocados
Fresh lemon juice
10 or more grape tomatoes, chopped
3/4 cup cooked, cubed chicken breast (optional)
1/2 cup finely chopped baby spinach leaves
1/4 cup cooked crumbled nitrate -free bacon (I used#Applegate brand)
2 Tbsp homemade mayonnaise, or plain Greek yogurt.
1/2 tsp sea salt
1/4 tsp black pepper

Steps:

  • Cut the avocados in half, remove the pits, and carefully remove the peel.
  • Brush the outsides of each half with fresh lemon juice. Set aside.
  • In a medium mixing bowl, add all remaining ingredients.
  • Stir to Combine
  • Stuff the avocados with as much of the filling as you can fit, allowing the filling to come up over the sides a bit.
  • Serve immediately

4 Cups chopped green leaf lettuce
2 Cups sliced cherry tomatoes (a little less than 1 full pint)
1-2 Tablespoons extra virgin olive oil
lemon juice to taste (about 1/2 small lemon)
Pinch of salt and pepper
Fresh dill to taste, minced
Medium avocados, halved
Optional: Creamy Tahini-Lemon Dressing OR Homemade Ranch

Steps:

  • In a medium-sized bowl, combine the chopped lettuce, chopped bacon and sliced cherry tomatoes.
  • Pour the olive oil and lemon juice over the salad, and toss to combine. Season with a pinch of salt and pepper. Taste and add more oil or lemon as necessary.
  • Toss the salad with fresh dill to taste (optional).
  • Cut the avocados in half and remove the pits. Scrape a small amount of the avocado flesh out with a spoon to make the pit hole larger.
  • Fill each avocado with the BLT salad.
  • Optional: Drizzle with tahini-lemon dressing or homemade ranch before serving.

  • Place bacon onto a skillet while the skillet is still cold. Cook the bacon over low or medium-low heat until the edges start to curl. Flip and continue cooking until golden and crispy. This process may take 5 minutes or maybe a little longer. Drain on paper towels (it will crisp up more as it cools).
  • Meanwhile, slice the avocados in half and remove the pits. Scoop half of the flesh out of each avocado half (leave half undisturbed) and transfer to a bowl.
  • Mash the avocado in the bowl. Stir in the grape tomatoes, lettuce, lime juice, garlic powder, sea salt, and black pepper (adjust seasonings to taste if needed).
