TURKEY BURGER WITH PEACHES AND BLUEBERRIES



Turkey Burger with Peaches and Blueberries image

Sweet peaches and juicy blueberries lend vibrant life to these tasty turkey burgers, balanced beautifully by creamy Monterey Jack cheese and a hint of chili powder. Serve alongside a fresh green salad or oven baked potato wedges for a healthy yet satisfying meal the whole family will love.

4 small peaches
1 pound ground turkey
Salt
Ground black pepper
4 slices Monterey Jack cheese
0.5 cup blueberries
0.25 teaspoon chili powder
4 thick slices roasted garlic country bread or garlic bread, toasted if desired
Fresh mint (optional)

Steps:

  • Finely chop one of the peaches; add ground turkey, salt, and pepper. Shape turkey mixture into four 1/2-inch-thick patties (if necessary, dampen hands first). Grill on the rack of an uncovered grill directly over medium-high heat for 4 to 5 minutes per side or until no pink remains (165°F). Add cheese; cover and cook 1 minute more.
  • Meanwhile, coarsely chop remaining peaches. In a large skillet combine peaches, blueberries, and chili powder. Cook, stirring occasionally, over medium heat for 5 to 6 minutes or until heated through and juices are beginning to form.
  • Top each piece of garlic bread with one turkey burger and some of the peach mixture. If desired, top with mint and additional chili powder.

¼ fat free mayonnaise
1 ½ honey
1 chipotle pepper sauce
1 chopped cilantro
4 Butterball® Original Seasoned Frozen Turkey Burgers
4 (½ oz. each) reduced fat Cheddar cheese
4 kaiser rolls, split and toasted
1 shredded lettuce
4 (about ⅛-inch thick) red onion
4 tomato
1 Half Avocado, cut into 8 slices
4 Butterball® Turkey Bacon, cooked & halved

Steps:

  • Combine mayonnaise, honey, chipotle pepper sauce and cilantro. Refrigerate until ready to use.
  • Prepare turkey burgers according to package directions for broiling.
  • When burgers are cooked, top each with 1 slice cheese. Broil 1 minute or until cheese is melted.
  • Spread 1½ tsp. of the mayo mixture on top and bottom half of each roll. Layer each bottom half with ¼ cup shredded lettuce, 1 slice red onion and 1 slice tomato. Top with burger with melted cheese, 2 slices avocado and 2 turkey bacon pieces. Cover with top of roll.

2 tablespoons extra virgin olive oil (plus extra for drizzling)
5 slices smoky bacon
1 small leek
3/4 lb ground turkey breast
1 tablespoon McCormick's Montreal Brand steak seasoning
6 -8 soft sun-dried tomatoes, chopped
1 vine-ripe tomatoes, thinly sliced
salt
6 slices white bread
1/2 cup soft cheese spread with herbs (such as Alouette or Boursin)
1/4 cup cream or 1/4 cup half-and-half
black pepper
4 lettuce leaves (green leaf or bibb)

Steps:

  • Heat a nonstick skillet with a drizzle of oil over medium to med-high heat.
  • Chop one slice of bacon and add it to the pan.
  • While the bacon cooks, trim the tough green tops from the leek; halve the leek lengthwise, and thinly slice it into half-moons.
  • Place the slices in a colander and rinse vigorously with running water, separating the layers to release the grit.
  • Dry the leeks on a clean kitchen towel; and add them to the browned chopped bacon.
  • Wilt the leeks for 2-3 minutes; then transfer them and the bacon pieces to a plate to cool.
  • Return skillet to stove over low heat; add in 2 tablespoons oil.
  • Put turkey in a bowl; add in grill seasoning, sun-dried tomatoes, and cooled-to-handle leeks and bacon; mix well.
  • Form mixture into 2 very large patties no thicker than 1 inch (the patties will hang just off the sides of the bread once cooked).
  • Increase heat under oil; add in the patties; cook for 6 minutes on each side.
  • Heat a second skillet over med-high heat; add in the remaining bacon slices; cook bacon until crisp; transfer to paper-towel lined plate to drain.
  • Season sliced tomatoes with salt.
  • Place the sliced bread under the broiler; toast for 1 minute on each side.
  • In a food processor, combine the herbed cheese, cream, and pepper.
  • Build sandwiches: toasted bread slice, burger patty, herbed cheese sauce, bread, bacon, lettuce, tomatoes, herbed cheese sauce, and bread.

Steps:

  • Crumble bacon into a medium bowl. Add turkey, mayo, salt and pepper.
  • With wet hands, stir together and shape into 4 patties about 1 inch thick.
  • Heat oil in skillet. Add burgers and cook until browned and cooked through, about 6 minutes per side.
  • Assemble sandwiches on lightly toasted sandwich rolls (or just eat plain) and enjoy!

16 ounces boneless, skinless turkey thighs, trimmed of fat
7 strips bacon (about 7 ounces)
Coarse salt
3 ounces Swiss cheese, thinly sliced
4 English muffins
4 thin slices tomato, sprinkled with flaky sea salt (such as Maldon), for serving
Sliced avocado, romaine-lettuce leaves, and mayonnaise, for serving

Steps:

  • Cut both meats into small pieces. Grind through the large holes of a meat grinder. Combine in a bowl, then grind together through small holes of grinder. Divide into 4 equal parts (each about 5 3/4 ounces). Form into patties, each about 3 1/2 inches in diameter.
  • Preheat grill to medium-high. Season both sides of burgers with coarse salt. Grill until a meat thermometer inserted in centers reads 168 degrees, about 5 minutes a side, placing cheese on burgers in last minute. Meanwhile, grill muffins until toasted, 30 seconds. Sandwich burgers on muffins with tomato, avocado, lettuce, and mayonnaise.
