TURKEY BURGER WITH PEACHES AND BLUEBERRIES
Sweet peaches and juicy blueberries lend vibrant life to these tasty turkey burgers, balanced beautifully by creamy Monterey Jack cheese and a hint of chili powder. Serve alongside a fresh green salad or oven baked potato wedges for a healthy yet satisfying meal the whole family will love.

- Finely chop one of the peaches; add ground turkey, salt, and pepper. Shape turkey mixture into four 1/2-inch-thick patties (if necessary, dampen hands first). Grill on the rack of an uncovered grill directly over medium-high heat for 4 to 5 minutes per side or until no pink remains (165°F). Add cheese; cover and cook 1 minute more.
- Meanwhile, coarsely chop remaining peaches. In a large skillet combine peaches, blueberries, and chili powder. Cook, stirring occasionally, over medium heat for 5 to 6 minutes or until heated through and juices are beginning to form.
- Top each piece of garlic bread with one turkey burger and some of the peach mixture. If desired, top with mint and additional chili powder.

- Combine mayonnaise, honey, chipotle pepper sauce and cilantro. Refrigerate until ready to use.
- Prepare turkey burgers according to package directions for broiling.
- When burgers are cooked, top each with 1 slice cheese. Broil 1 minute or until cheese is melted.
- Spread 1½ tsp. of the mayo mixture on top and bottom half of each roll. Layer each bottom half with ¼ cup shredded lettuce, 1 slice red onion and 1 slice tomato. Top with burger with melted cheese, 2 slices avocado and 2 turkey bacon pieces. Cover with top of roll.

- Heat a nonstick skillet with a drizzle of oil over medium to med-high heat.
- Chop one slice of bacon and add it to the pan.
- While the bacon cooks, trim the tough green tops from the leek; halve the leek lengthwise, and thinly slice it into half-moons.
- Place the slices in a colander and rinse vigorously with running water, separating the layers to release the grit.
- Dry the leeks on a clean kitchen towel; and add them to the browned chopped bacon.
- Wilt the leeks for 2-3 minutes; then transfer them and the bacon pieces to a plate to cool.
- Return skillet to stove over low heat; add in 2 tablespoons oil.
- Put turkey in a bowl; add in grill seasoning, sun-dried tomatoes, and cooled-to-handle leeks and bacon; mix well.
- Form mixture into 2 very large patties no thicker than 1 inch (the patties will hang just off the sides of the bread once cooked).
- Increase heat under oil; add in the patties; cook for 6 minutes on each side.
- Heat a second skillet over med-high heat; add in the remaining bacon slices; cook bacon until crisp; transfer to paper-towel lined plate to drain.
- Season sliced tomatoes with salt.
- Place the sliced bread under the broiler; toast for 1 minute on each side.
- In a food processor, combine the herbed cheese, cream, and pepper.
- Build sandwiches: toasted bread slice, burger patty, herbed cheese sauce, bread, bacon, lettuce, tomatoes, herbed cheese sauce, and bread.

- Cut both meats into small pieces. Grind through the large holes of a meat grinder. Combine in a bowl, then grind together through small holes of grinder. Divide into 4 equal parts (each about 5 3/4 ounces). Form into patties, each about 3 1/2 inches in diameter.
- Preheat grill to medium-high. Season both sides of burgers with coarse salt. Grill until a meat thermometer inserted in centers reads 168 degrees, about 5 minutes a side, placing cheese on burgers in last minute. Meanwhile, grill muffins until toasted, 30 seconds. Sandwich burgers on muffins with tomato, avocado, lettuce, and mayonnaise.
