CRISPY CALAMARI RINGS
Lightly battered calamari with a kick. Delicious appetizer and ready in minutes! Serve with marinara or your favorite sauce for dipping.

- Preheat oil to 370 degrees F (185 degrees C) in a deep fryer, deep frying pan, or pot.
- Coat squid with garlic powder, onion powder, salt, oregano, basil, parsley, paprika, cayenne, and white pepper in a medium bowl. Mix thoroughly. Add flour and toss to dredge.
- Fry squid in the hot oil, in batches if needed, until light brown, 2 to 3 minutes. Do not overcook, or squid will be tough and chewy. Drain on paper towels. Serve with lemon wedges and marinara sauce.

This is a delicious, very easy, quick but moderately expensive recipe. Everyone I've ever fixed it for absolutely loves it!

- Preheat oil in a heavy, deep frying pan or pot. Oil should be heated to 365 degrees F (180 degrees C).
- In a medium size mixing bowl mix together flour, salt, oregano and black pepper. Dredge squid through flour and spice mixture.
- Place squid in oil for 2 to 3 minutes or until light brown. Beware of overcooking, squid will be tough if overcooked. Dry squid on paper towels. Serve with wedges of lemon.

CRISPY CALAMARI WITH PICKLED JALAPENO DIPPING SAUCE

Steps:
- Whisk together the chopped jalapenos, mayonnaise and 1 teaspoon of reserved pickling liquid. Season with salt and set aside.
- Rinse the calamari under cold running water and lightly pat dry, leaving it slightly damp. Leave the tentacles whole and cut the bodies crosswise into 1/4-inch wide rings.
- Heat the oil in a heavy pot over high heat until it registers 375 degrees F on a thermometer.
- Place the panko in a shallow bowl and season with salt and pepper. Dredge a small handful of the squid rings in the panko, tossing to coat well. Shake off any excess and, with a slotted spoon, add the rings to the oil, using the spoon to separate the rings. Cook until golden, 1 to 2 minutes. Using the slotted spoon, transfer the rings to paper towels to drain. Season with salt and pepper. Repeat with the remaining ingredients. Serve with the pickled jalapeno dipping sauce.

KOREAN CALAMARI

Steps:
- Put the sushi rice on to cook following the package instructions or in a rice cooker following its instructions.
- Cut the tentacles out of the squid bodies, then slice the calamari into rings and put them in a bowl with the tentacles and the 2 tablespoons rice wine. Leave for 15 minutes, then strain, reserving the liquid in a bowl.
- To this bowl add the Korean pepper paste, soy sauce, sugar, and few dashes of sesame oil, and stir to combine.
- Put a wok or large, heavy-based frying pan over medium heat and, when it's hot, add the 2 teaspoons peanut oil.
- Add the sliced corn and scallions and stir-fry for 2 minutes
- Add the drained squid and stir-fry for another until the squid turns opaque, about 1 to 2 minutes.
- Add the sauce and stir-fry for 30 seconds or so, until piping hot. Divide the calamari between 2 bowls of the sushi rice and serve
- Freeze Note
- Fresh squid can be cut into rings and frozen with the tentacles for up to 3 months, in a resealable bag with as much air as possible squeezed out. But first check with your fish seller or supermarket that the squid has not been previously frozen. Thaw overnight in the refrigerator, on a plate to catch drips.
BLUE GINGER CRISPY CALAMARI

- In a small frying pan, combine the cumin, coriander, fennel, and white peppercorns. Toast over medium heat, stirring, until just smoking, 4 to 5 minutes. Cool and transfer to a small serving bowl or ramekin. Add the salt and mix. Set aside. Fill an electric fryer with the oil to the designated mark, or fill a small stockpot one-third full. Heat the oil to 375°F. Place a flat strainer in a large bowl into which it just fits and fill the bowl with the Thai Lime Dipping Sauce. In another large bowl, combine the flours. Working in batches, place the calamari in the first bowl and marinate for 10 seconds only. Using the strainer, lift the calamari from the bowl and transfer it to the bowl with the flours. With a second flat strainer, dip and lift the calamari in the flours, coating it so no moisture is detectable. Shake the squid in the strainer to remove all excess coating. Transfer the squid to the oil and fry only until the bubbling sound dies away, 30 to 45 seconds. (The calamari will have colored to a golden brown.) Using a flat strainer, transfer the squid to paper towels to drain. Season the squid with the flavored salt, garnish with the scallions, and serve immediately with the dipping sauce.
