Really good and quick. My Mom used to make this all the time, although once she served it to guests and forgot to add the shrimp. Not quite the same that way! Try it, even the shellfish-shy will become believers.

3 cups rotini pasta
3 tablespoons butter
1 tablespoon olive oil
3/4 lb raw shrimp, peeled and deveined
2 tablespoons finely chopped shallots
1 garlic clove, minced
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
1/2 teaspoon hot pepper sauce
1/4 teaspoon grated lemon peel
salt and pepper

Steps:

  • Cook rotini according to package directions, drain.
  • Meanwhile, in a large skillet melt butter and oil and sauté the shrimp, shallots and garlic until almost done.
  • Add remaining ingredients and continue cooking until shrimp is tender.
  • Stir in hot cooked rotini until evenly blended.

4 quarts water
8 ounces uncooked spiral pasta
1-1/2 pounds uncooked medium shrimp, peeled and deveined
CREAMY LEMON SAUCE:
1 tablespoon butter
2 tablespoons all-purpose flour
1-1/2 cups 2% milk
1/3 cup white wine or chicken broth
1 tablespoon grated lemon zest
1 teaspoon dill weed
1 garlic clove, minced
3/4 teaspoon salt
1/8 teaspoon white pepper
1/4 cup finely chopped green onions

Steps:

  • In a Dutch oven, bring water to a boil. Stir in pasta; return to a boil. Boil, uncovered, for 5 minutes. Add shrimp; boil 3 minutes longer or until pasta is tender and shrimp turn pink., In a saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in the wine or broth, lemon zest, dill, garlic, salt and pepper. Drain pasta and shrimp; place in a serving bowl. Add sauce and toss to coat. Sprinkle with onions.

1 ½ cups chopped fresh broccoli
1 (16 ounce) package uncooked rotini pasta
½ cup olive oil
4 cloves garlic, chopped
1 pinch crushed red pepper flakes
1 cup chicken broth
½ cup lemon juice
salt and ground black pepper to taste
¼ cup freshly grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the broccoli, and cook, uncovered, for 3 minutes. Remove the broccoli with a slotted spoon; set aside. Stir the rotini into the same pot, and return to a boil. Cook uncovered, stirring occasionally, until the pasta is cooked through, but still firm to the bite, about 8 minutes. Drain.
  • Heat olive oil in a skillet over medium heat; cook and stir the garlic and crushed red pepper for 1 minute. Stir in the broccoli, chicken broth, lemon juice, salt, and black pepper. Bring to a boil; reduce the heat to medium-low and simmer until the broccoli is tender, about 5 minutes. Stir in the drained pasta; cook over low heat for 1 minute. Stir in the Parmesan cheese.

2 tablespoons fresh lemon juice
5/8 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Bring 6 cups water to boil in large saucepan. Add pasta; cook according to package directions, omitting salt and fat. Add broccoli during last 3 mins of cooking; drain.
  • Heat oil in a large skillet over high. Add shrimp to pan; saute 2 mins. Stir in rind; cook 1 min. Add pasta mixture, butter, lemon juice, and salt to pan; toss to coat. Sprinkle with pepper. Serve immediately.

  • Add shrimp to alfredo sauce and heat on medium.

  • In a large pot, cook broccoli in boiling water until tender. Drain broccoli, but reserve cooking water.
  • Reusing broccoli cooking water, cook rotini pasta until al dente. Drain and remove pasta.
  • In a large pot, saute the garlic in the olive oil. Add the cooked pasta, broccoli, grated Parmesan cheese and toss together. If desired, add salt and pepper to taste.
