BLUEBERRY BAGELS RECIPE

Steps:
- In a small bowl, mix 1 ¼ cup warm water and 2 tbsp sugar.
- Pour in 1 pack of yeast and allow to rest for 5 minutes and it gets foamy.
- In a bowl,mix 3 ½ cups all purpose flour and 1 ½ tsp salt.
- Make a well in the center and pour the water and yeast mixture.
- Mix well.
- In a small dish, coat 1 cup blueberries with ¼ cup flour.
- Fold the blueberries into the bagel dough.
- Knead, by hand or with a mixer, for about 10 minutes.
- Cover and let rise about 1 - 1 ½ hours or until it has doubled in size.
- Divide the dough into 8 balls.
- Using your thumb, make a hole in the center.
- Set on a baking sheet and let rise for 30 minutes.
- While the bagels are rising, in a stock pot, boil water.
- After their last rise, put the bagel in the boiling water. Flip after 1 minute and allow to boil on the other side for 1 minute. (For extra chewy bagels, allow 2 minutes per side.)
- Put back on a baking sheet. Bake at 425 for 20 minutes.

BLUEBERRY BAGEL BREAD PUDDING
Use day-old blueberry bagels from the bargain rack. Wonderful flavors in this bread pudding. The baking time varies depending on your baking dish size and depth. Serve with Derf's Recipe#13681 or any Custard Sauce on Zaar. Whipped Cream is nice as a topping as well. An orignial recipe.

- Preheat oven to 400 degrees F or 375 degrees F. (See note).
- Generously, butter 9 x9 inch glass baking dish or 8 individual baking dishes.
- Place torn bagels in large mixing bowl; pour over milk and cream.
- Let absorb for about 10 minutes.
- Meanwhile, melt butter and let it cool. When cooled, mix with beaten eggs and remaining ingredients.
- Combine with bagel mixture, distributing blueberries evenly in mixture.
- Pour into prepared baking dish; place in center of oven. Bake uncovered for about 35-40 minutes or until knife inserted in center come out clean.
- NOTE: If using Soufflé or deeper dish for baking the entire pudding, reduce temperature to 375 degrees F. and allow for longer baking time; test at 40 minutes.
- If using individual dishes, bake at 375 degrees F. and reduce baking time to 30 minutes, test for center for doneness on each.

- Combine 2 cups bread flour, yeast, honey, salt, sugar, cinnamon and warm water in the bowl of a stand mixer fitted with a dough hook attachment. Mix on low, slowly add 2 more cups of flour.
- Mix on low until most of the loose flour has been worked into the dough and the dough looks shredded, about 2 minutes. Add the blueberries. Dough may get wet as they incorporate, add more flour as necessary. Increase the speed to medium low and continue mixing until the dough is stiff, smooth, and elastic, about 8 to 9 minutes more. Add more flour if necessary.
- Shape the dough into a ball, place it in a large oiled bowl, and turn it to coat in oil. Cover the bowl with a damp towel and let the dough rise in a warm place, until it is puffy and springs back when you poke it, about 20 minutes. It will not double in size.
- While the dough rises, preheat the oven to 425°F. Fill a saucepan with water and bring to a boil over high heat, then reduce heat to medium low and let simmer. Cover until you’re ready to boil the bagels. Line a baking sheet with parchment paper greased with oil or cooking spray. Place a metal rack inside of a second baking sheet and set aside.
