BLUEBERRY BOURBON BARBECUE SAUCE

This simple sauce with a little heat tames with sweet flavors is all you will need for the grilling season. Enjoy over chicken, pork, beef or turkey.

1 tablespoon olive oil
1/2 cup red onion, diced
4 garlic cloves, chopped
1 jalapeño (seeds and white membrane removed for less heat)
1/2 cup bourbon
2 cups fresh blueberries
1/2 cup ketchup
1/3 cup cider vinegar
2 tablespoons brown sugar
1 tablespoon molasses
1/8 teaspoon ground allspice

Steps:

  • In a medium saucepan heat oil over medium heat. Add onion and cook until fragrant and soft. Stir in garlic and jalapeño and cook for about 1 minute. Add bourbon and turn up the heat bringing the mix to a boil. Cook until the bourbon has evaporated (about 4-5 minutes). Stir in blueberries, ketchup, vinegar, brown sugar, molasses and allspice. Return to a boil. Simmer for about 20 minutes or until the sauce has thickened. Let cool. Puree half of the sauce in a food processor or blender. Return the sauce back to the pan and mix together. Store in the refrigerator for up to two weeks.

1-2 jalapenos, seeded and chopped
½ cup bourbon
2 cups fresh or frozen (not thawed) blueberries
½ cup ketchup

1/4 cup Crosby's Molasses
1 tbsp brown sugar + 1 tsp
2 tbsp apple cider vinegar
1 tbsp prepared mustard
1 tsp chipotles in adobo
1 cup blueberries
1/4 cup water
salt & pepper

Steps:

  • Heat the oil in a saucepan over medium-low heat. Add the onions and cook for 5 minutes.
  • Stir in garlic cooking for an additional minute. Pour in bourbon and cook off for 1 minute.
  • Reduce the heat to low. Add the ketchup, molasses, brown sugar, vinegar, mustard, chipotle, blueberries, water and a pinch of salt & pepper.
  • Simmer 30 minutes.
  • Taste after simmering and adjust salt & pepper as needed.

1 cup water
1 pt blueberry, very ripe
ice
2 oz bourbon
1 oz lemon juice
1 oz blueberry simple syrup
ginger beer, to taste
lemon wedge, for garnish

Steps:

  • In a small saucepan over medium heat, combine the brown sugar and water. Bring to a boil, stirring to dissolve the sugar completely.
  • Add the blueberries to the pot and boil until the berries begin to burst, about 15 minutes. Remove from heat and cool for 5-10 minutes.
  • Transfer the mixture to a blender and blend until smooth.
  • Strain the syrup through a fine-mesh sieve or cheesecloth. Store in an airtight container in the refrigerator for up to 1 month.
  • In a cocktail shaker filled with ice, combine the bourbon, lemon juice, and simple syrup. Shake vigorously for 20 seconds.
  • Strain into a glass filled with ice and top with ginger beer.
  • Garnish with lemon wedge.

1/2 cup butter or 1/2 cup margarine
2 medium onions, finely chopped
3 cloves crushed garlic
3 green chilies, seeded and finely chopped
4 cups ketchup
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1 tablespoon honey
2 tablespoons soy sauce
1 cup brown sugar
1 teaspoon dry mustard
1/2 cup Bourbon
ground black pepper

Steps:

  • In a deep frying pan (Dutch oven?), melt the butter and gently fry the onions, chilies and garlic for about 5 minutes.
  • Lower the heat and add all the other ingredients, except the Bourbon, stirring after each addition.
  • Simmer for about 10 minutes, stirring frequently, then add the Bourbon and cook for another 3-5 minutes.
  • Let the sauce cool, stir now and then.
  • Put in clean jars or wide neck bottles and label.
  • Store in a cool dark place.
