3 cups fresh or frozen blueberries
3 tablespoons sugar
1 tablespoon cornstarch
1/3 cup old-fashioned oats
1/3 cup packed brown sugar
3 tablespoons all-purpose flour
2 tablespoons chopped almonds
1/8 teaspoon ground cinnamon
3 tablespoons cold butter
Vanilla ice cream

Steps:

  • In a greased 9-in. microwave-safe pie plate, combine the blueberries, sugar and cornstarch. Cover and microwave on high for 7-8 minutes or until thickened, stirring twice. , Meanwhile, in a small bowl, combine the oats, brown sugar, flour, almonds and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle over blueberry mixture. , Microwave, uncovered, on high for 2-3 minutes or until butter is melted. Serve with ice cream.

1 teaspoon unsalted butter, softened
2 pints blueberries, or any other berry
1/2 cup granulated sugar
1 tablespoon cornstarch
1/2 cup apple cider or orange juice
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup brown sugar
1/2 cup granulated sugar
6 tablespoons unsalted butter, cold and cut into cubes
1/2 cup toasted oats
1/2 cup chopped, toasted almonds

Steps:

  • Preheat the oven to 375 degrees F. Lightly butter an 8-inch square baking dish.
  • For the filling: In a bowl, add the blueberries, sugar, cornstarch, cider, and vanilla, Carefully mix the ingredients together with a spatula, leaving the blueberries whole. Set aside while you assemble the topping.
  • For the topping: In the bowl of a mixer, add the flour, sugars, and butter. Using the paddle attachment, incorporate the butter into the dry ingredients until the mixture looks mealy or crumbly. (This can be done by hand.) Stir in the oats and nuts.
  • Pour the filling into an 8-inch square baking dish and evenly distribute the topping over the fruit. Bake for 30 minutes, or until the topping is golden brown and the fruit is bubbling. Cool slightly and serve warm.

1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°. In a large bowl, combine blueberries, rhubarb, sugar and flour. Steps:

  • Preheat oven to 375 degrees. Make the filling: Mix blueberries, sugar, cornstarch, lemon juice, and salt in a bowl. Transfer to an 8-inch square baking dish.
  • Make the topping: Stir together flour, oats, baking powder, and salt. Cream butter and sugar in a mixer until pale and fluffy. Stir dry ingredients into butter. Using your hands, squeeze topping pieces together into clumps.

1 quart fresh blueberries (about 4 cups you can use more blueberries if desired I most always do!)
3/4 cup sugar (or (to taste)
2 tablespoons cornstarch
1 cup water
2 -3 tablespoons lemon juice
1/2 teaspoon vanilla
1 cup all-purpose flour
3/4 cup regular oats
1 cup brown sugar
1 1/2 teaspoons cinnamon
1/2 cup butter, melted (no substitutes)

Steps:

  • Set oven to 350 degrees F.
  • Prepare an 11 x 7-inch baking dish (can use a 13 x 9-inch but it will not be as high).
  • Spread the blueberries in the bottom of the prepared baking pan.
  • In a small saucepan over medium heat combine the sugar, cornstarch, water and 2-3 Tbsp lemon juice; cook and stir until thick and clear, then add in the vanilla.
  • Pour over, then gently stir in the cooked mixture with the blueberries.
  • In a bowl combine the flour with oats, brown sugar and cinnamon.
  • Add in the melted butter; mix until crumbly (I start mixing with a spoon then finish mixing with my hands).
  • Sprinkle over the top of blueberries (there will be a couple of empty spots that is okay, there may seem like a lot of crumble but it will settle when baking).
  • Bake for 30-35 minutes, or until blueberry mixture bubbles and the topping is brown.
  • Serve with ice cream-- enjoy!

1 1/2 cups/200 g ground almonds
1 cup/110 g rolled oats, toasted
4 cups blueberries
1/4 cup/55 g granulated sugar
2 tablespoons flour
Slightly sweetened vanilla-flavored whipped cream, for serving, optional

Steps:

  • For the grumble topping: Heat the oven to 400 degrees F/200 degrees C. Butter an 8-by-8-inch baking dish.
  • Cream together the butter and brown sugar. Cut in the ground almonds and oats. (You could add some cinnamon and ginger if you like, too, although I prefer it plain.) Set aside.
  • For the filling: Toss the fruit with the granulated sugar and flour and tumble into the baking dish.
  • Sprinkle the crumble mixture evenly over the fruit and press to pack it down a bit. Bake until the fruit is soft and the top crisp, about 40 minutes. Let sit about 15 minutes before serving. If you like, serve with sweetened vanilla-flavored whipped cream.
