1 cup mango, diced
1 cup blueberry
1 ½ cups water
popsicle mold

Steps:

  • Dice mango into thin slices.
  • Distribute the blueberries and mangos evenly among the popsicle molds. Fill in the gaps of air with water.
  • Freeze the popsicles for at least 5 hours.
  • Take the frozen popsicles out of the ice mold and enjoy!

10 ounces blueberries
1 1/4 cups water
1 tablespoon lemon juice (approximately)
1/2 cup sugar (approximately) or 1/2 cup artificial sweetener, of choice
1 tablespoon cornstarch or 1 tablespoon other thickener
2 cups plain yogurt (I used fat free)
12 ounces cream cheese, softened (I used neufchâ,tel)
1 tablespoon lemon juice (approximately)
1 cup powdered sugar (approximately)

Steps:

  • Mix 1/4 cup water with cornstarch in measuring cup. Heat blueberries in medium saucepan with sugar, remaining water and lemon juice. Add the cornstarch and water mixture. Mix and cook until thickened. Take off heat and cool.
  • Mix yogurt, cream cheese, lemon juice and sugar in mixing bowl with hand mixer until no lumps remain.
  • Layer pops and freeze one hour and then add the sticks, freeze until solid (around 4 hours or so).

This came in a recent Momsense magazine. Since blueberry season just started here in Virginia, it was the perfect find for me today. It makes wonderfully tasty and healthy pops...eight 5-ounce pops to be exact. Another win in the battle to get rid of HFCS in this house.

1 pint fresh blueberries
1 cup vanilla yogurt
1 cup milk
honey or maple syrup, to taste

Steps:

  • Blend blueberries, yogurt, milk, and sugar until smooth.
  • Pour mixture into eight 5-ounce paper cups.
  • Place foil over the top of each cup.
  • Pierce the center of the foil and insert a wooden craft stick as the handle.
  • Freeze up to six hours.
  • Before serving, dip cups in warm water for a few seconds.
  • Remove paper and foil.
  • Send children outside to drip and make a mess. Stand at window and wave at them while you eat yours.
