SLOW-COOKER HAM WITH TURNIPS



Slow-Cooker Ham with Turnips image

2 Granny Smith apples, diced (with skin)
3 cloves garlic, smashed
4 sprigs thyme
8 large sprigs parsley
1 tablespoon pickling spice
1/4 cup packed brown sugar
1 4 -to-5-pound smoked picnic ham (pork shoulder)
1 pound medium turnips, peeled and cut into 2-inch pieces
2 cups dry white wine
1 pound frozen chopped winter greens (such as turnip greens, kale or spinach), thawed

Steps:

  • Put the apples, garlic, thyme, parsley, pickling spice and brown sugar in a 5-to-6-quart slow cooker. Add the ham and surround it with the turnips. Pour in the wine and 2 cups water. Cover and cook on low, 7 hours.
  • Remove the ham from the slow cooker. Add the greens to the cooker and stir to combine with the liquid. Return the ham to the cooker, cover and cook on high 30 minutes.
  • Slice the ham and serve with the turnips, apples and greens.

8 cups green cabbage, thinly sliced (about 1/2 of large head green cabbage)
2 large carrots, peeled and shredded
1/2 cup white wine
10 ounces ham steaks, cut into bite-size pieces
1 large apple, cored and diced
1 tablespoon cider vinegar
1 1/2 teaspoons caraway seeds
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Heat oil in a large non-stick skillet over medium-high heat.
  • Add cabbage and carrot and cook, covered, for 5 minutes, stirring occasionally.
  • Stir in wine and simmer for 1 minute.
  • Add ham, apple, vinegar, caraway, salt and pepper.
  • Simmer on medium heat for 5 minutes, uncovered, stirring, until cabbage and apples are tender and most of the liquid has cooked off.
  • Cover and let stand a few minutes before serving.

BOILED AND ROAST HAM

I use a boil and roast method which makes the ham really succulent and tender. This recipe works equally well served hot with roast potatoes, cauliflower-cheese, braised leeks and Duke of Cumberland sauce, or cold with salad etc and yes it makes great ham sandwiches with good bread and english mustard.

1 piece of raw cured ham (or Gammon smoked or unsmoked. Soaked to reduce salt if necessary)
water, for boiling
4 tablespoons oil
20 -30 whole cloves
2 tablespoons clear honey
2 teaspoons coarse grain mustard

Steps:

  • First bring a large pan of water to the boil there should be enough water to cover the ham and the pan should be big enough so that the ham does not touch the sides.
  • Lower the ham into the boiling water and reduce the heat to a simmer with just occasional bubbles breaking the surface (unless the ham is very salty there should be no need to skim the scum from the top).
  • The ham should be cooked for 15 minutes to the pound.
  • If you need to top up the water to keep the ham covered, use boling water.
  • Meanwhile preheat the oven to 200C (hot, place in it an open roasting tin lined with foil'coz the honey really bakes on) with 4 tablespoons of oil and prepare a mixture of 2 tablespoons of honey to 2 teaspoons of wholegrain mustard.
  • Remove the ham from the boiling pan and drain it.
  • Remove any skin and score the fat underneath into diamond shapes with a sharp knife.
  • Stud each diamond with a whole clove pushed through the fat.
  • Spread the honey-mustard mixture over the ham and place into the roasting tin.
  • Bake for 5 minutes the pound or for a maximum of half an hour, basting every 10 minutes.
  • Remove from the heat and leave for 10 minutes to set before carving or leave to cool before wrapping in foil or clingfilm.

3 small turnips, peeled and sliced 1/8 inch thick

  • In a saucepan, saute onion in butter until tender. Stir in flour, salt if desired, basil and pepper. Gradually stir in water and milk. Bring to a boil over medium heat; boil for 2 minutes, stirring constantly. Remove from the heat. In a greased 11x7-in. baking dish, layer potatoes, turnips and ham; pour sauce over all. Cover and bake at 350° for 1-1/4 hours or until potatoes are tender. Garnish with parsley.

6 -8 small onions, peeled

Steps:

  • Remove the ham from its wrappings. Cut off the skin and make sure you remove the plastic thing that covers the end of the bone.
  • Stud the ham with the whole cloves, distributing them evenly over the surface.
  • Put ham and onions into a very large pot and cover with COLD water. Its important to use cold water because it draws the excess salt out of the meat and makes a more flavorful broth.
  • Bring to a boil slowly over medium heat. Reduce heat and simmer 15 minutes.
  • Add all the veggies except the cabbage. Raise heat and bring to a boil again. Reduce heat and simmer another 15 minutes or until the largest potatoes are nearly cooked.
  • Add the cabbage wedges. Raise heat and bring to a boil. Simmer another 10-20 minutes until cabbage is cooked but not mushy.
  • Use a large, slotted, serving spoon to remove all the veggies to a large serving dish.
  • Lift ham onto a platter and carve off a suitable number of servings for the meal.
  • Serve each person a slice of ham and a portion of each vegetable. Grind black pepper over the plate and offer butter for the potatoes and other roots if desired.

2 cups chopped cooked ham
1 ½ cups frozen Southern-style hash brown potatoes, thawed
5 tablespoons unsalted butter, divided
1 ½ cups chopped onions
5 cups chopped cabbage
½ cup shredded carrots
3 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon dry mustard
¼ teaspoon white pepper
2 cups milk, or more as needed
1 cup grated sharp Cheddar cheese
3 slices bacon strips, cooked and crumbled
¾ cup buttery round crackers, crumbled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Spread out chopped ham on the bottom of the prepared dish.
  • Set hash browns on a microwave-safe plate and microwave on high power for 1 minute and 30 seconds. Potatoes should be thawed and feel slightly warm to the touch, but not be cooked. Set aside.
  • Melt 2 tablespoons butter in a large skillet over medium heat and cook onions until they are just starting to turn clear, 2 to 3 minutes. Add chopped cabbage and continue to cook, stirring often, until cabbage wilts down a little but is still crisp, 3 to 5 minutes. Stir in shredded raw carrots and microwaved hash browns, then add mixture to the baking dish.
  • Wipe out the skillet and melt the remaining 3 tablespoons butter over medium heat. Combine all-purpose flour, salt, dry mustard, and white pepper in a small bowl. Sprinkle flour and seasonings over the melted butter and stir, constantly, until flour and butter are well mixed and the mixture is bubbly, about 3 minutes. Allow to bubble for 1 minute, while stirring.
  • Gradually pour in milk, stirring constantly to avoid lumps. Cook, stirring, until the mixture boils and thickens, 3 to 5 minutes. If the mixture is too thick, stir in an additional 3 to 4 tablespoons milk. Remove from heat.
  • Add half of the grated Cheddar cheese and stir until it is melted, then add the remaining half and repeat.
  • Pour sauce over the casserole and top with crumbled bacon and cracker crumbs.
  • Bake in the preheated oven until the top is bubbly and brown, 30 to 35 minutes. Serve warm.

Have fond memories of my grandma making this on her stove. Is comfort food at its best. See my recipe for Cottage Ham. This recipe utilizes that recipe first. Not normally a white-bread lover, but reminds me of my childhood to make this ham into the best leftover sandwich ever. White bread, cottage ham, and Miracle Whip. Like it best with the ham warmed up. Don't salt until you taste it. The ham is salty. Might be good served with a horseradish sauce on the side or a grainy mustard. Unsure of yield.

1 medium onion, quartered
5 carrots, peeled, cut bite-size
5 potatoes, peeled, quartered

  • Place the Cottage Ham in a large pot. Cover with cold water and cook at medium heat for 30 minutes. Add the onion, carrots, potatoes, cabbage and pepper. Cover with more water if necessary. Steps:

  • Combine the turnips, carrots, onion, bay leaf, ham hocks and chicken broth in a large pot. Bring to a boil. Reduce to a simmer and cook until vegetables are tender, about 30 minutes.
  • Remove the ham hocks from the broth. Remove the meat from the bone, trim of all fat and cut into thin strips.
