TRADITIONAL RUSSIAN BORSCHT

Traditional Russian Borscht image

Borscht is a soup that is very popular in many Eastern and Central European countries. It is made with beetroot, which gives it it's signature reddish-purple jewel color. Different countries have their own variations of borscht; Russian borscht is made with some type of beef or sausage. I am making mine with both; Using both meats gives the soup superb flavor. This is a true Russian classic.

Categories     Stew

Time 3h10m

Yield 8-10 serving(s)

Number Of Ingredients 15

2 tablespoons vegetable oil
1 lb stew meat
16 ounces roll bulk pork sausage
8 cups beef stock
1 (14 1/2 ounce) can diced tomatoes
4 large garlic cloves, minced
1 large brown onion, diced
3 large beets, peeled and cut into 1 inch chunks
4 carrots, peeled and chopped
1 large russet potato, peeled and cut into 1/2 inch cubes
2 cups thinly shredded cabbage
3/4 cup chopped fresh dill
1 tablespoon red wine vinegar
salt and pepper, to taste
sour cream, for garnish

Steps:

  • In a heavy stockpot, heat oil over high heat. Add the stew meat and sear until nicely browned. Remove from pot and set aside; immediately add the pork sausage, and stir, breaking it up into pieces while it browns. When sausage has browned nicely, return the stew meat to the pot, as well as the tomatoes, garlic, onion and beets. Add the beef stock, bring to a boil, then reduce to a simmer. Cover and simmer for 2 hours. After 2 hours, add the carrots and potatoes. Simmer, covered, for 1 more hour, then add the cabbage, 1/2 cup of the dill, and the red wine vinegar (and taste for salt and pepper addition at this time). Cover and simmer for 15 more minutes. To serve, ladle soup into a bowl and garnish with a dollop of sour cream and fresh dill.

Time 3h5m

Yield 10 servings

Number Of Ingredients 19

1/2 pound bacon, diced
1 pound lean beef chuck, cut into bite-size pieces
1 cup chopped yellow onions
1 carrot, peeled and grated
1 tablespoon minced garlic
2 teaspoons dried oregano
2 teaspoons dill seeds
2 bay leaves
3 tablespoons red wine vinegar, plus more to taste
2 quarts water
1 teaspoon salt
1 teaspoon ground black pepper
1 1/2 pounds red beets, greens tops removed, roasted and grated
1 tablespoon vegetable oil
1 large russet potato, peeled and diced
6 cups shredded green cabbage
Salt and freshly ground black pepper
1 cup sour cream
1/2 cup chopped fresh dill

Steps:

  • Preheat oven to 350 degrees F.
  • Place the bacon in a Dutch oven or stockpot and cook, stirring, over medium-high heat until the fat begins to render, about 3 minutes. Add the beef and cook, stirring, until brown on all sides, about 5 minutes. Remove the meat from the pan with a slotted spoon and drain on paper towels.
  • To the fat in the pan, add the onions and carrots, and stir to coat. Cook until soft, about 4 minutes. Add the garlic, oregano, dill seeds, and bay leaves and cook, stirring, for 1 minute. Add the red wine vinegar and stir to deglaze the pan. Return the meat to the pot and add the water, salt, and pepper and bring to boil. • When the meat is tender and falling apart, add the beets, potatoes, and cabbage. Simmer over low heat for another 30 minutes. Season with additional red wine vinegar, salt and freshly ground black pepper, to taste.
  • Ladle borscht into bowls and garnish with a dollop of sour cream and pinch of fresh dill.

Borscht Stew image

This isn't the traditional borscht consomme, with just beets, this is a stew, full of delicious root vegetables, comfort in the winter when you want something hearty and flavourful

Provided by MummaKat

Categories     Polish

Time 4h30m

Yield 8 bowls, 8 serving(s)

Number Of Ingredients 14

2 brown onions, sliced
3 ounces beef drippings
4 lbs stewing beef
1 pinch salt
1 pinch pepper
1 pinch herbes de provence
1 bay leaf
4 ounces butter
2 carrots, large
1 leek
1 turnip
1 cabbage, medium sized
2 beets, large
2/3 cup sour cream

Steps:

  • Brown the sliced onions in hot beef drippings in a large saucepan. Cut the beef into 2" cubes, discarding as much fat as possible, then add to the browned onions and quickly sear on all sides, adding a little more drippings if necessary, but try to use as little fat as possible.
  • Add the salt, pepper, herbes de provence, and bay leaf. Cover with water about 1/2" above meat. Bring to a boil, skimming off all froth that rises to the surface, then simmer for 2 hours or until the meat is tender.
  • Melt butter in another large saucepan. Cut the carrots, leek, and turnip into 1/4" slices and add to the sizzling butter.
  • Stir for 2 minutes, then add the shredded cabbage. Simmer uncovered for 10 minutes. Lift the cooked meat out of the stock and add to the fried vegetables. Strain the stock and add it to the meat and vegetables. Simmer for 2 hours.
  • Shred the beets with a coarse grater or food processor and add 3 minutes before you are ready to serve the soup, then reheat. Taste and adjust the seasoning if necessary. Add the sour cream and serve hot with an additional fluff of sour cream if desired.
