THE ULTIMATE BAKED BEANS
Steps:
- Special equipment: 4 individual crocks
- Preheat the oven to 350 degrees F.
- Put the molasses, ketchup, mustard, and chiles in a blender and puree. Scrape that into a big bowl, add the beans and season with salt and black pepper, and gently toss so that the beans are coated with the molasses mixture. Divide the mixture evenly amongst individual crocks. Top each crock with a piece of pancetta, sprig of rosemary and a drizzle of extra-virgin olive oil. Bake in the oven until the bacon is browned and fat is rendered, about 25 minutes.

BEST BAKED BEANS
These beans are truly the most fantastic baked beans we have ever had. I can't even begin to describe them. I even had them for lunch as a main dish. We used leftover smoked pulled pork, but you can substitute 1/2 pound crumbled cooked sausage if you don't have any on hand.

Steps:
- Pick through the beans and remove any pebbles. Place beans in a colander and rinse under cold water. Transfer the beans to a large pot or bowl, add water to cover by 2-inches and let soak overnight. The beans will rehydrate and swell to twice their size. Drain and rinse the beans, then put in a saucepan. Cover the beans with fresh water and place over medium heat. Add the remaining ingredients, except for the bacon. Simmer, stirring occasionally, for about 25 minutes or until the beans are tender but not breaking apart. Transfer the beans and broth to a 2-quart oven-safe dish. Lay bacon slices in a single layer on top of the beans. Bake in a preheated 325 degree F oven for 45 minutes to 1 hour to cook the bacon.
BOBETTE'S BAKED BEANS
For years, any time my mum makes her baked beans people ask for the recipe. There are rarely any leftovers, and the first thing people will ask at get-togethers is 'Who made the baked beans?' These baked beans are so simple to make, and so delicious you'll wish you would have doubled the recipe! I tried tweaking the recipe once...the family consensus was 'Don't EVER mess with the recipe again.'
