Steps:
- To make the brine: in a large nonreactive bowl combine the bourbon, salt, brown sugar, lemon slices, garlic, peppercorns, mustard seeds, coriander seeds, and 4 cups water; whisk until salt and brown sugar dissolve.
- Trim any sinews or excess fat off the breasts; rinse breasts under cold running water, then drain.
- Place the chicken breasts in a large zip-lock plastic bag; add in the brine.
- Let breasts brine in the refrigerator for 2-3 hours, turning breasts twice so they brine evenly.
- Set up grill for direct grilling and preheat to high-if using a gas grill, place all the wood chips in the smoker box or in a smoker pouch and run grill on high until you see smoke; if using a charcoal grill, preheat it to high, then toss all of the wood chips on the coals.
- When ready to grill, drain the brine off the chicken and blot the breasts dry with paper towels; discard brine.
- Lightly brush both sides of the breasts with the melted butter; brush and oil the grill grate, then arrange chicken breasts on the hot grate, placing them on a diagonal to the bars.
- Grill the breasts for 2 minutes, then rotate them a quarter turn to create an attractive crosshatch of grill marks.
- Continue grilling the breasts on that side for 2 minutes longer.
- Turn breasts over and grill until cooked through, 4-6 minutes longer, again rotating them after 2 minutes to create grill marks.
- **The total cooking time will be 8-10 minutes, depending on the thickness of the breasts.
- Test for doneness-poke a breast in the thickest part with your finger; it should feel firm to the touch; or to be safe, you can insert a thermometer in one end-170° is done.
- Transfer grilled breasts to a platter and serve at once with your favorite barbecue sauce.

CIDER-BRINED FRIED CHICKEN
Steps:
- In a large bowl, whisk together cider and salt until salt dissolves. Add chicken pieces and enough water to coat and soak 1 hour in the refrigerator. Chicken should be completely submerged in brine.
- In a large pot, heat vegetable shortening until a deep-fry thermometer reaches 325 degrees F. Line a sheet tray with a wire rack.
- In a large bowl, whisk together eggs, cayenne and black pepper. In a paper bag, shake together flour and cornstarch. Drain chicken from brine and dip in batches first in egg mixture then in flour mixture to coat. Set on wire rack to let coating sit for 10 minutes. In 2 batches, fry chicken until golden brown on both sides and cooked through, 15 to 20 minutes, depending on the size of the piece. Remove from oil to drain on paper towel-lined plate.
PERFECT CHICKEN BRINE
Brining chicken adds tons of flavor and keeps the meat moist. Several years of experimenting with ingredients and method and I finally found the right combination for my perfect chicken brine.

BRINED AND FRIED CHICKEN
To ensure a crispy, golden coating and well-cooked meat, keep an eye on the temperature of the oil; it needs to come back up to 350 degrees before adding the second batch of chicken.

Steps:
- Combine 1 cup water with remaining brining ingredients in small saucepan over medium heat, stirring just until salt and sugar are dissolved. Remove from heat and cool to room temperature. Combine brine mixture with remaining cold water in a large bowl or deep baking dish. Add chicken to bowl, making sure chicken is covered with the brining liquid. Store in fridge at least 8 hours and up to 24 hours.
- Remove chicken from brining liquid and pat dry. Combine flour, cornmeal, salt, and red pepper flakes in a shallow dish. Whisk eggs in another shallow dish. Coat chicken in flour mixture, then eggs, and again in flour mixture. Transfer to a rimmed baking sheet lined with a cooling rack.
- Heat oil to 350 degrees in a large pot. Working in 2 batches, fry chicken for 15 minutes, turning once, until chicken is deep golden brown. Transfer to a paper towel-lined plate to drain. Serve hot or cold.

BUTTERMILK-BRINED FRIED CHICKEN WITH SAGE
There is no true definition of buttermilk, according to Anne Mendelson, the author of "Milk." Originally it was the liquid that separated from churned butter. In warm climates, like the American South or India, it refers to sour milk, since unrefrigerated milk turns within hours. Today most buttermilk is made from milk to which cultures of lactic-acid bacteria are added.

Steps:
- Twenty-four hours before cooking, prepare the brine: In a large bowl, whisk 1/4 cup plus 2 tablespoons water with the remaining brine ingredients until the salt has dissolved. Submerge the chicken pieces in the brine. Cover and refrigerate. (To save space, you can also put the chicken and brine in a large sealable bag.)
- When ready to cook, prepare the breading by whisking together 2 cups of the flour and 2 teaspoons kosher salt in a medium bowl. In a separate medium bowl, whisk the eggs to break them up, then whisk in the buttermilk. In a large bowl, whisk together the remaining 2 cups of flour, the cornmeal, sage, mustard, paprika, thyme and 1 tablespoon kosher salt.
- Dredge the chicken in the plain flour, then in the buttermilk, then in the cornmeal mixture, taking care not to let the breading get too thick. Let sit at room temperature for 20 minutes.
- Meanwhile, set a large 12-to-14-inch cast-iron skillet over medium-high heat and fill with oil to 11/2 inches below the top. Heat until the oil reaches 325 degrees. Working in batches, fry the chicken pieces, turning them 3 or 4 times to create an even, dark-golden crust. Cook until the internal temperature reaches 160 degrees, about 10 minutes. (Place a splatter guard over the pan as you fry.)
