CANDIED BOURBON PECANS
A simple recipe to turn pecans into candied bourbon nuts.

Steps:
- Preheat oven to 350 degrees.
- Combine all ingredients and mix until the pecans are well coated.
- Lay a piece of parchment paper on a cookie sheet and spread the pecans out on it.
- Bake for 15-20 minutes.
- Use a spatula to pull the pecans off the parchment before they permanently glue themselves. Then let them cool.

- Preheat oven to 250°. Line baking sheet with foil. In a large bowl, combine the sugar, brown sugar, cinnamon, nutmeg, cloves and salt. Stir and set aside. In a large bowl, combine the egg white, whiskey, vanilla and honey. Whisk together until frothy. Add the pecans and stir to coat. With a slotted spoon or fork, remove pecans and add them to the sugar mixture, don't dump in the extra liquid. Pour pecans out onto prepared baking sheet. Bake for 1 hour 15 minutes, stirring every 20 minutes or so. The pecans will be sticky until they cool.

BOURBON CANDIED PECANS RECIPE
Bourbon candied pecans are perfect for a special holiday snack or treat.

Steps:
- Combine first five ingredients in a medium size bowl, add pecans and stir to coat.
- Transfer pecans to a skillet and cook on medium high heat for 7 to 8 minutes. Stir continuously to prevent burning.
- Remove pecans from skillet and spread evenly on a parchment lined baking sheet.
- While the pecans are hot and gooey sprinkle with cinnamon and sugar.
- This step is optional, but I think it helps the pecans dry a little bit. Place baking sheet in a preheated oven set on 175°F on the middle rack then turn the oven off. Let the pecans sit in the oven for a hour or so.
- Once the pecans have cooled completely, place in an air tight container.

- Preheat oven to 250 degrees F (120 degrees C).
- Mix sugar, cinnamon, and salt together in a bowl.
- Whisk egg white and water together in a separate bowl until frothy. Toss pecans in the egg white mixture. Mix sugar mixture into pecan mixture until pecans are evenly coated. Spread coated pecans onto a baking sheet.

- Grease 2 baking sheets; set aside. In a large heavy saucepan over medium heat, melt butter. Stir in sugars, then the cream; cook and stir until mixture comes to a boil. Cook, stirring occasionally, until a candy thermometer reads 236° (soft-ball stage), about 20 minutes. , Remove from the heat; stir in the pecan halves, chopped pecans and bourbon. Immediately drop by tablespoonfuls onto prepared baking sheets. Let stand until pralines are set and no longer glossy. Store in an airtight container.

BOURBON OLD FASHIONED GLAZED PECANS

- Combine the bourbon and the dried cherries in a small bowl and set aside to soak for 30 minutes. In another small bowl, combine the brown sugar, salt, black pepper, and cayenne pepper and stir until well-combined. Set aside.
- Place the pecans in a large non-stick skillet over medium heat. Cook, stirring frequently, until they just start to brown and smell toasted, 3 to 4 minutes. Add the butter to the pan and stir until the butter is completely melted and the pecans are coated.
- Add the sugar and spice mixture to the pan and stir to combine. Turn off the heat and immediately pour in the cherries and bourbon. Stir for 1-2 minutes more, off heat, until everything is well incorporated.
- Return the pan to medium heat and continue to stir everything in the pan until the liquid thickens and a glaze forms on the pecans, 1 to 2 minutes longer. Transfer the pecans to a parchment-lined rimmed baking sheet.
- Using a spatula or wooden spoon, separate the pecans and spread them into an even layer on the parchment paper. Allow the pecans to cool completely. Once the pecans have cooled, zest the orange over the pecans. Transfer the pecans to a large bowl and serve
SWEET & SPICY BOURBON GLAZED PECANS
Steps:
- Soak cherries in bourbon for 30 minutes.
- Line a baking sheet with parchment paper and set aside.
- Combine the cinnamon, cayenne pepper, salt and vanilla bean paste in a bowl.
- Toast the pecans in a large nonstick skillet over medium-low heat for 3 to 4 minutes, stirring frequently so they don't burn.
- Add the butter to the pan. Stir until butter is completely melted and the pecans are coated.
- Add brown sugar, spices and vanilla to the pan. Stir well to coat.
- Remove the skillet from the heat and add bourbon and cherries. Stir for about a minute until everything is combined.
- Return the pan to the burner and cook for 1-2 minutes over medium heat, stirring constantly, until a glaze forms and thickens.
- Transfer the glazed pecans to a parchment lined baking sheet. Spread them out in a single layer to cool and harden.
- Once cool, sprinkle the orange zest over the nuts.

- Combine bourbon and dried cherries. Set aside to soak at room temperature for 30 minutes.
- Combine brown sugar, salt, pepper, and cayenne. Stir until well-combined.
- Toast pecans in large non-stick skillet over medium heat until browned and just beginning to smell toasted, 3-4 minutes. Stir and shake frequently to prevent burning. Add butter to pan. Stir and toss until completely melted and pecans are thoroughly coated.
- Add sugar and spice mixture; stir and toss until pecans are evenly coated. Turn off heat and add cherry/bourbon mixture. Stir, off-heat, 1-2 minutes, until everything is well combined.
- Return pan to medium heat; stir constantly until liquid thickens and pecans are thoroughly glazed and shiny, 1-2 minutes. Spread mixture in one layer onto parchment-lined rimmed baking sheet, separating nuts so they don't stick together. Allow to cool completely. Sprinkle nuts with orange zest. Transfer to a bowl and serve.
