There's no need to get up early on the weekend to make brunch for a crowd. With this rich, custardy French toast casserole, nearly all the prep is done in advance. Simply assemble and refrigerate overnight. About an hour before brunch time, just pop it into the oven. Whip up a fast and easy banana-caramel topping and bask in the praise of your well-fed guests.

Unsalted butter for greasing pan, at room temperature
1 loaf day-old brioche (about 1 pound)
6 large eggs
2 cups heavy cream
1 cup whole milk
2 tablespoons packed light brown sugar
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
Kosher salt
1/2 cup unsalted butter
1/2 cup packed light brown sugar
1/2 cup pure maple syrup
1 teaspoon pure vanilla extract
Kosher salt
4 ripe-but-firm bananas, sliced about 1/4 inch thick
1/2 cup walnuts, roughly chopped

Steps:

  • Butter a 9-by-13-inch baking dish.
  • For the casserole: Trim the ends from 1 loaf day-old brioche (about 1 pound) and cut into ten 1-inch thick slices. Cut each slice in half diagonally to make two triangles from each piece. (If the bread is fresh, dry it out a bit. Place the slices in a single layer on a baking sheet and bake at 300 degrees F for 10 minutes, flipping halfway through.)
  • Whisk together the eggs, cream, milk, brown sugar, vanilla, cinnamon, nutmeg and 1/4 teaspoon salt in a large bowl until well blended. Dip each triangle of bread in the custard, lightly coating each side. Shingle the pieces in the prepared pan, overlapping slightly.
  • Pour any remaining custard over the bread slices. Cover the dish with plastic wrap and place in the refrigerator for at least 6 hours or up to overnight.
  • When ready to bake, preheat the oven to 350 degrees F. Remove the casserole from the refrigerator and let rest 15 to 20 minutes at room temperature before baking. Remove the plastic wrap and bake until the casserole is golden and puffed and the custard is set, 45 to 50 minutes.
  • For the topping: bring the butter, sugar and syrup to a boil in a medium nonstick skillet over medium-high heat. Cook until the butter is melted and the mixture is begins to thicken, about 2 minutes. Add the vanilla, a pinch of salt, and the walnuts, stirring to coat. Turn off the heat and add the sliced bananas, stirring to coat evenly. Spoon the desired amount of the banana-syrup mixture over the casserole and serve any additional on the side.

Steps:

  • Butter a 9 × 13 inch baking dish. Cut French bread diagonally in 1 inch slices, arrange the slices of bread in the bottom. In a large bowl, beat together eggs, milk, cream, vanilla, bourbon and cinnamon. Pour over bread slices, cover and refrigerate overnight. Make sure that the slices are covered with the liquid mixture. I usually pour it with a measuring cup so I can slowly pour it over the bread to make sure I cover every slice. The next morning, preheat the oven to 350 degrees F. In a small saucepan, combine butter, brown sugar and corn syrup; heat until bubbling. Pour over bread and egg mixture. Again, I use a measuring cup to pour it so that I can make sure all the slices are covered. Bake in preheated oven, uncovered, for 40 minutes.

½ cup butter
1 (8 ounce) loaf crusty French bread, cut into bite-size pieces, or as needed
2 cups milk
6 eggs
2 teaspoons vanilla extract
1 pinch ground cinnamon, or to taste
1 tablespoon brown sugar, or as needed

Steps:

  • Grease a 9x12-inch baking dish.
  • Stir 1 cup brown sugar and butter together in a saucepan over medium-low heat until butter melts and sugar dissolves into butter, 2 to 4 minutes. Pour into prepared baking dish and spread a 1 1/2- to 2-inch layer of bread pieces over the top.
  • Beat milk, eggs, and vanilla extract together in a bowl; pour milk mixture over bread into the baking dish and move bread as necessary to ensure all bread is absorbing liquid. Sprinkle cinnamon over the top. Cover the dish with plastic wrap and refrigerate, 8 hours to overnight.
  • Preheat oven to 450 degrees F (230 degrees C). Remove and discard plastic wrap from baking dish and sprinkle remaining brown sugar over the top of the bread mixture.
  • Bake in the preheated oven until browned and bubbling, about 30 minutes.

This recipe is a family favorite. Grandma B made this every year on Christmas morning and it is now a tradition in my house. I make the casserole the night before and let it sit in the fridge over night. In the morning I pop it in the oven and cook up the bacon or sausage while it cooks. Super easy and super delish. Hope you enjoy it as much as we do.

1 loaf white bread or 1 loaf sourdough bread
1 dozen egg
1 cup milk
1/4 cup brown sugar
1 tablespoon vanilla extract
1 (8 ounce) package cream cheese
2 tablespoons softened butter

Steps:

  • Preheat oven to 350°. Cube loaf of bread into 1 inch squares with bread knife and set aside. Beat dozen eggs in large mixing bowl adding in milk, brown sugar, and vanilla extract. Add bread to egg mixture and stir well making sure the bread absorbs all of the egg mixture. Grease a 9x11 glass casserole dish with softened butter. Spread bread mixture into dish evenly. If you have ever visited New Orleans and been served french toast.. this is it..They are sinfully good.. For those who chose the non bourbon recipe you can use rum extract in water for the bourbon.. Honestly try it with it first.. I have made this with Windsor, Jameson and Jim Beam. I prefer the Windsor version better as it is sweeter then the others and doesn't have a big bite to it. Even though it is a Canadian whiskey instead of a good rye. That is my preference though.

4 teaspoons sugar

2 1/2 cups Bourbon
1 1/2 loaves French bread
cooking oil
confectioners sugar aka powdered sugar
maple syrup

Steps:

  • mix eggs, sugar, salt and bourbon, saving 1/2 cup of bourbon.
  • Cut bread into half inch slices and dip into mixture.
  • Place into frying pan coated with oil. Or griddle at 350 degrees.
  • Fry until crisp and brown, repeating on the opposite side until done.
  • Drain on paper towels.
  • Dust with powdered sugar.
  • Add 1/2 cup of bourbon to maple syrup and serve warm.
