BACKYARD BERRY BOWL

Blended fruit smoothie at the bottom, topped with more fruit, granola, and honey!

1 cup ice cubes, or as needed
1 cup strawberries, divided
2 bananas, sliced, divided
½ cup blackberries
¼ cup apple juice
½ cup blueberries
½ cup granola
1 teaspoon honey, or to taste

Steps:

  • Blend ice, 1/2 cup strawberries, 1 banana, blackberries, and apple juice together in a blender until smooth, adding more ice depending on your desired consistency. Pour smoothie into a bowl.
  • Top smoothie with remaining strawberries, remaining banana, blueberries, and granola. Drizzle honey over the top.

1 pint strawberry, Hulled About 3 1/4 cups
1 pint blueberries, about 3 Cups
1/2 pint raspberries, about 1 cup
1/2 pint blackberry, about 1 cup
1/4 cup orange juice or 1/4 cup orange-flavored liqueur
1 tablespoon fresh lemon zest, grated
1 tablespoon fresh lemon juice
whipped cream

Steps:

  • Place berries in a large bowl.
  • Stir in Orange liquor or juice, lemon zest, and lemon juice and gently toss to mix well.
  • Cover and let stand for 1 hour.
  • Serve with whipped cream.

1 cup mixed berries, such as blueberries, blackberries and raspberries
1 lemon, zested and juiced
5 tablespoons honey
One 8-ounce container mascarpone
2 tablespoons heavy cream
Splash of vanilla extract
Fresh mint leaves, for serving
Biscotti, for serving

Steps:

  • Mix the berries, lemon zest and juice and 2 tablespoons of the honey in a bowl; set aside.
  • In a separate bowl, add the mascarpone, heavy cream, vanilla and remaining 3 tablespoons honey. Using a hand mixer, whip together until light and fluffy.
  • Divide the sweetened mascarpone among 4 serving bowls. Use the bottom of a spoon to create a well in the middle of each mascarpone mound. Spoon the berry mixture into each well. Garnish with a sprig of mint on top of the berries and a biscotti on the side.

1/2 strawberry jello
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups flour
Red-colored sugar
Green-colored sugar

Steps:

  • 1. To make stems, mix water and green food color in a shallow bowl. Add almonds. Allow to soak and absorb color, stirring several times.2. To make cookies, beat butter, powdered sugar, gelatin, vanilla, and salt in a large bowl with electric mixer until fluffy. On low speed, gradually beat in flour. Chill 30 minutes.3. Drain almonds on several layers of paper towels. Heat oven to 375°. Have baking sheets ready.4. Form dough into forty-eight balls, about 1 inch in diameter. Taper one end of each to make a strawberry shape. Roll in red sugar. Dip wider end in green sugar. Insert an almond stem in wide end of each berry. Place 1 inch apart on baking sheets. Bake 11 to 12 minutes until set, but not browned. Cool on wire racks.

Steps:
