BRAISED PULLED PORK SHOULDER

Braised Pulled Pork Shoulder image

Homemade Texas barbecue sauce and dry rub give this pulled pork incredible flavor. Searing in a Dutch oven followed by cooking in the oven at a low temperature makes for moist, tender meat every time.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 10

8 to 10 pound bone-in Boston butt pork shoulder
3 tablespoons packed light-brown sugar
Coarse salt and freshly ground black pepper
2 teaspoons paprika
1/2 teaspoon dry mustard
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
2 tablespoons vegetable oil
Texas Barbecue Sauce, heated
Potato buns, for serving

Steps:

  • Place pork shoulder on a large parchment-lined baking sheet. In a small bowl, combine brown sugar, 2 tablespoons salt, 1 teaspoon black pepper, paprika, dry mustard, cumin, and cayenne. Rub pork with spice mixture, being sure to cover all sides. Cover and refrigerate at least 2 hours and preferably overnight.
  • Preheat oven to 325 degrees.
  • Remove pork shoulder from refrigerator and bring to room temperature, about 30 minutes. Pat dry with paper towels. Heat a large Dutch-oven over medium-high heat and add vegetable oil. Add pork shoulder to Dutch-oven and sear, turning, until golden brown all over, about 4 minutes per side.
  • Add 2 cups of water to Dutch-oven and position pork shoulder fat-side up, and cover. Transfer to oven and cook until meat shreds easily with two forks, 5 to 6 hours. Baste with pan juices every hour.
  • When cooked, remove from Dutch-oven and shred meat with two forks. Serve meat on buns with barbecue sauce.

BRAISED PORK TACOS

Provided by Rachael Ray : Food Network

Time 4h45m

Yield 4 servings

Number Of Ingredients 21

1 (4 to 5 pound) boneless pork shoulder
Salt and freshly ground black pepper
2 tablespoons vegetable oil
2 tablespoons extra-virgin olive oil
2 onions, cut into wedges, root end attached
4 large cloves garlic, crushed
1 1/2 teaspoons chopped oregano leaves, half a palmful
2 red chiles, thinly sliced
4 bay leaves
1 (12-ounce) bottle Mexican beer
2 cups chicken stock
4 oranges, juiced about 2 cups
1 chipotle pepper, seeded and finely chopped, plus 1 tablespoon of adobo sauce
2 limes, juiced
1 1/2 cups white wine vinegar or white balsamic vinegar
1/2 cup sugar
2 small red onions, thinly sliced
1 cup drained sliced store-bought pickled jalapenos or banana pepper rings
1/4 head red cabbage, shredded
1 cup crumbled queso fresco or 2 cups shredded Monterey jack
16 corn or flour tortillas, charred over open flame and kept warm in tortilla warmer or towel

Steps:

  • Preheat the oven to 325 degrees F. Season the pork generously with salt and pepper, to taste, and let sit at room temperature for 30 minutes.
  • Pat the pork dry with a paper towel. Heat a large Dutch oven or heavy-bottomed pot over high heat with 2 tablespoons of vegetable oil, 2 turns of the pan. Put the pork in the pot and evenly brown the meat all over, it will take about 10 to 12 minutes; remove the pork to a plate and reserve.
  • Turn heat down to medium-high, and add the extra-virgin olive oil to the pot, a couple of turns of the pan. Add the onions and garlic, salt and pepper, to taste, the oregano, 1 sliced chili pepper and 2 bay leaves and cook for 7 to 8 minutes. Deglaze the pot with the beer, scraping up the bits stuck to the bottom of the pot. Stir in the chicken stock and orange juice. Add the reserved pork back to the pot (the liquid should come about 2/3 the way up the meat) and bring to a simmer. Cover and put the pork in the oven, turning the meat halfway through cooking, until the meat is very tender, about 2 1/2-3 hours. Remove the pork from the pot, to a cutting board and tent with foil to keep warm. When cool enough to handle, pull the meat apart with 2 forks.
  • Simmer the braising liquid over medium heat until reduced by half. Add the chipotle and adobo sauce and the lime juice. Add about 2/3 of the shredded meat and stir. Cool the remaining shredded pork and chill for another use.
  • While the pork is cooking, prepare the pickled red onions: in a small saucepot, bring the white wine vinegar, sugar, teaspoon of salt, remaining chili pepper and bay leaves to a simmer over low heat. Put the sliced red onions in a small sealable container. Carefully pour the hot liquid over the onions, cover and give it a shake. You may need to lift the lid to release some of the pressure. Every now and then, give it a good shake. Refrigerate to cool.
  • To serve, put the chipotle pulled pork on a platter and garnish with pickled onions and pickled jalapeno slices. Serve with shredded cabbage, crumbled cheese and tortillas for wrapping.

Categories     main-dish

Number Of Ingredients 13

2 tablespoons salt
About 40 grinds black pepper
2 tablespoons chili powder
1 tablespoon garlic powder
2 teaspoons ground coriander
2 teaspoons ground mustard seed
12 ounces good ale or dark beer, such as Bass
4 cloves garlic, chopped
One 5-pound pork butt (shoulder of the animal)
1/2 cup ketchup
2 tablespoons whole grain Dijon mustard
3 tablespoons Worcestershire sauce
1/3 cup dark brown sugar

Steps:

  • Combine rub ingredients in a bowl and mix well. Rub all over pork butt. Wrap in plastic wrap and refrigerate for at least one hour and as long as overnight.
  • Preheat oven to 500 degrees F. Unwrap pork and place in a roasting pan with sides about 2 inches high. Cook 45 minutes until dark browned and even blackening in places. Remove from oven. Lower oven to 325 degrees F. Pour beer over the top and add chopped garlic around the pork. Cover tightly with heavy duty aluminum foil or twice with regular foil. Poke about 10 holes all over the top of the foil. Cook pork butt 2 1/2 hours longer until so tender that it comes away very easily from center bone.
  • Place the meat on a plate and pour the pan juice (there will be plenty) into a saucepan.
  • To the pan juices add the ketchup, mustard, Worcestershire and brown sugar. Bring to a simmer until reduced by half and thick, about 20 minutes.
  • While the sauce is boiling down, pull apart the pork with 2 forks. Pour the sauce over the pulled pork and work through until fully absorbed.

BRAISED, SHREDDED PORK

BRAISED, SHREDDED PORK image

Categories     Pork     Braise

Yield 4 Servings

Number Of Ingredients 12

1 3/4 pound pork shoulder (Boston butt), fat trimmed
Salt and freshly ground pepper
2 tablespoons olive oil
6 cloves garlic, smashed
2 stalks celery, roughly chopped
1 carrot, quartered
1 onion, roughly chopped
1 tablespoon tomato paste
5 sprigs parsley
2 sprigs rosemary, divided in use
4 cups chicken broth or stock
1 can (15 ounces) chickpeas, drained, or 2 cups fresh, cooked

Steps:

  • • Put an oven rack in lower third of oven and heat to 350 degrees. Sprinkle pork liberally with salt and pepper. Heat the oil in a medium Dutch oven or ovenproof pot over medium-high heat until hot. Add pork and cook until browned on all sides. Remove pork from pot and set aside. • In the pot, stir in garlic, celery, carrot, onion and tomato paste. Cook until onions are softened. Add parsley and 1 sprig of the rosemary. Chop remaining sprig of rosemary for garnish; set aside. • Return meat to pot. Add chicken broth until it reaches halfway up the side and heat to a simmer. Transfer the pot to the oven and cook, covered, until fork tender, about 2 to 2 1/2 hours. • Remove pork from pot. When it's cool enough to handle, shred the pork into bite-sized pieces, removing as much fat as possible. • Place 3 cups of the shredded pork in a medium saute pan. Stir in chickpeas. Season with salt and pepper to taste. Keep warm until ready to use (moisten a little with a little of the braising juices, if necessary). Alternatively, make pork as many as two days ahead; reheat in saute pan, adding a little braising liquid if necessary. Use remaining shredded pork for barbecue-style sandwiches or as desired. • To serve, place a scoop of pork and chickpea mixture in the center of each soup bowl. Pour soup (Potato & Leek Soup recipe) around center; garnish with chopped rosemary.
