- Preheat oven to 400 degrees F (200 degrees C).
- In a large mixing bowl, sift flour. Add the cereal, sugar, baking soda and salt; stir to combine.
- Add eggs, shortening and buttermilk; mix well.
- Cover bowl and store batter in refrigerator for at least 24 hours before using. Batter will keep in the refrigerator for up to 6 weeks. Batter should remain covered and should not be stirred.
- Scoop batter into lined or lightly greased muffin cups, filling each cup 2/3 full. Bake at 400 degrees F (200 degrees C) for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Steps:
- Heat the oven to 400°F. Place a paper baking cup in each of 12 regular-size muffin cups, or spray just the bottoms of the cups with cooking spray.
- Place cereal in a resealable food-storage plastic bag; seal the bag. Roll over cereal with a rolling pin or bottle, or press with bottom of small saucepan, to crush cereal into fine crumbs.
- In a medium bowl, stir the crushed cereal, milk, raisins and vanilla until well mixed. Let stand about 5 minutes or until cereal has softened. Beat in the oil and egg with a fork.
- In another medium bowl, stir the flour, brown sugar, baking powder, salt and cinnamon until well mixed. Stir flour mixture into cereal mixture just until flour is moistened (batter will be lumpy). Spoon the batter into the cups, dividing batter evenly.
- Bake 20 to 25 minutes or until a toothpick inserted in the center comes out clean. If muffins were baked in paper baking cups, immediately remove from pan to a cooling rack. If muffins were baked in a sprayed pan, leave in pan about 5 minutes, then remove from pan to a cooling rack. Serve warm if desired.

- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Stir milk and lemon juice together in a bowl; let sit until milk curdles slightly, about 5 minutes. Pour bran cereal into milk mixture and let cereal soften, about 5 minutes more.
- Sift flour, cocoa powder, baking soda, baking powder, salt, cinnamon, and cloves together in a bowl. Beat brown sugar, vegetable oil, egg, and vanilla extract together in another bowl. Stir egg mixture into flour mixture until batter is just-combined.

- 1. Sift together the bread flour, baking soda, baking powder and milk powder.
- 2. Add the rest of the dry ingredients to the above and blend well by hand.
- 3. In a separate bowl; whisk together the eggs and oil until blended.
- 4. Add the water to the egg mixture and whisk together.
- 5. Make a well in the centre of the dry ingredients and add the wet ingredients. Fold together just until blended. DO NOT OVERMIX!!!!!
- 6. Let the mix rest for approx. 10 to 20 min. so the bran has time to soak up the liquid.
- 7. Grease top of 3 muffin pans. Paper line the muffin cups.
- 8. Once mix has rested, deposit batter with piping bag evenly over 3 doz. Muffins.
- 9. Bake muffins at 400F for approx. 20 min.; until the muffin springs back when touched.
- 10. Remove muffins from tins directly after baking to prevent ÃÂâÃÂÃÂÃÂÃÂsweatingÃÂâÃÂÃÂÃÂÃÂ.

- 1. Measure milk, margarine and salt into medium saucepan. Cook over low heat, stirring frequently, until margarine melts. Remove from heat. Stir in KELLOGG'S ALL-BRAN cereal. Let stand until lukewarm.2. In large mixing bowl, dissolve yeast in warm water. Stir in cereal mixture. Gradually add 2 1/2 cups of the flour, mixing until dough leaves sides of bowl.3. On flat surface sprinkled with remaining 1/4 cup flour, knead dough about 5 minutes or until smooth and elastic. Add more flour if dough becomes sticky. Place in mixing bowl coated with cooking spray. Spray top of dough with cooking spray. Cover lightly. Let rise in warm place until double in volume, about 45 minutes.4. Punch down dough. On lightly floured surface, roll out to 1/2-inch thickness. Cut with floured 3-inch biscuit cutter into 12 muffins. Place on baking sheet lightly sprinkled with flour. - Combine according to your manufacturer's directions using the dough or manual cycle.
- Remove dough from the machine after the dough or manual cycle is completed.
- Turn dough out onto floured surface.
- Divide into 12 portions.
- Shape each into a ball, then press into 4" circles about 3/4" high.
- Grease baking sheet and sprinkle with half the oat bran, then place muffins 2" apart.
- Spritz with water and sprinkle with remaining bran.
- Let rise until doubled, about an hour.
- Grease electric skillet or griddle and preheat to 325 degrees.

Peggy Reed of Vergennes, Vermont says her granddaughter Kelsey has always loved cooking. At age 4, Kelsey entered Bran Muffins in a baking contest. "The recipe Kelsey used is great for kids. The ingredients are measured in whole amounts," Peggy explains. "It makes a lot of batter, but it can be stored in the refrigerator so the muffins can be made in batches." By the way, Peggy also entered muffins in the contest, competing against Kelsey. Kelsey won the blue ribbon and Grandma came in second place!

- Combine the milk, butter and salt in a small saucepan and heat until butter melts. Remove from heat and stir in the bran cereal. Let stand until lukewarm.
- Stir in cereal mixture. Gradually add 2 1/2 cups of the flour and the sugar. Add the cereal mixture and stir well, then put under the dough hook and knead. If the dough seems to sticky and clings to the side of the bowl, add a few more tablespoons of flour. Knead dough until smooth and elastic. Transfer to a greased bowl. Turn the dough over so that it is slick from butter in the bowl, then cover and let rise for 45 minutes to an hour.
- Punch down dough. On lightly floured surface, roll out to 1/2-inch thickness. Cut with floured 3-inch biscuit cutter into 12 rounds. Place on baking sheet lightly sprinkled with flour or lined with parchment. Cover with a greased sheet of plastic wrap and let rise in warm place until double in volume, about 45 minutes.
