BROILED NECTARINES WITH BLUE CHEESE AND BALSAMIC REDUCTION

Steps:
- Simmer balsamic vinegar in a saucepan over low heat until reduced by half and thickened to a glaze, about 10 minutes. Let cool, about 5 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Arrange nectarine halves cut-side up on a baking sheet; season with black pepper.
- Broil nectarines in the preheated oven until browned, 7 to 8 minutes. Add blue cheese; continue broiling until blue cheese starts to melt, 1 to 2 minutes more.
- Drizzle balsamic glaze over nectarines.

- In a large bowl, toss nectarines with sugar, lemon juice and ginger. Refrigerate, covered, 1 hour, stirring once., Drain nectarines, reserving juices. Gradually beat reserved juices into cream cheese. Gently combine nectarines and berries; serve with cream cheese mixture.

BRANDIED BERRIES AND NECTARINES
Steps:
- Halve the nectarines, and discard pits. Slice nectarines, and place them in a bowl. Toss with lemon juice.
- Press half the blackberries and raspberries through a fine sieve into a small saucepan. Add sugar, and heat gently, just until sugar has dissolved, 3 to 4 minutes. Stir in the brandy.
- Mix remaining blackberries, raspberries and optional blueberries with nectarine slices. Pour sauce over fruit, and mix gently. Cover and refrigerate until ready to serve.
- Spoon fruit into large stemmed goblets, and garnish with mint and a dollop of creme fraiche, if desired, before serving.

NECTARINES AND BERRIES WITH FLAVORED WHIPPED CREAM
Macerated desserts are simply fruit steeped in a flavored sugar syrup, wine, liquor, vinegar or citrus juice, usually for a couple of hours or overnight. During the process, the fruit becomes slightly softer, its flavor infused with spices, juices or wine. Fruit can be nicely complemented not only by a simple sugar syrup, but also by orange or lemon juice, wine, liqueurs and vinegar. Any soft fruit, like bananas, mangoes or papayas, should be added at the end. Basil or mint leaves, orange or lemon zest and star anise will also add some zing.

- In a large nonreactive bowl, mix the fruit, vinegar, sugar and pinches of salt and pepper. Let sit uncovered in refrigerator for 30 minutes.
- Combine cream, sugar, lavender, orange zest and another pinch of salt, and whip until soft peaks form.
- Put fruit into serving bowls, and spoon a bit of whipped cream on top. Garnish with mint.

- For topping, in a small bowl, combine the flour, brown sugar and cinnamon; cut in butter until crumbly. Set aside., In a large bowl, cream the butter and 3/4 cup sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. Set aside 3/4 cup batter. Fold blueberries into remaining batter., Spoon into a 13x9-in. baking dish coated with cooking spray. Arrange nectarines on top; sprinkle with remaining sugar. Drop reserved batter by teaspoonfuls over nectarines. Sprinkle with raspberries, blackberries and reserved topping., Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Serve warm.

- Stir together brandy and sugar in a skillet large enough to hold the nectarines in a single layer. Add vanilla bean. Place nectarines cut-side down in the skillet and bring to a simmer over low heat. (Be careful working over a gas burner, as the warm brandy is quite flammable.) Cover the pan and simmer the nectarines until just tender when pierced with a skewer, 10 to 15 minutes. Check occasionally to be sure the nectarines are not sticking to the bottom of the pan.
- Remove the pan from the heat, uncover and let cool briefly; slip off and discard the nectarine skins if they come away easily. Transfer the nectarines cut-side up to a serving dish and spoon the syrup over the top. Serve warm.

- Combine sugar and water in a large heavy skillet. Cook over medium heat, stirring constantly, until mixture comes to a boil and sugar dissolves. Add nectarines. Cover and reduce heat; simmer 4 minutes. Turn fruit; cover and continue to simmer 4 minutes or just until tender.
