Steps:
- Pour brandy over drained cherries; let set for two days.
- Combine butter, corn syrup and salt; blend until smooth.
- Add confectioners' sugar and mix well.
- Knead until smooth and shiny; wrap in wax paper and chill for 30 minutes.
- Drain cherries well on paper towels; pat dry.
- Shape a marble-size piece of fondant around each cherry and place on wax paper-lined tray. Chill until firm, about 2 hours.
- Melt chocolate over hot water, stirring constantly.
- Dip cherries quickly and place on wax paper-lined tray.
- Place in refrigerator to set.
- Store in covered container in a cool, dark place for 10 to 14 days to fully ripen allow the fondant to liquify inside.

- Pour cherries, with their juice, into a glass bowl. Cover cherries with rum. Cover with plastic wrap and store in the refrigerate for 1 week.
- Drain and dry rum-infused cherries.
- Line a baking sheet with waxed paper.
- Mix confectioners' sugar, 1/2 cup butter, milk, and maple syrup together in a bowl until smooth and pliable. Wrap each cherry with sugar mixture. Arrange on baking sheet. Cover loosely with plastic wrap and chill until firm, about 30 minutes.
- Combine chocolate chips, semisweet chocolate, 2 tablespoons butter, and paraffin wax in a saucepan. Heat over medium-low heat, stirring, until melted, about 5 minutes.
- Dip each wrapped cherry into the melted chocolate mixture using a toothpick. Return to baking sheet. Repeat with remaining cherries. Cover loosely with plastic wrap and chill until set, about 1 hour.

- In a small bowl, combine cherries and brandy; cover and let soak for 1 hour or until cherries are softened., Place dark chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Stir in extract and soaked cherries with liquid. Cool to room temperature, stirring occasionally. Refrigerate for 1 hour or until firm., Shape into 1-in. balls. Place on baking sheets; cover and refrigerate for at least 1 hour., In a microwave, melt milk chocolate; stir until smooth. Dip half of the balls into milk chocolate, allowing excess to drip off. Place on waxed paper; let stand until set., Melt dark chocolate; stir until smooth. Dip remaining balls into dark chocolate, allowing excess to drip off. Place on waxed paper; let stand until set. Drizzle with melted chocolate and decorate with pearl dust as desired. Store in an airtight container in the refrigerator.

- Pit cherries through the sides, leaving stems intact. In a small bowl, beat cream cheese until smooth. Stir in hazelnuts and syrup. Pipe into cherries. , In a small microwave-safe bowl, melt white chips and 5 teaspoons shortening at 70% power. Microwave at additional 10- to 20-second intervals, stirring until smooth. In another bowl, repeat with milk chocolate chips and 3-1/2 teaspoons shortening. Repeat with semisweet chips and remaining shortening., Holding stems, dip a third of the stuffed cherries into melted white chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Repeat with remaining cherries and milk chocolate and semisweet chocolate. Dip the white-coated cherries a second time to completely cover; let stand until set., Reheat remaining melted chocolate if necessary. Drizzle white chocolate over cherries dipped in milk or semisweet chocolate. Drizzle milk or semisweet chocolate over white chocolate-dipped cherries. Store in an airtight container in the refrigerator.

- In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.
