SKIRT STEAK WITH LENTIL SALAD



Skirt Steak With Lentil Salad image

This recipe came to The Times in 1990 in Pierre Franey's 60-Minute Gourmet column. A lentil salad (we used those tiny French green lentils, but you can use the standard supermarket variety as well) is dressed with a Dijon mustard vinaigrette, then topped with skirt steak that's been seared in a cast-iron pan. A simple sauce, made by deglazing the pan with butter, garlic and parsley, is drizzled over the top. It is classic Franey - uncomplicated, elegant and delicious.

8 cups water
1 pound dried lentils
1 cup finely diced carrots
1 bay leaf
3 sprigs fresh thyme, or 1 teaspoon dried
Salt to taste
1 tablespoon Dijon-style mustard
3/4 cup vegetable oil
1/4 cup red-wine vinegar
1 cup finely chopped onions
4 tablespoons chopped fresh tarragon or parsley
Freshly ground pepper to taste
4 skirt steaks, about 1/2 pound each, trimmed of excess fat
1 tablespoon vegetable oil
2 tablespoons butter
2 teaspoons finely chopped garlic
2 tablespoons finely chopped parsley

Steps:

  • To make the lentil salad, put the water in a large saucepan. Wash the lentils in a colander and add to the saucepan. Add the carrots, bay leaf, thyme and salt. Cover and simmer 20 to 25 minutes. Do not overcook. Drain and remove the bay leaf and thyme sprigs.
  • In a large mixing bowl combine the mustard, 3/4 cup of oil and the vinegar, onions, tarragon, salt and pepper. Blend well with a wire whisk. Add the lentils and stir. Serve warm, lukewarm or cool.
  • To prepare the meat, sprinkle it on both sides with salt and pepper and brush with 1 tablespoon of oil.
  • Heat a cast-iron skillet large enough to hold two steaks over high heat, add the steaks and brown them for 3 minutes for medium-rare. Turn and continue cooking until they are thoroughly browned, about 3 minutes more. Remove to a warm platter. Repeat the procedure for the two remaining steaks.
  • Pour the fat from the skillet and reduce the heat. Add the butter, garlic and parsley. Cook briefly, stirring. Add any juices from the platter and blend well. Pour the sauce over the steaks and serve with the lentil salad immediately.

PEPPER STEAK AND RICE PILAF WITH MUSHROOMS

1 tablespoon extra-virgin olive oil, eyeball it
1 tablespoon butter
10 white mushrooms, chopped
1 3/4 cups water
1 package rice pilaf mix (recommended: Near East brand), 6.09 ounces
2 tablespoons chopped parsley leaves
2 tablespoons vegetable oil, 2 turns of the pan
2 pounds tenderloin tips or sirloin, cut into chunks
Coarse salt
2 tablespoons butter
2 green bell peppers, seeded, 2 inch dice
1/2 white onion, sliced
2 tablespoons all-purpose flour
1 tablespoon tomato paste
1/4 cup dry sherry - eyeball it
1 1/2 cups beef consomme
1 teaspoon coarse black pepper

Steps:

  • In a medium pot over medium to medium high heat add a tablespoon of oil and a tablespoon of butter. When butter melts, add chopped mushrooms and saute 3 to 5 minutes. Add water and cover the pot. Add rice and pilaf packet to water. Stir to combine, reduce heat and cook 18 minutes. Add parsley, fluff with fork.
  • Preheat a large skillet over high heat. Add vegetable oil to really hot pan. Add meat and sear on all sides, 5 minutes. Season with salt and remove to a plate. Cover meat loosely with foil to hold heat. Reduce heat on pan to medium. Add butter to pan. Add peppers and a little onion. Saute peppers and onions 5 minutes. Sprinkle flour over vegetables and cook 1 minute longer. Whisk in sherry and start to pick up pan drippings. Whisk in consomme and continue whisking. Add tomato and black pepper. Slide meat back into the pan and coat with sauce. Reduce heat to low and simmer 5 minutes.
  • Spoon Pepper Steak over Mushroom Rice Pilaf and serve.

QUINOA AND LENTIL PILAF

2 tablespoons extra virgin olive oil
1 medium size yellow or red onion, finely chopped
Salt to taste
2 large garlic cloves, minced
2 cups cooked quinoa
1 cup cooked lentils
1/2 cup finely chopped fresh parsley
2 tablespoons finely chopped fresh mint
1/3 cup chopped fresh dill
Freshly ground pepper
2 tablespoons fresh lemon juice (more to taste)

Steps:

  • Heat 1 tablespoon of the olive oil over medium-low heat in a large nonstick skillet and add onion. Cook, stirring, until tender and just beginning to color, 5 to 8 minutes. Add a generous pinch of salt and garlic and continue to cook, stirring, until garlic is fragrant, another 30 seconds to a minute. Add remaining oil and stir in quinoa and lentils. Add herbs and pepper, stir together, taste and adjust salt. Remove from heat and serve, adding a squeeze of lemon to each serving.

1 cup toasted hazelnuts
1 tablespoon roughly chopped fresh rosemary leaves
3 tablespoons whole-grain mustard
2 tablespoons prepared horseradish
1 tablespoon vegetable oil
1 1/2 pounds (1-inch thick) bone-in rib-eye
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Pulse the hazelnuts and rosemary in a food processor until the nuts are about the size of whole peppercorns. Transfer to a large plate. Combine the mustard and horseradish together in a small bowl.
  • Rub the oil all over the steak and season with salt and pepper, to taste. Heat a cast iron or heavy-bottomed pan over medium-high heat until very hot, about 5 minutes. Lay the steak in the pan and sear without moving until each side becomes a rich brown color, about 3 minutes a side.
  • Transfer to a cutting board and brush the mustard mixture all over the steak. Dredge the steak in the hazelnuts, pressing so they adhere to the meat. Arrange the steak on a rack set over a baking sheet or roasting pan. Put into the oven and cook until an instant-read thermometer inserted into the thickest part of the steak registers 125 degrees F for medium rare, about 20 minutes. Transfer the meat to a cutting board and let rest for 10 minutes. Slice the steak and arrange it on a serving platter. Serve.

1 1/16 quarts water
1 2/3 teaspoons sea salt

7/8 cup hazelnuts, rough chopped

1 1/8 tablespoons orange zest
1 2/3 medium leeks, sliced (white part only)
6 2/3 large shiitake mushrooms, sliced

7/8 cup fresh cilantro, chopped
1 2/3 whole oranges, zest and juiced

Steps:

  • Rinse wild rice; place in a saucepan with water and sea salt. Bring to a boil, cover, reduce heat, and simmer for an hour or until the gains are soft and the water is absorbed. Remove from heat and allow to steam, covered, for 5-10 minutes. Fluff with a fork.
  • Heat oil in large saute pan. Add the hazelnuts and saute until aromatic. Add garlic, ginger, and orange zest and saute until fragrant, about 1 minute. Add leeks, shiitakes, and another pinch of salt. Saute until vegetables soften, about 4 minutes.
  • Add rice to saute pan, season with pepper and additional salt to taste and stir to combine. Cover and cook on low until rice is warmed through. Remove pan from heat. Stir in cilantro and orange juice and serve.

2 tablespoons olive oil
2 thinly sliced onions
Coarse salt and ground pepper
1 1/2 cups brown lentils
1 cup long-grain rice
3 cups reduced-sodium canned vegetable broth

Steps:

  • In a 10-inch skillet, heat olive oil over medium heat. Add onions; reduce heat to medium-low. Cook, stirring occasionally, until onions are golden and caramelized, 35 to 40 minutes. Season with coarse salt and ground pepper.
  • Meanwhile, in a 3-quart saucepan, bring 5 cups water to a boil. Stir in brown lentils; reduce heat to a simmer. Cook until tender, 10 to 12 minutes. Drain; rinse pan.
  • Return lentils to pan; add long-grain rice and vegetable broth. Bring to a boil; reduce to a simmer. Cook until rice is tender and has absorbed liquid, 10 to 12 minutes. Season with salt and pepper. Scatter onions on pilaf.

ROAST CAULIFLOWER & HAZELNUT PILAF

2 tbsp olive oil
1 onion , chopped
2 garlic cloves , crushed
5cm piece ginger , grated
2 tbsp garam masala
300g brown basmati rice
700ml hot vegetable stock
3 curry leaves
250g cauliflower , broken into florets
2 tbsp medium curry powder
handful coriander , chopped
100g toasted hazelnut , chopped
150ml pot natural yogurt , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat 1 tbsp of the oil in a large pan, add the onion and cook for 5 mins until golden. Add the garlic, ginger, garam masala and rice, and cook for a few more mins. Add the stock and curry leaves, and season. Bring to the boil, then reduce heat to low. Cover and simmer for 40 mins.
  • Toss the cauliflower in the curry powder and remaining oil, season and put on a baking sheet. Roast in the oven for 40 mins until tender.
  • Remove the rice pan from the heat and leave for 5 mins, then gently stir through the roasted cauliflower, coriander and toasted hazelnuts. Serve with natural yogurt.

½ cup uncooked long-grain rice
¼ cup uncooked orzo pasta
½ cup sliced fresh mushrooms
½ cup chopped onion

¼ teaspoon dried marjoram
¼ teaspoon ground black pepper
½ cup chopped toasted hazelnuts

Steps:

3 red onions , finely sliced
2 tbsp olive oil
140g smoked haddock fillet
140g haddock fillet
250g pack ready-cooked Puy lentils
zest 1 lemon (then cut the lemon into wedges)
large bunch flat-leaf parsley , roughly chopped
25g toasted flaked almond

Steps:

  • Cook the rice in boiling water until just tender, then drain. Meanwhile, fry the onions in the oil in a large non-stick frying pan over a medium heat for 10-12 mins until golden. Bring some water to the boil in a shallow pan. Add the haddock fillets, poach for 4 mins until the fish is just cooked, then drain and break into large flakes. Spoon half the onions onto a plate, then set aside.
  • Stir the drained rice and lentils into the onion pan, then fold through the fish, lemon zest and parsley to heat through. Serve topped with the reserved onions and a handful of almonds, with the lemon wedges on the side for squeezing over.

1/2 lb flank steak, pounded and sliced thin
1/2 lemon, juice of
1/4 cup hazelnuts, chopped
1/2 cup lentils, cooked to al dente and drained
1/2 teaspoon cinnamon, divided
1 1/2 teaspoons cumin, divided
1 beef double bouillon cubes (knorr)
1 tablespoon chopped parsley
salt and pepper (to taste)
3 tablespoons olive oil, divided (about)
lemon wedge (for serving)

Steps:

  • Stir together olive oil, 1/4 tsp cinnamon, 1/2 tsp cumin salt and pepper to taste, and lemon juice.
  • Pour over meat to coat all pieces, and place in the refrigerator to marinate 2 hours.
  • In a large sauce pan, heat 1 tsp oil.
  • Roast hazelnuts until lightly golden, then add rice and 4 cups water, lentils, a splash of olive oil, boullion cube, remaining cumin and cinnamon, parsley, salt and pepper to taste.
  • Bring to a boil and boil 5 minutes, uncovered.
  • Reduce heat to low; cover and continue to cook 10 more minutes, without liftting lid.
  • Remove from heat and allow to stand 5 more minutes before you lift the lid.
  • Meanwhile, heat 1 tbsp oil in a saucepan over medium high heat, and sautei beef slices until cooked through (about 5-7 minutes); set aside.
  • After rice has"rested" 5 minutes, fluff with a fork, and remove to a serving platter.
  • Top with beef and freshly chopped parsley and garnish with lemon wedges.
