Chocolate Cookie Bites image

These buttery, chocolaty cookie dough bites are made with Gold Medal® flour. Chopped pecans add some crunchiness to this pop-able, melt-in-your-mouth dessert treat.

1 1/4 cups powdered sugar
1 cup butter, softened
2 tablespoons milk
1 teaspoon vanilla
2 cups Gold Medal™ all-purpose flour
1/4 cup unsweetened baking cocoa
1/4 teaspoon salt
3/4 cup chopped pecans, toasted

Steps:

  • Heat oven to 400°F. Spray cookie sheets with cooking spray.
  • In large bowl, beat 1 cup of the powdered sugar and the butter with electric mixer on medium speed until creamy. Add milk and vanilla, beating until blended. In medium bowl, mix flour, cocoa and salt; gradually add flour mixture to butter mixture, beating until blended. Stir in pecans.
  • Shape dough into 1-inch balls; place 1 1/2 inches apart on cookie sheets.
  • Bake 11 to 13 minutes or until tops of cookies just begin to crack. Cool on cookie sheets 3 minutes. Remove to cooling racks; sprinkle with remaining 1/4 cup powdered sugar. Cool 10 minutes.

½ cup shortening
1 cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1 cup miniature semisweet chocolate chips
1 cup finely chopped walnuts, divided

Steps:

  • In a mixing bowl, cream butter, shortening and sugar. Beat in vanilla. Combine flour and salt; gradually add to creamed mixture. Stir in chocolate chips and 3/4 cup walnuts. Spread into a greased 15-in. x 10-in. x 1-in. baking pan. Sprinkle with remaining nuts; press down gently. Bake at 375 degrees F for 20-25 minutes or until golden brown. Cool completely. Break into pieces.

I make these cookie bites for the Ladies' Auxiliary Basket Bingos and many other charity functions. They're always a sell-out!

2 cups graham cracker crumbs
12 tablespoons butter, melted
1 cup sweetened condensed milk (such as Eagle Brand®)
¾ cup chopped walnuts
¾ cup chopped pecans
¾ cup chopped almonds
¾ cup sweetened flaked coconut
¾ cup milk chocolate chips
¾ cup white chocolate chips
¾ cup butterscotch chips
¾ cup golden raisins
4 tablespoons chocolate syrup
4 tablespoons caramel dessert topping

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a large glass baking dish.
  • Mix graham cracker crumbs and butter together in a bowl until thoroughly moist. Transfer to the bottom of the prepared pan and press to flatten evenly. Pour condensed milk over top, leaving about a 1/4-inch border around the edges.
  • Mix walnuts, pecans, almonds, coconut, milk chocolate chips, white chocolate chips, butterscotch chips, raisins, chocolate syrup, and caramel topping together in a bowl. Pour on top of condensed milk all the way to the edge.
  • Bake in the preheated oven until a toothpick inserted into the center comes out mostly clean and edges are golden, 20 to 25 minutes. Remove from the oven and let cool completely before cutting into 1 1/2-inch squares to serve, about 30 minutes.
